Recipe video above. This is a copycat of the Tomato Basil Rice convenience packs sold at supermarkets. It's a seasoned rice flavoured enough that you can eat it plain. Ideal served on the side of many mains! Makes 3 cups of cooked rice.

1 1/2 tbsp olive oil ((or butter))
2 garlic cloves (, finely chopped)
1/2 brown onion (, finely chopped)
1 1/4 tsp dried basil
1 cup (180g) long grain white rice (, uncooked (Note 1))
1 3/4 cups (435 ml) chicken broth (, full salt (or Veg broth))
2 1/2 tbsp tomato paste
3/4 tsp paprika (, sweet or normal (not smoked))
1 tsp sugar ((any))
1 sprig of basil with leaves
1/3 cup finely chopped basil

Steps:

  • Heat oil in a large saucepan over medium heat. Add garlic and onion, cook until translucent, 2 - 3 minutes. Add basil and cook for 20 seconds - don't let it burn.
  • Add remaining ingredients except basil. Mix until tomato paste is dissolved.
  • Crush basil sprig in hand, drop on surface then push in (leave on surface, don't stir).
  • Cover and bring to simmer, then immediately turn down heat to medium low (or low if stove is strong) and cook for 15 minutes or until liquid is fully absorbed - tilt saucepan to check.
  • Remove from heat and set aside, covered, for 10 minutes.
  • Remove basil sprig. Fluff with fork, taste for salt. Then leave to stand for another 5 minutes, uncovered. Stir through fresh basil. Serve immediately.

1 kg de-boned chicken thighs (Chopped into bite-size chunks)
1 onion (finely chopped)
3 garlic cloves (finely chopped)
2½ cups rice
1 cup white wine (alternatively use chicken stock or water)
400 g/14 oz can chopped tomatoes
3 cups chicken stock
1 tbsp tomato paste
handful basil (chopped)
salt (to taste)
pepper (to taste)
lemon juice (to taste)
fresh basil (to serve)
Parmesan cheese (to serve )

Steps:

  • In a large, deep frying/sauté pan, heat a splash of olive oil then brown the chicken on all sides.
  • Remove from the pan and add the onion and garlic and sauté until fragrant.
  • Add the rice and white wine, allowing the wine to reduce while deglazing the bottom of the pan.
  • Add the chopped tomatoes, chicken stock and tomato paste with the basil and season generously. Place the chicken on top of the rice.
  • Cover with a lid and reduce the temperature. Allow to simmer for 15-20 minutes or until the rice has absorbed all the liquid and is cooked to your preference.
  • Adjust the seasoning with salt, pepper and lemon then serve with fresh basil and grated Parmesan.

1 tablespoon olive oil
½ cup onion (diced)
1 cup white rice
2 cups chicken broth
1 ripe tomato (diced with juices, plus extra for garnish)
2 cloves garlic (minced)
salt and pepper (to taste )
3 tablespoons parmesan cheese (grated, divided)
2 tablespoons fresh basil (chopped)

Steps:

  • In a medium saucepan, cook onion in olive oil until it begins to soften, about 4 minutes. Add rice and cook 2-3 minutes or until the rice starts to brown a little bit.
  • Stir in chicken broth, tomatoes (with any juices), and garlic. Add salt & pepper to taste.
  • Bring to a boil, cover and reduce heat to a simmer. Cook 20 minutes without lifting the lid.
  • Remove from heat and rest 5 minutes before removing the lid. Add 2 tablespoons parmesan cheese and basil. Mix well.
  • Place in a bowl, garnish with remaining parmesan cheese, additional basil and fresh tomatoes if desired.
