Provided by Um Safia

Categories     Dessert

Time 25m

Yield 2 bowls, 2 serving(s)

Number Of Ingredients 5

2 eggs
1 1/4 cups coconut cream
3/4 cup sugar
1/4 cup skim milk
5 drops pandan paste, mixed with 1/4 cup water (screwpine)

Steps:

  • In a mixing bowl beat the two eggs.
  • To get coconut cream, remove the lid from a can of coconut milk and, without stirring the contents, remove the top cream and discard the thin liquid. It should take around 1 1/2 cups of coconut milk to yield 1 1/4 cups coconut cream.
  • Add the coconut cream and sugar to the eggs, and whisk it together until the sugar dissolves. Pour this into a double boiler and stir it constantly until it thickens up. Then add milk, mix well, and add the pandan. Continue stirring until it thickens up then transfer to smaller bowls.
  • Serve with warm bread or sweet bread of your choice. We love this as a dipping for fresh waffles. Enjoy!

THAI GREEN CURRY WITH SPRING VEGETABLES

Thai Green Curry with Spring Vegetables image

This healthy, vegetarian Thai green curry features fresh asparagus, carrots and spinach! It's full of flavor and simple enough for weeknight dinners. Feel free to substitute sliced snow peas for the asparagus if it's not in season where you live. Recipe yields two large servings (as shown) or four small servings.

Provided by Cookie and Kate

Categories     Entree

Time 45m

Number Of Ingredients 16

1 cup brown basmati rice, rinsed
2 teaspoons coconut oil or olive oil
1 small white onion, diced
1 tablespoon finely chopped fresh ginger (about a 1-inch nub of ginger, peeled and chopped)
2 cloves garlic, finely chopped
Pinch of salt
1/2 bunch asparagus, tough ends removed and sliced into 2-inch long pieces (to yield about 2 cups prepared asparagus)
3 carrots, peeled and sliced on the diagonal into 1/4-inch wide rounds (to yield about 1 cup sliced carrots)
2 tablespoons Thai green curry paste*
1 can (14 ounces) coconut milk (I used full-fat coconut milk for a richer curry)
1/2 cup water
1 1/2 teaspoons coconut sugar or turbinado (raw) sugar or brown sugar
2 cups packed baby spinach, roughly chopped
1 1/2 teaspoons rice vinegar or fresh lime juice
1 1/2 teaspoons soy sauce** (I used reduced-sodium tamari)
Garnishes: handful of chopped fresh cilantro and red pepper flakes, to taste

Steps:

  • To cook the rice, bring a large pot of water to boil. Add the rinsed rice and continue boiling for 30 minutes, reducing heat as necessary to prevent overflow. Remove from heat, drain the rice and return the rice to pot. Cover and let the rice rest for 10 minutes or longer, until you're ready to serve.
  • Warm a large skillet with deep sides over medium heat. Once it's hot, add a couple teaspoons of oil. Cook the onion, ginger and garlic with a sprinkle of salt for about 5 minutes, stirring often. Add the asparagus and carrots and cook for 3 more minutes, stirring occasionally. Then add the curry paste and cook, stirring often, for 2 minutes.
  • Pour the coconut milk into the pan, along with 1/2 cup water and 1 1/2 teaspoons sugar. Bring the mixture to a simmer. Reduce heat as necessary to maintain a gentle simmer and cook until the carrots and asparagus are tender and cooked through, about 5 to 10 minutes.
  • Once the vegetables are done cooking, stir the spinach into the mixture and cook until the spinach has wilted, about 30 seconds. Remove the curry from heat and season with rice vinegar and soy sauce. Add salt and red pepper flakes (optional), to taste. Divide rice and curry into bowls and garnish with chopped cilantro and a sprinkle of red pepper flakes, if you'd like.

EASY THAI BANANA COCONUT CUSTARD

Easy Thai Banana Coconut Custard image

This easy banana coconut custard dessert recipe is normally steamed in Thailand, but baking it in the oven is just as good and less messy.

