SPINACH WITH BLACK GARLIC

Number Of Ingredients 5

2 tablespoons olive oil
2 cloves black garlic, thinly sliced
16 ounces baby spinach
2 teaspoons sambal oelek
Kosher salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook, stirring frequently, until fragrant, about 1 minute. Add the spinach a large handful at a time, stirring constantly between each handful, until slightly wilted and more spinach can fit in the skillet. Cook until the spinach is completely wilted but still a vibrant green, about 5 minutes. Stir in the sambal oelek, 1 teaspoon salt and a few grinds of black pepper. Transfer to a serving platter or bowl.

1 teaspoon garlic, coarsely chopped
8 -10 cups spinach leaves, loosely packed
2 tablespoons fish sauce
2 teaspoons sugar
1/2 teaspoon black pepper
1/4 cup water

Steps:

  • Heat oil in large heavy skillet or wok over medium-high heat for about 1 min., and then add garlic. Toss well and then add spinach. Gently turn pile of spinach to heat leaves and add fish sauce, sugar, pepper, and water. Toss well, then cook, turning often, until spinach is wilted and tender (1-2 min.). Turn out onto deep platter, sauce and all, and serve hot, warm, or at room temperature.

A lovely Thai stir-fried spinach in a garlicky sauce topped with peanuts or cashews that's bursting with flavor. Simple to make and so scrumptious.

1 large bunch fresh spinach
4 cloves garlic (finely chopped)
Optional: 1 red chili (sliced, or 1/3 to 3/4 teaspoon dried crushed chili flakes)
1/4 cup chicken or vegetable stock
2 tablespoon oyster-flavored sauce (or vegetarian oyster sauce/stir-fry sauce)
1 tablespoon fish sauce (or 1 1/2 tablespoons soy sauce if vegetarian)
1 tablespoon sherry (cooking sherry works well too)
1 teaspoon brown sugar
1 teaspoon sesame oil
Optional: 1/2 red pepper (sliced thinly)
1/4 to 1/3 cup roughly chopped peanuts or cashews (for topping)
1 to 2 tablespoons vegetable oil

Steps:

  • Gather the ingredients.
  • In a cup, stir together stock,​ oyster sauce, fish sauce, sherry, and brown sugar. Set aside. Rinse spinach and drain.
  • Heat a wok or large frying pan over medium-high heat. Add 1 to 2 tablespoons vegetable oil and swirl around, then add garlic and chili (if using). Stir-fry 1 minute to release the fragrance.
  • Add the red pepper (if using) and stir-fry 1 minute. Add the spinach and stir-fry briefly, until the spinach leaves are lightly covered in the oil and garlic/chile (about 30 seconds). Add the stir-fry sauce and stir-fry until spinach has cooked down to a nice dark green (stems should still be on the crisp side), about 2 to 4 minutes.
  • Remove from heat and taste-test, adding more fish sauce instead of salt. (If too salty or sweet, add a squeeze of lime or lemon juice. More chile can be added for increased spiciness.)
  • To serve, scoop or slide spinach onto a serving plate or bowl. Top with the remaining liquid at the bottom of your wok/pan. Drizzle over the sesame oil and top with chopped nuts.
  • Serve and enjoy.

2 tablespoons peanut oil or 2 tablespoons canola oil
3 -4 medium garlic cloves, thinly sliced (about 2 tablespoons)
1 lb leafy greens, thick stems removed and large leaves roughly chopped
1 tablespoon soy sauce
2 teaspoons fish sauce
2 teaspoons sugar
coarse salt & freshly ground black pepper, to taste
2 small hot red chili peppers, thinly sliced and seeded if desired

Steps:

  • Heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring constantly, for 2 minutes. Add a few handfuls of the greens, allow them to wilt slightly, then add more greens in the same manner. Toss well to coat with oil.
  • Add the soy sauce, fish sauce and sugar; toss to combine.
  • Raise the heat to medium-high and cook until the water released by the greens mostly evaporates, about 5 minutes. The greens are done when a little liquid still clings to the leaves and the stems are tender. Season with salt and black pepper to taste, sprinkle with chilies and serve.

1 tablespoon coarsely chopped garlic
8 -10 cups fresh spinach leaves (about 1 1/4 pounds)
2 tablespoons fish sauce
1/2 teaspoon fresh ground black pepper (or more, if you love pepper like I do)
1/4 cup water

Steps:

  • Combine oil and garlic in a large, heavy skillet or wok and cook over medium-high heat until the garlic sizzles and releases its aroma.
  • Add the spinach and cook for 1 minute; gently turn to expose all the leaves to the heat.
  • Add the fish sauce, pepper, and water, tossing well, then cook (turning often) until the spinach is wilted and tender (1-2 minutes).
  • Transfer to a deep platter, sauce and all, and serve hot, warm, or at room temperature.

1 lb spinach, chopped
1 onion, peeled and cut into strips
1 red bell pepper, cut into strips
3 garlic cloves, peeled and minced
1 lb firm tofu, diced
3 tablespoons sesame oil (or as needed)
1/4 cup peanuts, chopped
1/2 cup coconut milk
1 teaspoon red curry paste (or green)
1/3 cup fresh basil
1/2 lime, cut into 3 pieces

Steps:

  • Mix curry paste with coconut milk. Set aside.
  • Heat 1 Tbs oil in wok or frying pan.
  • Add Tofu, and saute` until golden. Remove, and set aside.
  • In same pan, put remaining oil.
  • Add onion, and saute` for 3 minutes.
  • Add garlic, and saute` for 1 minute.
  • Add pepper and spinach, and saute` until vegetables are tender.
  • Add Tofu, and toss gently.
  • Pour on coconut-curry mixture, and stir-cook until heated through.
  • Add basil, and stir to mix.
  • Serve immediately, sprinkled with lime juice.

2 medium mangos - peeled, seeded, and diced
½ cup chopped fresh cilantro
1 small red chile pepper, cut into thin strips
sea salt and cracked black pepper to taste
2 leaf (blank)s kaffir lime leaves
3 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
2 tablespoons lime juice
1 tablespoon grated lime zest
1 tablespoon sesame oil
1 tablespoon fish sauce
1 tablespoon minced fresh ginger
1 tablespoon finely chopped fresh lemongrass
1 small Thai chile, chopped
1 clove garlic, minced
1 teaspoon coconut sugar

Steps:

  • Combine spinach, mangos, cilantro, and chile pepper in a large mixing bowl. Season with sea salt and pepper.
  • Slice lime leaves in a chiffonade cut (long, thin strips). Place in a small food processor with olive oil, soy sauce, lime juice, lime zest, sesame oil, fish sauce, ginger, lemongrass, Thai chile, garlic, and coconut sugar; blitz until combined.
  • Pour dressing over salad and toss well to combine. Serve immediately.
