This is called Goong Ob Woon Sen in Thailand. A delicious noodle dish in a clay pot. If you don't have a clay pot a dutch oven works too.

SHRIMP
6 clove garlic
2 Tbsp cilantro stems
1 tsp salt
1 Tbsp oil
16 shrimp peeled and deveined
GLASS NOODLES
8 oz glass noodles soaked in hot water for 20 minutes
SAUCE
2 c chicken stock
1 Tbsp oyster sauce
1 Tbsp soy sauce
1 Tbsp dark soy sauce
1 Tbsp whiskey
1 tsp sesame oil
1 tsp grated ginger
1/4 c brown sugar
VEGGIES
3 scallions chopped
8 oz asparagus tips about 2 inches in length
2 Tbsp vegetable oil
cilantro for garnish

Steps:

1. For the shrimp Place the garlic, cilantro stems, and salt in a motar and pestal and pound these into a paste. Add the 1 tbsp of oil. Rub all over the outside of the shrimps. Set aside.
2. For the sauce. Mix the stock, oyster sauce, soy sauce, dark soy sauce, whiskey, sesame oil, ginger, and brown sugar. Set aside.
3. Preheat a 2 qt clay pot and add 2 tbsp. veg oil. Brown the shrimps on both sides working in batches. Remove to a plate and set aside.
4. Turn the heat up to high add the sauce and scallions. Bring to a boil. Drain the noodles and add them to the pot. Scatter the asparagus over the top and cover the pot and reduce heat to medium. Let cook 5 minutes. Add the shrimp on top and cook another 5 minutes.
5. Serve topped with fresh cilantro

12 to 15 small to medium raw shrimp (shells removed)
1 boneless chicken breast or 1 to 2 thighs* (chopped up into small pieces)
1 tablespoon soy sauce
4 green onions (sliced, keep white separate from green)
3 to 4 cloves garlic (minced)
1 teaspoon grated galangal (or ginger)
1 to 2 fresh red or green chilies (or as much or little as you like), finely sliced
1 egg
2 to 3 cups bean sprouts
Handful fresh coriander/cilantro
1/3 cup roasted peanuts (chopped)
2 to 3 tablespoons vegetable oil
Lime wedges for serving
Pad Thai Sauce:
1 to 1 1/2 tablespoon tamarind paste , to taste (available at Asian/Indian food stores)
1/4 cup chicken stock
3 tablespoons fish sauce
1 tablespoon soy sauce
1/2 to 1 teaspoon chili sauce (or 1/3 to 3/4 teaspoon cayenne pepper, to taste)
1/8 teaspoon ground white pepper

8 ounces spaghetti noodles, broken
1 1/2 lbs broccoli florets (5 cups)
1 lb fresh shrimp or 1 lb frozen shrimp, peeled and deveined with tails intact
1/3 cup creamy peanut butter
1/4-1/3 cup soy sauce
3 tablespoons rice vinegar
2 tablespoons sesame oil
1 tablespoon chili oil (or cooking oil plus dash bottled hot pepper sauce)
1 tablespoon grated gingerroot
3 garlic cloves, minced
4 green onions, chopped
1/3 cup chopped cashews or 1/3 cup almonds

Steps:

In a 4 qt Dutch oven, bring a large amount of water to boil.
Add pasta and cook 4 minutes.
Add broccoli and cook 2 minutes.
Add shrimp and cook 2 to 3 minutes or until pink.
Meanwhile, in a bowl combine peanut butter and soy sauce.
Stir in vinegar, sesame oil, chili oil, gingerroot, and garlic.
Drain spaghetti mixture and return to pan.
Add peanut butter mixture, green onions and nuts.
Toss gently to coat.
