T.G.I. Friday's Broccoli Cheese Soup image

4 cups chicken broth
1 cup water
1 cup half-and-half
4 slices Kraft Cheddar Cheese Singles
1/2 cup all-purpose flour
1/2 teaspoon dried minced onion
1/4 teaspoon ground black pepper
4 cups broccoli florets (bite-size pieces)
Garnish:
1/2 cup shredded cheddar cheese
2 teaspoon s minced fresh parsley

Steps:

  • 1. Combine chicken broth, water, half-and-half, cheese, flour, onion, and pepper in a large saucepan. Whisk to combine and to break up any lumps of flour, then turn heat to medium/high. Bring soup to a boil, and then reduce heat to low.
  • 2. Add broccoli to soup and simmer for 15 to 20 minutes or until broccoli is tender but not soft.
  • 3. For each serving, spoon one cup of soup into a bowl and garnish with a tablespoon of shredded cheese and a pinch of parsley.

4 cups chicken broth
1 cup water
1 cup half-and-half
4 slices process American cheese (like Kraft)
1/2 cup flour
1/2 teaspoon dried onion flakes
1/4 teaspoon black pepper
4 1/2 cups broccoli florets, cut to bite size pieces
1 cup shredded cheddar cheese
3 -4 teaspoons minced fresh parsley

Steps:

  • Combine Chicken broth, water, half and half, cheese, flour, onion and pepper in a large soup pot.
  • Bring to a boil, stirring constantly, then reduce to a simmer.
  • Add broccoli and simmer for 15 minutes more or until broccoli is tender but not mushy.
  • Pour into a large soup bowl and offer cheese and parsley at the table.

1/4 cup onion, chopped
1/4 cup margarine or 1/4 cup butter
1/4 cup flour
1 teaspoon salt (or to taste)
1/4 teaspoon white pepper (or to taste)
1 cup chicken broth
2 1/2 cups milk
2 cups chopped broccoli, cooked crisp-tender
1 -2 cup shredded cheddar cheese
1/4 cup chopped celery

Steps:

  • Saute onion and celery in butter in saucepan over medium heat until tender.
  • Add flour, and salt and pepper, cooking and stirring until mixture is smooth and bubbly.
  • Add broth and milk (all at once), stirring constantly until mixture comes to a boil and begins to thicken.
  • Add cooked broccoli (I like to steam mine then cool in cold water to preserve color), stirring until all is heated through.
  • Remove from heat and stir in cheese until melted and smooth (place back on heat briefly if necessary).

1 onion, chopped
1 clove garlic, crushed
1 ounce butter
1 lb broccoli floret
1 medium potato, peeled and diced
2 celery ribs, chopped
15 fluid ounces vegetable stock
10 fluid ounces milk
3 ounces sharp cheddar cheese, shredded
red pepper, diced,to garnish

Steps:

  • Fry the onion and garlic in the butter until soft.
  • Add the remaining vegetables and stock, bring to a boil, cover and simmer for 15 minutes.
  • Puree until smooth, add milk and reheat without boiling.
  • Stir in half the cheese, garnish with the remaining cheese and red pepper and serve with hard rolls.

8 ounces neufchatel cheese
1/2 teaspoon onion powder
14 1/2 ounces low sodium chicken broth
2 tablespoons chicken bouillon
1 cup water (to dissolve the chicken bouillon)
2 tablespoons cornstarch (dissolved in the chicken bouillon water)
1/2 cup low-fat Greek yogurt
1/2 cup monterey jack and cheddar cheese blend (shredded)
1/2 cup half & half light cream

Steps:

  • Melt the neufchatel cheese and chicken broth in a pot over medium heat, whisking until smooth.
  • Add the Greek yogurt, chicken bouillon and cornstarch dissolved in water, and onion powder, whisking until smooth.
  • Turn up the heat to medium high and bring to a low boil, whisking constantly, until the mixture thickens.
  • Turn down the heat and whisk in the half & half (if the soup is too thick, use water to thin).
  • Stir in the shredded cheese and steamed broccoli, warming through.

Steps:

  • Chop broccoli and cauliflower; peel and cube carrots and potatoes.
  • Boil vegetables in 1 quart water; add bouillon and cook until tender.
  • Add soup and cheese; simmer until cheese melts.
