Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 18

1/2 lb gluten-free Thai rice noodles
2 tablespoons rice vinegar
2 tablespoons gluten-free soy sauce
1/2 tablespoon fish sauce (optional)
1 tablespoon sesame oil
1 tablespoon honey or 1 tablespoon brown sugar
1 teaspoon hot sauce (Sirracha) or 1/4 teaspoon red chili pepper flakes
1 garlic clove, finely minced
2 teaspoons finely minced fresh ginger
4 cups shredded gluten-free rotisserie-cooked chicken
2 medium carrots, sliced into thin matchsticks
1 red bell pepper, thinly sliced
1 English cucumber, halved length wise and thinly sliced crosswise
2 cups bean sprouts
2 green onions, white and green parts, thinly sliced (scallions)
1/3 cup cilantro or 1/3 cup Thai basil, roughly chopped, for garnish
2 tablespoons sesame seeds, for garnish
1 lime, sliced into wedges, for garnish

Steps:

  • Place noodles in a large heat-proof bowl. Bring 5 cups of water to a boil and pour water over the noodles. Make sure noodles are fully submerged. Let stand, stirring occasionally, until noodles become tender, 20 to 25 minutes. Drain well and place noodles back in the bowl.
  • While noodles are standing, stir together rice vinegar, soy sauce, fish sauce (if using), sesame oil, honey or sugar, hot sauce, garlic and ginger in a small bowl. After noodles have been drained, add this dressing to noodles and toss to coat.
  • Add chicken, carrots, red pepper, cucumber, bean sprouts and green onions to noodles, tossing to combine.
  • Divide noodles among serving plates and garnish with cilantro or basil and sesame seeds. Serve with lime wedges on the side.

Categories     One Dish Meal

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

1 tablespoon minced garlic
2 teaspoons sambal oelek chili sauce
1/2 cup sweet indonesian soy sauce (Ketjap Manis)
1/3 cup lime juice
2 tablespoons honey
4 boneless skinless chicken breasts
7 ounces rice vermicelli (200 grams)
1 cup shredded carrot
4 green onions, chopped
8 cups lettuce
chopped cilantro
chopped cashews or peanuts

Steps:

  • Early in the day or the night before, in a small bowl, combine marinade/dressing ingredients.
  • Put chicken breasts in a Ziploc bag. Pour 1/2 cup of the dressing/marinade into the bag of chicken and seal, squeezing out excess air. Massage the bag to coat the chicken and refrigerate for at least 6 hours. Refrigerate the remaining dressing.
  • To prepare salad:
  • Preheat grill to medium heat. Remove chicken from marinade and wipe excess marinade off chicken pieces with paper towels (discard towels). Grill until no longer pink.
  • While chicken is grilling, cook vermicelli noodles according to package directions. Drain and rinse under cold water; set aside.
  • Place 2 cups lettuce on each dinner plate. Top with cooked noodles, carrots, green onions, chicken, cilantro and chopped nuts. Drizzle remaining dressing over each salad.

THAI GRILLED CHICKEN SALAD WITH BASIL & MINT

Thai Grilled Chicken Salad With Basil & Mint image

Make and share this Thai Grilled Chicken Salad With Basil & Mint recipe from Food.com.

Provided by gailanng

Categories     Chicken Breast

Time 30m

Yield 2 serving(s)

Number Of Ingredients 16

2 boneless skinless chicken breasts or 4 -8 skinless chicken thighs, cut into thick strips
1 large bowl salad greens (enough for 2-3 people)
10 mint leaves
1 handful fresh basil
1 -2 cup cherry tomatoes, sliced in half (optional)
1 tablespoon black peppercorns, coarsely ground (use pestle & mortar, coffee grinder, or a peppermill that can ground coarsely)
4 garlic cloves, minced
3 tablespoons fish sauce
1 tablespoon soy sauce
2 tablespoons fresh-squeezed lime juice (or substitute lemon juice)
2 tablespoons brown sugar
1 lime, juice of
3 tablespoons fish sauce
2 tablespoons brown sugar
2 garlic cloves, minced
1/2 teaspoon cayenne pepper or 1/2 teaspoon dried crushed chili

Steps:

