Steps:
- Preheat oven to 350 degrees. Place 4 Tablespoons butter in a 9 x 13 baking dish. Place in the oven and let the butter melt, watching carefully. Remove from oven.
- In a medium-size bowl, stir together 1/4 cup of sugar, fresh sliced peaches, and lemon zest. Set aside.
- In a large bowl, stir together flour, baking powder, remaining 1 1/4 cup of sugar, and salt. In a microwave-safe bowl, melt the remaining 8 Tablespoons of butter. Whisk in melted butter (let cool for several minutes before adding) and buttermilk. Stir until smooth.
- Pour batter into the pan with the melted butter. Sprinkle the peach mixture evenly over batter. Generously sprinkle with sugar. Bake until golden brown and edges are crisp -- about 42-48 minutes.
- Serve with vanilla ice cream or homemade whipped cream.
PEACH COBBLER
I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Steps:
- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.
TEXAS PEACH COBBLER
I love this cookbook - Smoke & Spice. Many of the intros and some of the comments are so funny. Anyway........ Texans usually like their peach cobblers with an abundance of juicy fruit and a biscuit-like batter topping that's crunchy on the surface and doughy inside.

Steps:
- 1. Preheat the oven to 350F.
- 2. In a bowl, mix together all the fruit filling ingredients.
- 3. Set the fruit aside to draw out the juices while preparing the batter. Cobbler filling should be a bit juicier than most pies.
- 4. Melt the butter in a 9 by 13-inch baking dish, either in the oven or on the stove.
- 5. In another bowl, stir together the flour, sugar, and baking powder and add the milk.
- 6. Mix until lightly blended.
- 7. Spoon the mixture evenly over the melted butter.
- 8. Don't stir it, which eliminates the development of crunchy edges.
- 9. Pour the peach filling evenly over the batter.
- 10. Bake for 45 minutes.
- 11. As the cobbler cooks, the batter oozes up and around the fruit, crowning the cobbler with a moist golden brown crust.
- 12. Serve warm.
- 13. If you're a certified hedonist, top it with ice cream or whipped cream.
- 14. Variation: Blackberry Cobbler Make a blackberry cobbler by substituting berries for the peaches and eliminating the ginger. For ourselves, we would also add 1/4 teaspoon nutmeg.

Rotate pan and continue to bake 45 minutes more. Remove from oven and spread turbinado across the top of the cobbler. Bake until cobbler top is light golden brown, an additional 10 to 15 minutes. TEXAS FRESH PEACH COBBLER
This dessert tops juicy fruit with a biscuit-like topping. The batter goes into the dish first, then rises up through the fruit as it bakes. My family loves this and will reheat and eat through out the day.
