THAI CHICKEN AND VEGETABLE CURRY

Thai Chicken and Vegetable Curry image

Sweet potato, red bell pepper, and baby kale make this quick curry hearty and colorful. These vegetables make the meat almost secondary; just 12 ounces will go far here. If you can't find baby kale, you can use spinach or lacinato kale cut into 1-inch pieces. Use the rest of the can of coconut milk from the satay to enrich the sauce in the curry. To cook the quinoa, simmer 1 cup uncooked quinoa in 2 cups water for 14 minutes or until the liquid is absorbed.

Provided by Cooking Light

Time 40m

Yield Serves 4 (serving size: 1 1/4 cups curry and 1/2 cup quinoa)

Number Of Ingredients 14

2 teaspoons olive oil
12 ounces skinless, boneless chicken breasts, cut into 1-in. pieces
1/2 teaspoon black pepper
1/4 teaspoon kosher salt
1 pound diced peeled sweet potatoes (about 3 cups)
1 cup chopped yellow onion
1 cup chopped red bell pepper
1 tablespoon minced garlic
1 1/2 tablespoons Thai red curry paste
1 (5-oz.) pkg. baby kale (about 5 cups)
1 cup light coconut milk, well stirred
1 cup unsalted chicken stock (such as Swanson)
2 cups hot cooked quinoa
3 tablespoons fresh cilantro leaves

Steps:

  • Heat the oil in a large Dutch oven over medium-high. Sprinkle chicken with black pepper and salt; cook, turning to brown on all sides, 5 minutes. Place chicken in a bowl (do not wipe out pan).
  • Add potatoes, onion, and bell pepper to pan; cook, stirring occasionally, 3 minutes. Add garlic; cook 1 minute. Stir in curry paste and kale; cook until kale wilts, about 2 minutes. Stir in coconut milk and stock; bring to a boil. Reduce heat, cover, and cook until potatoes are tender, about 15 minutes. Return chicken to pan; cook 5 minutes.
  • Divide quinoa among 4 shallow bowls. Top evenly with chicken mixture and cilantro leaves.

THAI RED CURRY CHICKEN

Thai Red Curry Chicken image

This 30 MINUTE Thai Red Curry Chicken with Vegetables is wonderfully coconut creamy, bursting with layers of flavor, incredibly easy and all made in one pot! Definitely a new favorite at our house and better than any restaurant!

Provided by Jen

Time 30m

Number Of Ingredients 25

1 1/2 tablespoons olive oil or coconut oil
1 pound chicken breasts (sliced into 1/4" slices then 2" pieces**)
1/2 large onion, chopped
2 tablespoons red curry paste
1 red bell pepper, thinly sliced (then chopped into 2" pieces)
1 orange bell pepper thinly sliced ( then chopped into 2" pieces)
1 small zucchini, sliced
2 teaspoons freshly grated ginger
4 garlic cloves, minced
1 13.5 oz. can quality coconut milk ((I like Chaokoh))
1 tablespoon cornstarch
1 tablespoon Asian/Thai Sweet Chili Sauce ((like Mae Ploy))
2 tablespoons less sodium soy sauce
2 tablespoon fish sauce
2 tablespoons lime juice
1 tablespoon brown sugar
1 bay leaf
1 teaspoon dried basil
1/4 teaspoon salt (more or less to taste)
1/4 teaspoon pepper
sriracha to taste/Asian chili sauce ((optional))
lime zest to taste
fresh basil
fresh cilantro
fresh lime juice

Steps:

  • Heat oil over medium high heat in large nonstick skillet. Add chicken, onion and red curry paste and cook just until chicken is no longer pink. Add bell peppers, zucchini, ginger and garlic and saute 1 minute.
  • Add half of the coconut milk. Mix remaining coconut milk with 1 tablespoon cornstarch and add to skillet along with all remaining ingredients (expect Garnishes).
  • Bring to a boil, then reduce to a simmer for 5 minutes or until the sauce thickens and the vegetables reach desired crisp-tenderness. If you would like a thinner sauce, thin with water (I don't do this). Discard bay leaf.
  • Garnish with additional optional fresh basil, cilantro, lime zest, lime juice and Sriracha to taste. Serve with rice.

THAI CURRY CHICKEN & VEGETABLES

Thai Curry Chicken & Vegetables image

No idea where I got this recipe, but it is one of my favorites. Use your favorite vegetables. I tend to use mushrooms, carrots, and zucchini, but anything will work. I'm guessing on number of servings. I'm not crazy about really spicy dishes, so I always leave out the cayenne pepper.

THAI YELLOW CURRY CHICKEN WITH VEGETABLES

Thai Yellow Curry Chicken With Vegetables image

This classic Thai yellow curry dish with vegetables is made in a traditional way using chicken drumsticks and potatoes.

Provided by Darlene Schmidt

Categories     Dinner     Entree

Time 1h20m

Yield 4

Number Of Ingredients 23

24 to 32 oz. chicken (6 to 8 drumsticks or other chicken pieces, without skin for a lower fat dish)
2 to 3 potatoes (chopped into small chunks)
1 cup tomatoes ( cherry variety, or 1 to 2 medium-sized tomatoes, sliced into wedges)
1 cup stock (chicken, good-quality)
1 handful coriander (fresh)
Curry Sauce:
1 stalk lemongrass (fresh, minced, or substitute 1 tbsp lemon juice)
4 cloves garlic
6 teaspoons galangal (or ginger, or Thai ginger, sliced thinly)
1 shallot (or 1/4 cup purple onion)
1 chili pepper (yellow or red, sliced, or 1/2 to 1 tsp. dried crushed chili from the spice aisle)
1/2 tsp. chili powder (North American type at your local supermarket spice aisle)
3/4 tsp. turmeric
1 tsp. coriander (ground)
1 tsp. cumin (ground)
1/4 tsp. cinnamon
1/3 tsp. white pepper
3/4 tsp. shrimp paste
2 tbsp. fish sauce
1 tbsp. lime juice
2 tbsp. palm sugar (or brown sugar)
1 tbsp. ketchup
3/4 can coconut milk (reserve remaining 1/4 can)

Steps:

  • Preheat oven to 375 F.
  • Place all curry sauce ingredients in a food processor, large chopper, or blender. Process well to create a fragrant yellow curry sauce.
  • Transfer curry sauce to a large casserole-type dish (you will need a lid or foil). Add the chicken stock, and stir to combine.
  • Add the chicken pieces and potatoes, reserving the tomatoes for later. Stir everything together. Cover and bake at 375 F for 45 minutes. Remove from oven, add tomatoes, cover, and return to oven for 15 to 20 more minutes.
  • Remove from oven, and check the chicken. If the meat is tender and juices run clear, the dish is cooked. If not, stir and return to oven for another 10 minutes.
  • Before serving, stir in the reserved coconut milk . Now taste test the curry, adding more fish sauce instead of salt as needed. If the curry is too salty, add a little more lime juice. More chili can be added for more spice. If too spicy, add more coconut milk or chicken stock.
  • Top with a handful of lightly chopped coriander, serve with Thai jasmine rice . Enjoy!
