1/2 cup salted peanuts
1/2 cup sweet chili sauce
1/4 cup lime juice
1/4 cup fresh cilantro or 1/4 cup parsley, lightly packed
1 tablespoon red curry paste
2 garlic cloves, minced (or 1/2 tsp powder)
1 teaspoon finely grated gingerroot, peeled
3 lbs whole chicken wings, split in half and tips discarded (or chicken drumettes)

Steps:

  • Curry Marinade: Process first 7 ingredients in blender or food processor until smooth. Makes about 1 cup marinade.
  • Put wings into large resealable freezer bag. Pour marinade over top, seal bag. Turn until coated.
  • Marinate in refrigerator for at least 6 hours or overnight, turning occasionally.
  • Discard marinade.
  • Arrange wings pieces in single layer on greased wire racks set in 2 foil lined baking sheeets.
  • Bake in 350 degree oven for about 1 hour, switching positions of baking sheets half way through, until wing pieces are tender.
  • Makes 36 wings or 24 drummettes.

1 tablespoon Thai curry paste
2 tablespoons curry powder
2 teaspoons minced fresh ginger
3 cloves garlic, minced
Dash cayenne pepper
Kosher salt and freshly ground black pepper
8 ounces high-fiber whole wheat linguine, (recommended: DeCecco)
Olive oil cooking spray
1 vidalia onion, chopped
1 pound boneless skinless chicken breast, fat removed, cut into small pieces
Kosher salt and freshly ground black pepper
2 tablespoons curry powder
2 tablespoons peanut butter
1 cup thinly sliced roasted red peppers
1 cup thinly sliced water chestnuts
1 cup scallions, white and green parts, thinly sliced
Chopped fresh mint and cilantro leaves, for garnish
Lime wedges, for serving

Steps:

  • For the sauce: In a medium bowl, combine all of the sauce ingredients, whisk until thoroughly combined and set aside.
  • For the chicken: Cook the whole wheat linguine al dente according to box directions. Drain and rinse under cold water and spray lightly with olive oil cooking spray so it does not stick and set aside.
  • Coat a large nonstick skillet with cooking spray and add onions. Cook until translucent and beginning to brown, about 5 to 10 minutes. Add the chicken, season with salt and pepper and stir in curry powder. Saute chicken until lightly brown. Add the peanut butter and allow it to melt to coat the chicken.
  • Add the roasted red peppers, water chestnuts and scallions and season with salt and pepper as you like. Saute for a few minutes just to release flavor.
  • Pour the coconut curry sauce over the chicken and vegetables and stir gently. Cook just until warmed through and thickened a bit, about 3 to 5 minutes. Season with salt and pepper, as needed. Garnish with chopped mint and cilantro. Serve with lime wedges, if desired.
  • SUZY'S SERVING OPTIONS: (Serves four or more ? can be doubled easily)
  • Family Style ? Put linguine in a large deep platter or decorative bowl and pour mixture over the top. Toss gently with tongs. Garnish with fresh lime juice, and chopped scallions or herbs.
  • Low Carb Diets ? On a large dinner plate place Boston lettuce leaves in a fan covering the entire plate. Place 1/4 of the chicken mixture on top and drizzle with fresh lime juice and garnish with scallions. The sauce will form a natural salad dressing for the lettuce.
  • Individual Plates: Each serving is 2 oz. dry pasta and 1/4 of the chicken mixture. Garnish it with fresh lime juice, a lime wedge and scallions or herbs. Serve it on a small exotic plate for added presentation.
  • NOTE: You may substitute shrimp or tofu for the chicken and it is equally delicious!!