  • Stir together the marinade and pour over the chicken strips. Toss to coat, then set in the refrigerator to marinate while you prepare the salad greens.
  • Stir the salad dressing ingredients together in a cup. Taste-test the dressing, looking for a tangy taste that is a balance between sweet and sour, salty and spicy (it should have some kick to it from the cayenne/chili). Add a little more sugar if it's too sour. Set aside.
  • Heat up grill and lightly brush grill with a little vegetable oil. Grill your marinated chicken, basting it with the left-over marinate the first time you turn it. For oven-broiling, place chicken strips on a broiler pan (or on a foil-covered cookie sheet, turning up foil at the edges to prevent spilling). Set oven to broil setting and place chicken on one of the upper racks, turning it every 3-5 minutes, or until well done.
  • For the mint and basil, stack the leaves on top of each other, then thinly slice into slivers and toss in with the salad. Add most to the salad and toss with most of the dressing. Portion out onto plates and top with the hot chicken strips. Drizzle remaining dressing over the chicken and top with remaining basil and mint. For those who like it spicy, minced fresh chili can also be sprinkled over.

THAI CHICKEN AND NOODLE SALAD

Thai Chicken and Noodle Salad image

This one-bowl Asian meal is spicy, salty, sour, and sweet-all at once. The secret's in the sauce, made from fragrant kitchen standbys. The salad has terrific texture, with crisp carrots and cucumber, tender noodles, and (if you like) crunchy peanuts.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Time 50m

Number Of Ingredients 9

1 1/4 pounds boneless, skinless chicken breasts, thinly sliced crosswise
Spicy Asian Dressing for Thai Chicken and Noodle Salad
Coarse salt
3 1/2 ounces Chinese rice noodles, broken in half if long
1 tablespoon vegetable oil, such as safflower
2 carrots, sliced into ribbons with a vegetable peeler
1 English cucumber, halved lengthwise and thinly sliced crosswise
1/4 cup fresh basil, torn
Bean sprouts, chopped peanuts, fresh mint leaves, red-pepper flakes, and sliced scallion greens, for garnish (optional)

Steps:

  • Place chicken and half of dressing in a resealable plastic bag (reserve remaining dressing). Marinate at room temperature for 30 minutes (or refrigerate up to overnight).
  • In a large pot of boiling salted water, cook noodles until tender. Drain, and rinse under cold water to stop the cooking. Transfer to a platter.
  • In a large skillet, heat oil over medium-high. Working in batches, cook chicken (do not crowd skillet) until cooked through, 1 to 2 minutes; transfer to platter on top of noodles.
  • Top with carrots, cucumber, and basil. Drizzle with reserved dressing, and sprinkle with garnishes, if desired.

THAI CHICKEN NOODLE SALAD

Thai chicken noodle salad image

This light, fresh dish is perfect for relaxed summer entertaining, as it can be made in stages

Provided by Mary Cadogan

Categories     Dinner, Main course

Time 2h10m

Number Of Ingredients 16

1 chicken , about 1.5kg/3lb 5oz
3 slices fresh root ginger
2 spring onions , roughly chopped
2 garlic cloves
175g rice noodles
1 tbsp sunflower oil
100g asparagus , trimmed and cut into short lengths
175g sugar snap peas (cut into thin strips lengthways) or green beans (cut into short lengths)
4 spring onions , shredded
175g cherry tomatoes , halved
juice 2 limes
2 tbsp light muscovado or palm sugar
5 tbsp fish sauce
1-2 red chillies , deseeded and finely chopped
handful each basil and mint leaves, roughly torn if large, plus extra for garnish
handful salted peanuts , roughly chopped

Steps:

  • Put the chicken in a large heavy pan or flameproof casserole, then add the ginger, spring onions and garlic, plus a good sprinkling of salt. Cover with water, bring to the boil, reduce the heat, then cover tightly. Simmer the chicken for 1-1¼ hrs until tender. Leave to cool for 15 mins, then remove the chicken from the pan and strip off the meat. (The stock can be cooled and frozen for soups, sauces and casseroles.) Tear the chicken into bite-size chunks, then leave to cool.
  • Put the noodles in a large heatproof bowl and cover with boiling water. Leave for 4 mins, drain, rinse in cold water, then return to the bowl. Use a scissors to snip into short lengths, then toss with the oil to stop them sticking together.
  • Cook the asparagus for 3-4 mins in boiling salted water, then tip into a sieve and cool under cold running water. Drain well. If using green beans, cook them with the asparagus. If using sugar snaps, they won't need to be cooked.
  • To make the dressing, mix the lime juice with the sugar until it has dissolved. Add the fish sauce and chillies, then mix well. To serve, put all the salad ingredients in a large bowl with most of the basil and mint leaves. Pour over the dressing and toss everything together well. Pile into a large serving bowl, then scatter over the peanuts and the remaining basil and mint.
