RED & WHITE POTATO SALAD WITH PICKLED ONIONS
Potato salad is a creamy barbecue classic - leave the skin on the potatoes and add chopped pickles and celery for texture and crunch

Steps:
- Put the potatoes in a pan of cold salted water and bring to the boil. Simmer for 15 mins or until tender and a knife goes in easily. Meanwhile, combine the onion and vinegar in a large bowl, cover and set aside.
- Drain the potatoes and return to the pan, then stand for 5 mins to steam-dry. Slice them into bite-sized pieces and add to the bowl with the onion and vinegar, season with salt to taste and toss to combine. Cover and chill until cold.
- Combine the soured cream, mayonnaise and mustard, then add to the cold potatoes with the celery, gherkin and dill. Stir with a spatula until well combined, taking care not to break up the potatoes too much. Season to taste, then chill for at least 1 hr before serving.

TEXAS COUNTRY POTATO SALAD

Steps:
- Cook bacon until crispy, drain and crumble.
- Reserve a tablespoon of the bacon drippings.
- Place potatoes in a large saucepan, cover with cold water, add reserved bacon grease, some salt and cook until potatoes are tender, about 15 to 20 minutes.
- Drain and let cool, then cut into bite size pieces.
- Mix together mayonnaise, mustard, salt and pepper for dressing in a separate bowl.
- Mix together potatoes, green onion and egg and toss with dressing.
- Add bacon and chill until serving time.
QUICK-PICKLED TEXAS-1015 AND RED ONIONS
Although this recipe originally referred to Vidalia onions, no self respecting Texan, pseudo-Texan, Texas resident, or anyone else who has ever tasted a Texas-1015 onion (named for their October 15 planting date) would consider using anything else. Any sweet onion will do in a pinch, however, even Vidalias. Prep time does not include overnight setting time.

- Wash a half-gallon jar and its lid in hot soapy water; rinse well with very hot water, and let drain.
- Combine water, vinegar, salt, and sugar in a stainless steel saucepan.
- Bring to a boil for about 5 minutes, stirring occasionally to ensure that salt and sugar dissolve.
- Let cool just slightly while performing the next step.
- Fill the jar half full with both types of onions.
- Add green garlic shoot, and fill with remaining onions; OR do it by quarters, with the ripe garlic clove.
- Pack the onions down until there is about 1/2" to 3/4" of head space below the rim of the jar.
- Slowly pour the hot syrup over the onions, shaking the jar slightly while pouring to release air bubbles.
- ,until onions are covered by about 1/4".
- Wipe rim of jar, cover with lid, and let stand until cooled to room temperature.
- Transfer jar to refrigerator.
- Allow to set at least overnight before eating.
- Serve within a couple of weeks.

TEXAS-STYLE POTATO SALAD WITH MUSTARD AND PICKLED RED ONIONS

- Bring the vinegar, sugar, mustard seeds and 1 tablespoon salt to a boil in a small saucepan and cook until the sugar and salt dissolves, about 1 minute. Transfer to a small bowl and let cool for 10 minutes. Add the onions and stir to combine. Cover and refrigerate for at least 1 hour and up to 24 hours. Drain the onions through a strainer into a bowl and reserve the pickling liquid.Put the potatoes in a large pot, cover with cold water by 2 inches and add 2 tablespoons salt. Bring to a boil over high heat and cook until a knife inserted into the center of the potatoes meets with no resistance. Drain the potatoes well, let cool slightly (but not all the way) and slice into 1/2-inch thick slices.Transfer the warm potatoes to a large bowl. Add the eggs, pickled onions and red peppers. Whisk together the mayonnaise, mustards, a few tablespoons of the pickling liquid and season with salt and pepper. Add the dressing and parsley to the warm potatoes and gently mix to combine; season with salt and pepper.