5 - 6 tbsp Thai Red Curry Paste ((store bought, Maesri best) (Note 1))
1 quantity homemade Thai Red Curry Paste
2 large garlic cloves (, minced)
2 tsp fresh ginger (, finely grated )
1 tbsp lemongrass paste (or finely chopped fresh (Note 3))
3 tbsp vegetable oil ((or canola or peanut))
1 cup (250 ml) chicken broth/stock (, low sodium)
400 ml / 14 oz coconut milk ((full fat!))
6 kaffir lime leaves ((Note 4))
1 tbsp sugar ((white, brown or palm))
2 tsp fish sauce (, plus more to taste)
350g / 12 oz chicken thighs ((boneless and skinless), cut into 0.75 / 1/3" thick slices (Note 5))
150g / 5 oz pumpkin or butternut squash, ( cut into 1.5cm / 3/5" cubes (~1 heaped cup))
120g / 4oz green beans (, trimmed and cut into 5cm/2" pieces)
12 Thai basil leaves ((Note 6))
Fresh red chilli slices ((small chilli - spicy, large = less spicy))
Fresh coriander / cilantro leaves
Steamed jasmine rice

Steps:

  • Heat oil in a large heavy based skillet over medium high heat.
  • Add curry paste and Extras (if using jar paste) and cook for about 2 minutes so it "dries out" (See video)
  • Add chicken broth and stir to dissolve paste. Simmer rapidly for 3 minutes or until liquid reduces by half.
  • Add coconut milk, lime leaves, sugar and fish sauce. Stir, then add chicken.
  • Spread chicken out, bring to simmer, then turn heat down to medium. Simmer for about 8- 10 minutes or until Sauce reduces, the chicken is cooked and the sauce is almost at the thickness you want.
  • Do a taste test. Add more fish sauce (or even shrimp paste) to add more saltiness, sugar for sweetness.
  • Add pumpkin and beans, stir. Cook for 3 minutes or until pumpkin is just cooked through and Sauce is thickened - see video for Sauce thickness.
  • Remove from heat. Stir through a handful of Thai basil leaves.
  • Serve over jasmine rice, garnished with fresh red chilli slices and fresh coriander/cilantro leaves, if desired.

2 tablespoons peanut oil
¼ cup Thai green curry paste
3 cloves garlic, minced
1 (1/4 inch thick) slice ginger, finely grated
2 boneless, skinless chicken breasts, thinly sliced
1 (15 ounce) can baby corn pieces, drained
1 (8 ounce) can bamboo shoots, drained
2 (13.5 ounce) cans coconut milk
2 tablespoons fish sauce
2 tablespoons palm sugar
6 kaffir lime leaves
1 red bell pepper, cut into thin strips
1 orange bell pepper, cut into thin strips
¼ cup thinly sliced Thai basil, or more to taste

Steps:

  • Heat oil in a wok until it starts to shimmer. Add curry paste, garlic, and ginger; stir together and fry until fragrant, 2 to 3 minutes. Add chicken breast slices, stirring until coated. Cook until just slightly pink in the center, 3 to 5 minutes.
  • While chicken is cooking, place baby corn and bamboo shots in a small saucepan, cover with water, and place over high heat. Bring to a boil. Drain then cover with water again.
  • Pour coconut milk into the wok. Bring to a slow simmer, stirring occasionally, about 5 minutes. Drain corn and bamboo shoots and add in. Stir in fish sauce, palm sugar, and kaffir lime leaves. Bring back up to a simmer and cook for 5 minutes. Stir in bell pepper strips and cook until crisp-tender, about 3 minutes.
  • Remove curry from heat and stir in Thai basil.

This is a Thai chicken curry recipe I've been perfecting for many years. It is extremely flavorful, and the potatoes come out perfect, my favorite part of the dish. Serve over basmati rice.

1 teaspoon sesame oil, or as needed
1 yellow onion, roughly chopped
3 cloves garlic, minced
2 red potatoes, peeled and cut into 1-inch cubes
2 carrots, sliced
2 tablespoons Thai yellow curry paste
1 tablespoon minced fresh ginger root
1 tablespoon fish sauce
½ teaspoon Thai red chile paste
⅓ teaspoon ground coriander
1 (14 ounce) can coconut milk
1 cup water, divided
salt and ground black pepper to taste
1 pound skinless, boneless chicken breast halves, cut into thin strips
1 cup sliced zucchini

Steps:

  • Heat sesame oil over medium heat in a large saucepan. Saute onion and garlic in the hot oil until garlic begins to brown, 3 to 4 minutes. Add potatoes, carrots, curry paste, ginger, fish sauce, chile paste, and coriander; stir until evenly coated and well mixed.
  • Stir coconut milk and 1/2 cup water into the saucepan. Season with salt and pepper. Cover, reduce heat to low, and simmer for 10 minutes. Stir in chicken, zucchini, and bell pepper. Continue to simmer, covered, until chicken is no longer pink in the center, about 5 minutes more.
  • Dissolve cornstarch in remaining 1/2 cup water in a small bowl; stir into the simmering mixture. Uncover, raise heat to high, and bring to a boil. Continue to boil for 3 to 4 minutes. Remove from heat. Stir in cilantro and lime juice just prior to serving.