Provided by Darlene Schmidt

Categories     Dessert

Time 1h10m

Yield 4

Number Of Ingredients 7

1 cup coconut milk
1/3 cup sugar, or to taste
2 eggs
1 ripe banana
1 teaspoon coconut flavoring, or vanilla flavoring, or both
Oil, for ramekins
1 (16-ounce) package of banana leaves , optional

Steps:

  • Preheat the oven to 350 F.
  • Prepare 4 to 6 ramekins for the dessert by greasing them with a little oil. If you have banana leaves, make a lining with them by cutting two or more wide strips and pressing them into the ramekin (like a cross or a basket).
  • Place the coconut milk, sugar, eggs, banana, and flavoring in a blender or food processor. Blend or process for 30 seconds. If you don't have a blender or processor, simply mix the ingredients together in a bowl with a fork or whisk for 1 minute, or until the sugar has dissolved.
  • Pour the mixture into the ramekins, filling each one 3/4 full.
  • Place the ramekins in a flat-bottomed glass dish (a lasagna or casserole dish works well). Fill part-way with water-up to 1/2 the height of the ramekins-and carefully place the dish in the oven.
  • Bake for 45 minutes to 1 hour, or until the custard has set and is firm.
  • Serve the ramekins either hot, cold or at room temperature. If desired, sprinkle with a little dry shredded coconut, sweetened or unsweetened. Coconut milk is used in many Thai desserts as well as savory dishes. For those who want creaminess but are eating dairy-free, it is a useful ingredient. You may also want to make a Mango Custard and enjoy another tropical fruit flavor.

THAI BREAKFAST: 19 OF THE MOST POPULAR ... - EATING THAI FOOD

From eatingthaifood.com
Estimated Reading Time 7 mins
  • Joke (โจ๊ก) If there’s one food that immediately pops into my mind as a Thai breakfast dish, it’s the thick rice congee porridge known as joke (โจ๊ก).
  • Khao tom (ข้าวต้ม) Khao tom (ข้าวต้ม) is sort of like the cousin of joke (โจ๊ก), but instead of the rice being dissolved into a porridge, khao tom (ข้าวต้ม) includes rice that’s cooked on its own first, then cooked into a soup with other ingredients and broth.
  • Tom luad moo (ต้มเลือดหมู) One of the local Thai breakfast favorites, and this is one of the dishes on this list that’s most commonly known as a breakfast dish, is tom luad moo (ต้มเลือดหมู).
  • Khao kai jeow (ข้าวไข่เจียว) Along with Thai style rice congee soup (joke), one of the most popular things you’ll see eaten for breakfast in Thailand is khao kai jeow, meaning just rice and an omelet.
  • Khao Neow Moo Ping (ข้าวเหนียวหมูปิ้ง) If joke (โจ๊ก) is the cereal of Thai breakfast foods, khao neow moo ping (ข้าวเหนียวหมูปิ้ง) would have to be the sausage, egg, and cheese biscuit.
  • Gai yang (ไก่ย่าง) You’ve always dreamed about eating hot and fresh grilled chicken for breakfast, haven’t you? I sure did before I moved to Thailand.
  • Patongo (ปาท่องโก๋) Patongo (ปาท่องโก๋) is the Thai version of the donut, a blob of lightly sweet dough deep fried until it is fluffy on the inside and crunchy on the outside.
  • Nam Tao Hoo (นำ้เต้าหู้) Often served at the same street food stalls as patongo (ปาท่องโก๋) donuts, nam tao hoo (นำ้เต้าหู้) is the Thai version of fresh soy milk.
  • Dim Sum (ติ๋มซำ) Adapted into the Thai culinary scene from the Chinese, various forms of dim sum are popular to eat for breakfast in Thailand as well.
  • Salapao (ซาลาเปา) When I was in China I was devouring steamed baozi filled with a choice of ingredients by the bag full each morning. In Thailand, the baozi, which are referred to as salapao (ซาลาเปา), are a bit different, usually smaller and often the choice of filling is limited to red barbecued pork, minced pork, sweet red beans or cream.
