225g / 7oz chicken thigh fillets (, skinless boneless, cut into bite size pieces)
1 green onion (, cut into 4cm / 2" lengths.)
1 cup Thai basil leaves (, loosely packed (Holy Basil if you can find it) (Note 1))
2 garlic cloves (, large, finely chopped (Note 2))
1 birds eye or Thai chilli (, deseeded and finely chopped)
1 1/2 tbsp oil ((peanut, vegetable or canola))
2 tsp oyster sauce
1 tsp light soy sauce ((Note 3))
1 tsp dark soy sauce ((or all purpose) (Note 3))
1 tsp sugar
2 tbsp water
Steamed jasmine rice

Steps:

  • Put Sauce ingredients in a small bowl and mix to combine.
  • Heat oil in wok or pan over high heat.
  • Add garlic and chilli and cook for 10 seconds. Don't inhale - the chilli will make you cough!
  • Add the white part of the green onions and chicken and fry until cooked, around 2 minutes.
  • Add Sauce and cook for 1 minute until the water reduces to make a thick glossy sauce.
  • Toss through green part of green onions and basil leaves. Stir until just wilted, then serve immediately with steamed jasmine rice.

My version of this classic Thai dish has spectacular taste even with regular basil instead of Thai or holy basil. The sauce actually acts like a glaze as the chicken mixture cooks over high heat. The recipe works best if you chop or grind your own chicken and have all ingredients prepped before you start cooking.

⅓ cup chicken broth
1 tablespoon oyster sauce
1 tablespoon soy sauce, or as needed
2 teaspoons fish sauce
1 teaspoon white sugar
1 teaspoon brown sugar
2 tablespoons vegetable oil
1 pound skinless, boneless chicken thighs, coarsely chopped
¼ cup sliced shallots
4 cloves garlic, minced
2 tablespoons minced Thai chilies, Serrano, or other hot pepper
1 cup very thinly sliced fresh basil leaves
2 cups hot cooked rice

Steps:

  • Whisk chicken broth, oyster sauce, soy sauce, fish sauce, white sugar, and brown sugar together in a bowl until well blended.
  • Heat large skillet over high heat. Drizzle in oil. Add chicken and stir fry until it loses its raw color, 2 to 3 minutes. Stir in shallots, garlic, and sliced chilies. Continue cooking on high heat until some of the juices start to caramelize in the bottom of the pan, about 2 or 3 more minutes. Add about a tablespoon of the sauce mixture to the skillet; cook and stir until sauce begins to caramelize, about 1 minute.
  • Pour in the rest of the sauce. Cook and stir until sauce has deglazed the bottom of the pan. Continue to cook until sauce glazes onto the meat, 1 or 2 more minutes. Remove from heat.
  • Stir in basil. Cook and stir until basil is wilted, about 20 seconds. Serve with rice.

Change vege to suit your taste - green beans are nice instead of bok choy. Prep all ingredients, including the sauces, before starting to cook.

1 medium bok choy, sliced 1-inch wide, whites and greens separated
1/2 onion, sliced
1/2 red bell pepper, sliced
12 ounces boneless skinless chicken breast halves, sliced 1/4-inch thick
1 teaspoon chopped garlic
1/2 teaspoon red pepper flakes
1/4 cup shredded basil
peanut oil, for stir-fying
2 tablespoons fish sauce
2 teaspoons sugar
2 tablespoons soy sauce
2 tablespoons oyster sauce
4 tablespoons water
1 teaspoon chili paste
1 teaspoon cornstarch
2 tablespoons water

Steps:

  • Heat oil in wok. Stir-fry onions, peppers, and white part of bok-choy until crisp tender. Remove and keep warm.
  • Add oil to wok if needed and stir-fry chicken, garlic, and pepper flakes until chicken is done. Add sauces in order, stirring between each addition to coat. Add cooked vegetables back and stir to coat.
  • Add green part of bok choy and basil, stirring just unti hot-crisp, and beginning to wilt. Serve immediately.

1 tablespoon chopped garlic
1 to 2 tablespoons chopped Thai chile pepper
8 ounces ground chicken breast
1/2 cup sliced white mushrooms
1 1/2 tablespoons fish sauce
1 tablespoon oyster sauce
1/2 tablespoon sugar
1/2 tablespoon sweet soy sauce (optional)
1/3 cup chicken stock
1/2 cup sliced red bell pepper (optional)
1/2 cup Thai holy basil (Ga-Prao)

Steps:

  • Heat the oil in a large saucepan or wok at high heat. Stir in the chopped garlic and cook until it is golden brown. Add the Thai chile pepper and stir well.
  • Add the ground chicken and cook it just halfway done. Reduce the heat to medium and add the mushrooms, fish sauce, oyster sauce, sugar, sweet soy sauce, and chicken stock. Mix well.
  • When all the ingredients are cooked, add the red bell pepper and the Thai holy basil. Mix well and season to taste with salt. Serve over steamed jasmine rice.

About 1 tablespoon oyster sauce
About 1½ tablespoons each dark and light soy sauce (or 3 tablespoons tamari or soy sauce of choice)
1 tablespoon fish sauce
3 tablespoons light brown sugar or granulated sugar
½ cup chicken bone broth or stock
3 tablespoons high-temp cooking oil
such as peanut or safflower
1¼ to 1½ pounds boneless
skinless chicken breasts or thighs (for breasts: halve horizontally then thinly slice; for thighs: trim and dice or thinly slice)
2 large or 3 medium sweet peppers
red or red and green combined
seeded and sliced (about 3 cups)
4 to 5 Thai chilies
or 1 red chili or jalapeño/Serrano pepper
finely chopped or thinly sliced
4 large shallots
peeled and thinly sliced lengthwise (or 1 red onion
quartered and thinly sliced)
4 large cloves garlic
thinly sliced or chopped
1½ inches fresh ginger
peeled and chopped
grated or cut into small thin matchsticks
1 cup Thai basil leaves or a handful basil tops
torn
½ cup Thai mint or a handful of mint
stripped from stems
coarsely chopped

Steps:

  • For the sauce, whisk up ingredients in medium bowl
  • For the chicken and vegetables, heat 2 tablespoons oil in a large nonstick skillet over medium-high to high heat, 2 turns of the pan
  • Add chicken in single layer and brown, then remove and reserve
  • Add another tablespoon, one turn of the pan, add the peppers and shallots or onions, toss 2 to 3 minutes, add garlic and ginger, toss again, add sauce and thicken a minute or 2
  • Wilt basil and mint into the dish and remove from heat
  • Top rice with chicken and peppers with basil in shallow bowls and serve

Steps:

  • In a medium bowl, combine the chicken with the fish sauce, soy sauce, water, and sugar.
  • In a large nonstick frying pan or a wok, heat the oil over moderately high heat.
  • Add the onion and cook, stirring, for 2 minutes.
  • Stir in the chiles and garlic; cook, stirring, 30 seconds longer.
  • Remove the chicken from the marinade with a slotted spoon and add it to the hot pan.
  • Cook until almost done, stirring, about 3 minutes.
  • Add the marinade and cook 30 seconds longer.
  • Remove from the heat and stir in 1 cup of the basil.
  • Serve topped with the remaining 1/2 cup basil.

  • In a small bowl stir together the brown sugar, fish sauce, soy sauce, oyster sauce, cornstarch chicken broth and water and add to the pan. Cook for 3minutes.
  • Add the basil and stir-fry until wilted.