18 chicken wings, whole, tips removed
3 tablespoons ginger, grated
1/4 cup white vinegar
2 tablespoons sesame oil
1 1/2 teaspoons sesame seeds
1/2 cup honey
1/2 cup soy sauce
1/4 cup sweet-hot chili-garlic sauce
2 tablespoons sesame seeds, for garnish
3 stalks scallions, for garnish
1/4 cup canola oil, for frying

Steps:

  • Preheat oven to 350°F.
  • Cut wings by disjoining the two sections and trim away excess fat.
  • Place wings on a baking sheet lined with foil and bake for 35 minutes.
  • Set aside.
  • In a large skillet over medium heat, add 2 tablespoons canola oil and the grated ginger and cook for 2 minujtes.
  • Add vinegar, hot sesame oil, sesame seeds, honey, soy sauce and Sweet-Hot Garlic Chili Sauce.
  • Cook for 2 more minutes then transfer to a large bowl and set aside.
  • In the same skillet add 4-6 tablespoons canola oil.
  • Return the chicken wings to the skillet and cook for about 3 minutes, or until crispy and golden brown.
  • Remove wings and drain on paper towels then add to the bowl with the sauce mixture, tossing to coat.
  • Marinate in fridge for at least 2 hours or overnight.
  • Place wings on a baking pan, reserving the sauce, and bake in 375F for 15-20 minutes to heat thoroughly.
  • Serve with more sauce. Garnish with chopped scallions and sesame seeds, tossing to coat evenly.
  • SWEET-HOT GARLIC CHILI SAUCE:.
  • 1/2 cup rice vinegar.
  • 1/2 cup white sugar.
  • 1/4 cup water.
  • 3 tablespoons fish sauce.
  • 2 tablespoons Sherry wine.
  • 3 cloves garlic, minced.
  • 3/4 teaspoons Thai dried crushed chilis.
  • 1/4 cup tomato ketchup.
  • 1 1/2 tablespoons cornstarch dissolved in 3-4 tablespoons water.
  • Place all ingredients except the cornstarch in a pot and bring to a rolling boil.
  • Reduce heat to medium and let boil for 10-12 minutes or until reduced by almost half.
  • Reduce heat to low and add the cornstarch mixture incorporating into sauce.
  • Cook until thickened about 5 minutes.
  • Remove from heat and adjust taste to more sweet or more hot adding sugar or more chilis.
  • Serve with wings.

Curry Paste, recipe follows
1/2 cup rice flour
1 tablespoon baking powder
Sauce, recipe follows

1/2 cup garlic cloves, peeled
1/2 cup sliced shallots
1/2 cup red dried chiles, stemmed
4 makrut lime leaves, torn, or finely grated zest of 2 limes

1 tablespoon sugar
1 tablespoon fish sauce
1 teaspoon ground white pepper
1/3 cup vegetable oil
1 tablespoon freshly squeezed lime juice

Steps:

  • In a large bowl, toss the chicken wings with about 1/2 cup curry paste until well coated. Sprinkle with the rice flour and baking powder and toss again to coat evenly.
  • Put the wings in the air fryer basket and set the temperature to 400 degrees F. Cook for 25 minutes flipping the wings halfway through. Increase the temperature to 425 degrees F (or the highest setting) and bake until the skin is crispy and brown and the wings are cooked through, about 5 minutes more.
  • Remove the wings from the air fryer and transfer to the bowl with the sauce; toss well.
  • Transfer the wings to a platter and drizzle with a touch of honey. Serve immediately.
  • Combine the ginger, garlic, shallots, chiles, lime leaves, lemongrass, salt, sugar, fish sauce, white pepper and vegetable oil in a food processor and blend until smooth. Set aside until ready to use or refrigerate in an airtight container for up to 2 weeks.
