1 tablespoon peanut oil
2 tablespoons red curry paste
1/2 lb pork tenderloin, sliced thin stick in freezer for awhile to do this
1 can coconut milk
1 lime, grate the zest,keep the juice
2 tablespoons grated fresh ginger
2 tablespoons Thai fish sauce
1 teaspoon sugar
2 serrano peppers, seeded and sliced thin
1 habanero pepper, same thing
1 (14 ounce) can cut baby corn
3 cloves garlic, chopped fine
1/4 cup basil leaves, chopped
1/4 cup cilantro leaf, and stems chopped

Steps:

  • Heat wok to medium high, add oil, add curry paste, stir fry until heat hits you, up heat and add pork, continue stir frying, for a couple of minutes, then stir in coconut milk, toss in lime zest, ginger and garlic, bring to boil, cut heat and simmer until pork is tender.
  • Stir in fish sauce, sugar, peppers and baby corn, drained-- if this is too runny at this point add 1 tbls corn starch mixed in a little water,cook until thickened then add basil and cilantro leaves-- Serve with any good rice, but fragrant jasmine rice is best with any Thai dish.

1 lb pork tenderloin or 1 lb pork butt, cut into 3/4-in chunks
1 1/2 lbs pumpkin, cut into 3/4-in chunks (or kabocha)
2 cups sweet basil or 2 cups Thai basil, washed and patted dry
2 -4 Thai red chili peppers, cut into thin slivers with seeds (optional)
2 (19 ounce) cans coconut milk
4 -6 tablespoons red curry paste or 4 -6 tablespoons yellow curry paste
2 stalks lemongrass, cut in half lengthwise, bruised with the flat of a knife (optional)
3 kaffir lime leaves, cut into thin slivers (optional)
1 1/2 tablespoons fish sauce (or more to taste)
1 1/2-2 tablespoons sugar or 1 1/2-2 tablespoons palm sugar
1/2 lime, juice of (optional)

Steps:

  • Cut pork into bite-size pieces.
  • Peel pumpkin and cut into bite-size pieces.
  • Detach basil leaves from stem. Slice chilies.
  • Pour the thick creamy top half of the coconut milk into a large pot, bring to boil on medium heat, and stir in the curry paste. Fry, stirring constantly, until aromatic, darker in color, and oily on the surface.
  • Add diced pork, lemongrass, and lime leaves, and stir as the pork begins cooking, adding coconut milk a couple of tablespoons at a time.
  • Add pumpkin with the remaining coconut milk, season with fish sauce and sugar.
  • Simmer, checking regularly, until pumpkin is cooked but not mushy.
  • Stir in basil leaves, chilies, and lime juice and remove from heat.
  • Serve with steamed rice, garnished with basil.
  • Tips: For a less creamy sauce, add some water and adjust seasonings. For a vegetarian dish, use green beans instead of pork.

1 can (13.66 oz) lite coconut milk
1 tablespoon Thai red curry paste
1 lb boneless skinless chicken breasts, cut into bite-size pieces
1 cup chopped onion
3/4 cup canned pumpkin (not pumpkin pie mix)
1 tablespoon fish sauce
1 tablespoon packed brown sugar
1 cup frozen sweet peas
2 cups cooked rice
2 tablespoons sliced green onions (2 medium)
Sliced fresh jalapeño chile, if desired

Steps:

  • In 2-quart saucepan, heat coconut milk and curry paste to simmering over medium heat. Add chicken, onion, pumpkin, fish sauce and brown sugar. Simmer 5 minutes, stirring occasionally.
  • Add peas. Simmer 5 minutes longer or until chicken is no longer pink in center.
  • Serve over rice; top with green onions and jalapeño slices.

1 tbsp sunflower oil
3 tbsp Thai yellow curry paste, or vegetarian alternative
2 onions, finely chopped
3 large stalks lemongrass, bashed with the back of a knife
6 cardamom pods
1 tbsp mustard seed
1 piece pumpkin or a small squash (about 1kg)
250ml vegetable stock
400ml can reduced-fat coconut milk
400g can chickpea, drained and rinsed
2 limes
large handful mint leaves
naan bread, to serve

Steps:

  • Heat the oil in a sauté pan, then gently fry the curry paste with the onions, lemongrass, cardamom and mustard seed for 2-3 mins until fragrant. Stir the pumpkin or squash into the pan and coat in the paste, then pour in the stock and coconut milk. Bring everything to a simmer, add the chickpeas, then cook for about 10 mins until the pumpkin is tender. The curry can now be cooled and frozen for up to 1 month.
  • Squeeze the juice of one lime into the curry, then cut the other lime into wedges to serve alongside. Just before serving, tear over mint leaves, then bring to the table with the lime wedges and warm naan breads.

1 tbsp vegetable oil
bunch spring onions, sliced
small bunch coriander, stalks finely chopped, leaves picked
400g pork tenderloin, sliced
4 tbsp Thai red curry paste
4 tbsp peanut butter
1 tbsp soft brown sugar
1 tbsp soy sauce
400ml can light coconut milk
175g pack baby corn
juice 1 lime
steamed jasmine rice, to serve

Steps:

  • Heat the oil in a large saucepan or flameproof casserole. Add the spring onions and coriander stalks and cook for 1 min. Add the pork slices and cook for 5 mins until starting to brown.
  • Stir in the curry paste and peanut butter. After 30 secs, add the sugar, soy and coconut milk, plus ½ can of water. Mix well, put a lid on and leave to simmer for 15 mins, stirring occasionally.
  • Remove the lid, add the baby corn and increase the heat. Bubble for 3 mins until the corn is cooked and the sauce has thickened a little. Stir in the lime juice and check the seasoning. Can now be frozen for up to 2 months. To cook from frozen: thoroughly defrost, then heat in a pan on the hob until curry is hot all the way through. Serve scattered with the coriander leaves and rice.

Mix with 1/2 teaspoon finely ground white pepper. Season the ground pork with the chopped ingredients. Mix in very well, then form it into little pieces, about 1 teaspoon in size.
  • Heat a wok or frying pan over medium heat. Add the vegetable oil. When it gets hot, add the garlic and cook for just a few seconds. Stir in the curry paste, mixing it with the garlic. Let it fry for about a minute.
  • Add the coconut milk and stir in well. Add the sugar and soy sauce, and let it cook until creamy and golden yellow in color.
  • Carefully add the meatballs to the curry mixture. Cook for about 3 - 4 minutes until they start to get firm. Then carefully turn them so they don't get broken up.
