CHICKEN PAD THAI CASSEROLE

We took takeout where it's never been before; chicken pad Thai trades in the wok for the casserole treatment, resulting in one of the easiest global dinners you'll ever make. And by easiest, we mean you don't have to bother cooking the noodles or use more than one dish from start to finish.

2 eggs, slightly beaten
1/4 cup packed brown sugar
1 tablespoon chili garlic sauce
2 teaspoons fish sauce
1 package (20 oz) boneless skinless chicken thighs, cut in 1-inch pieces
2 cups shredded green cabbage
1 cup shredded carrot
2 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
3 tablespoons soy sauce
2 tablespoons butter
1 package (8 oz) pad Thai rice noodles
1/2 cup chopped salted roasted peanuts
3/4 cup chopped green onions
1/2 cup chopped fresh cilantro leaves
Lime wedges

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, mix eggs, brown sugar, chili garlic sauce and fish sauce; stir in chicken, cabbage and carrot.
  • In 1-quart microwavable bowl, mix broth, soy sauce and butter. Microwave uncovered on High 4 to 6 minutes or until steaming. Add noodles to baking dish, pulling apart to spread evenly in dish. Pour broth mixture over noodles; let stand 2 minutes. Using tongs, carefully turn noodles, and spread in even layer.
  • Pour chicken mixture over noodle mixture, and spread evenly to cover noodle mixture; cover with foil. Bake 30 minutes.
  • Stir noodle mixture, then replace foil and bake 7 to 10 minutes longer or until chicken is no longer pink in center and mixture is heated to at least 165°F in center of casserole. Top with peanuts, green onions and cilantro. Serve with lime wedges.

2 tubes (12 ounces each) refrigerated buttermilk biscuits
3 cups shredded cooked chicken
1 cup sliced fresh mushrooms
1 bottle (11-1/2 ounces) Thai peanut sauce, divided
2 cups shredded mozzarella cheese, divided
1/2 cup chopped sweet red pepper
1/2 cup shredded carrot
4 green onions, sliced
1/4 cup honey-roasted peanuts, coarsely chopped

Steps:

  • Preheat oven to 350°. Cut each biscuit into 4 pieces. Place in a greased 13x9-in. baking pan., In a large bowl, combine chicken, mushrooms and 1 cup peanut sauce; spread over biscuits. Top with 1 cup cheese, red pepper, carrot and green onions. Sprinkle with remaining cheese., Bake until topping is set, cheese is melted and biscuits have cooked all the way through, about 40 minutes. Sprinkle with peanuts and serve with remaining peanut sauce.

Nonstick cooking spray, for the pan
1 pound boneless, skinless chicken thighs, thinly sliced
2 cups small broccoli florets
1 1/2 cups jasmine or basmati rice
1 medium red bell pepper, thinly sliced
1/2 medium yellow onion, thinly sliced
One 14-ounce can light coconut milk
1 cup chicken broth
2 tablespoons red curry paste
2 tablespoons fish sauce
2 teaspoons brown sugar
Juice of 1 lime
1/4 cup chopped salted roasted peanuts
1/4 cup minced fresh cilantro

Steps:

  • Preheat the oven to 375 degrees F. Coat a 9-by-13-inch pan with cooking spray.
  • Evenly scatter the chicken, broccoli, rice, red pepper and onion in the pan. In a bowl, whisk together the coconut milk, broth, curry paste, fish sauce, brown sugar and lime juice. Pour the mixture over the ingredients in the pan. Bake until the rice is cooked and most of the liquid is absorbed, 45 to 50 minutes. Sprinkle with the chopped peanuts and cilantro before serving.

This recipe was created when we felt like having spicy, Oriental tasting food. It's delicious, and uses bold ingredients such as peanut butter, fresh ginger and sesame oil. Try serving over rice.

1 cup soy sauce
8 cloves garlic, minced
1 tablespoon minced fresh ginger root
2 tablespoons hot pepper sauce
2 pounds skinless chicken thighs
1 tablespoon sesame oil
1 tablespoon brown sugar
1 onion, sliced
½ cup water
4 tablespoons crunchy peanut butter
2 tablespoons green onions, chopped

Steps:

  • In a large bowl, combine the soy sauce, garlic, ginger and hot pepper sauce. Mix well and place chicken in the bowl, turning to coat evenly. Cover and marinate in the refrigerator for at least one hour.
  • Heat the sesame oil in a Dutch oven over medium high heat. Add the brown sugar, stirring until dissolved. Add the onion and saute for 5 minutes. Add the chicken parts and saute for 5 minutes, turning to brown evenly. Pour in marinade, add the water and bring to a boil.
  • Reduce heat to low and simmer for 15 to 20 minutes. Add the peanut butter, stirring well, and simmer for 10 more minutes. Transfer chicken to a serving platter, pour sauce over, and garnish with the chives.

This is a delicious spicy recipe I found in South Africa Quick & Easy. My family loves it! I use fresh coriander (cilantro). Also, we enjoy spicy food so I throw in an extra Tbs of chilli. Yummy!!

8 -10 chicken thighs
1 onion
2 garlic cloves
1 -2 tablespoon prepared jalapeno chile
1/2 cup roasted peanuts
1 teaspoon salt
fresh ground black pepper
1 teaspoon ground coriander
1 tablespoon vegetable oil
1 cup coconut cream

Steps:

  • Remove and discard chicken bones and skin and place chicken in a casserole. Peel and roughly chop onion and garlic and place in a food processor or blender with chilli, peanuts, salt, pepper and coriander. Whiz to a paste. Heat oil in a frying pan and fry the onion paste for 2-3 minutes until the mixture smells fragrant. Add coconut cream, bring to a boil and pour over the chicken. Cover and bake at 180ºC (350ºF) for about 50 minutes until chicken is cooked.
  • Serve with rice.

1 tablespoon olive oil
4 whole chicken legs (about 3 pounds total)
Coarse salt and ground pepper
1 can (14.5 ounces) light coconut milk
1 1/2 cups canned reduced-sodium chicken broth
1 to 2 teaspoons Thai red curry paste
1 cup jasmine rice
2 red bell peppers (ribs and seeds removed), cut into 1-inch pieces
8 ounces green beans (stem ends removed), cut into 1-inch lengths
1/2 lemon, cut into wedges, for serving

Steps:

  • In a 5-quart Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper. Working in two batches, cook chicken until browned, 6 to 8 minutes; transfer to a plate (chicken will cook more in step 2).
  • To pot, add coconut milk, broth, 1/2 cup water, and curry paste; bring to a boil, and stir in rice. Add chicken (with any juices), arranging pieces in a single layer. Cover, and reduce heat to medium-low. Cook, without stirring, until rice is almost tender, 15 minutes.
  • Scatter bell peppers and green beans on top of chicken mixture; cover, and cook until vegetables are crisp-tender, 8 to 10 minutes. Serve with lemon wedges on the side.

1 tbsp vegetable oil
1 onion , chopped
400g pack mini chicken fillet
4 tbsp Thai green curry paste (we used Bart's) , or use less for a milder taste
250g basmati and wild rice mix, rinsed (we used Tilda)
2 red peppers , deseeded and cut into wedges
finely grated zest and juice 1 lime
400g reduced-fat coconut milk
handful coriander leaves, to serve

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil in a shallow ovenproof casserole dish, then soften the onion for 5 mins. Add the chicken and curry paste, then cook for 3 mins, stirring to coat.
  • Tip in the rice and peppers, then stir in the lime zest and juice, coconut milk and 250ml boiling water. Bring to the boil, then pop the lid on and bake for 20 mins until the rice is fluffy. Scatter with coriander before serving.

5 -6 tablespoons vegetable oil
8 chicken pieces
1 1/2 cups flour
salt and pepper
1 onion, chopped

1 tablespoon hot chili sauce (or to taste add in another tablespoon for lots of heat!)
2 tablespoons soy sauce

1 (14 ounce) can coconut milk
1 -2 teaspoon grated lime zest
salt and pepper

Steps:

  • Set oven to 350 degrees.
  • Heat oil in a skillet.
  • In a shallow bowl mix together the flour, salt and pepper.
  • LIGHTLY coat the chicken legs and thighs in the flour (shake off any excess flour, the chicken should only be very lightly coated!) brown in hot oil on both sides (about 8 minutes per side) transfer to a casserole dish.
  • Add in onion and garlic; saute until tender (about 5 minutes).
  • Stir in coriander, cumin, ginger, chili sauce, soy sauce and peanut butter; stir for 1 minute.
  • Add in coconut milk; stir to blend and simmer for 2 minutes.
  • Pour the sauce over the chicken in the casserole.
  • Cover with foil and cook for 25 minutes.
  • Uncover and continue cooking for about 30 minutes or until the chicken is cooked through and tender.
  • Just before serving add in the grated lime zest.
  • Serve with cooked rice.

While this popular Thai street food can be whipped up using a range of proteins, Mr. Yenbamroong refers to his riff as "low-rent" because it's prepared with ground chicken rather than pricier slices of meat. It's piled with basil; Thai basil or holy basil provide more assertive licorice notes, but sweet basil adds herbal bursts of brightness. Steps:

  • Heat a wok or large nonstick skillet over medium-high, then swirl in the oil. Once the oil is shimmering, add the ground chicken and cook, actively breaking the chicken up into small pieces, until it is mostly cooked, about 6 minutes.
  • Stir in the garlic, sugar and chile until evenly distributed and fragrant, about 2 minutes, then add the green beans, oyster sauce, fish sauce and Thai seasoning, and cook, stirring constantly, until the chicken is fully cooked, the green beans are crisp-tender and the krapow is glossy, about 2 minutes.
  • Remove from heat, add the basil and a dash of white pepper and toss to combine. If the sauce seems to cling too tightly to the mixture, add 1 to 2 tablespoons of water to make it loose and glossy.
  • Serve over rice, and top with a crispy fried egg, if desired. Serve with additional Thai seasoning to sprinkle on top, according to taste.
