- In a large saucepan, heat butter over medium heat. Add onion; cook and stir 2-3 minutes or until tender. Add garlic; cook 1 minute longer. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes to allow flavors to blend.

- Melt butter in a large saucepan over medium heat. Add the onion and garlic; cook and stir until tender, about 5 minutes. Stir in the orange juice, cider vinegar, lemon juice, lemon slices, maple syrup, Worcestershire sauce, ketchup, molasses, and brown sugar. Season with dry mustard, salt, red pepper flakes, cumin and paprika. Simmer for 45 minutes to 1 hour. Remove lemon slices before using.

- Melt butter in medium saucepan over medium heat. Add garlic; stir 30 seconds. Stir in ketchup and all remaining ingredients. Bring to boil. - Combine the beef stock, ketchup, onion, bacon drippings, 1/4 teaspoon salt and 1/2 to 1 teaspoon pepper in a medium pot. Bring to a boil, then reduce the heat to medium low and simmer until the onion is tender, about 10 minutes. Remove from the heat and set aside to let the flavors develop, at least 1 hour. Reheat the sauce before serving.

This is a delicious Texas stye barbecue sauce, for chicken, ribs, wings, or brisket. It will please every-body's palate when severing to a crowd. If you know that everyone likes it spicy, then by all means add some Texas Pete (or your favorite hot sauce), chilies, or chili powder. This is versatile, quick, easy, and made with ingredients that you probably already have in your pantry. Easily doubled, tripled......COOKS NOTE: If you substitute the vinegar with distilled white or cider, start with one tablespoon and add more to suit your taste. This makes a wonderful sticky glaze for your grilled ribs and chicken. Baste meat with sauce during the last 5 minutes of grilling time and cook until glazed, turning frequently to prevent burning. You can also wrap cooked meat in foil with some sauce and finish on grill or in the oven. Lip smacking good.

- Heat a dry skillet over medium-high until hot. Add coriander and cumin seeds and cook, swirling pan occasionally, until fragrant and toasted, about 1 minute. Let cool, then grind in a spice grinder or mortar and pestle.
- Heat oil in a large pot over medium heat. Add onions and saute until translucent and tender, stirring occasionally, about 10 minutes. Add garlic, 1 teaspoon salt, 1/2 teaspoon pepper, spices, molasses, and brown sugar; stir to combine. Cook, stirring frequently, 3 minutes. Add tomatoes, reserved juice, and cider vinegar and bring to a simmer. Reduce heat to medium-low and simmer gently, stirring occasionally, until mixture is thick and dark, about 1 hour.
- Let cool slightly then puree sauce in a blender. Add white vinegar and Worcestershire; puree until smooth. Season to taste with additional salt, pepper, and white vinegar. Sauce can be refrigerated up to 3 days in an airtight container; let cool completely before storing, and reheat over medium before serving.

MY FAVORITE TEXAS BBQ SAUCE
This is a sweet and tangy BBQ sauce recipe perfect for brisket or ribs or anything. I have tried quite a few and this is by far the best I've made. Hope you like it. Original recipe found in Celebrating Barbecue by Dotty Griffith. For better flavor you can sub 1/4 cup pan drippings from bbq for the butter.

- Sautee the onions. In a medium saucepan, melt the butter over medium high heat. Add the onions and garlic to the pan and cook, stirring frequently, until the onions are translucent and softened. About 4 minutes.
- Add in remaining ingredients. Whisk the remaining sauce ingredients into the pan, stirring frequently, until the sauce comes just to a boil. Reduce the heat to medium low and simmer the sauce for 20-25 minutes.
- Blend the Texas BBQ sauce. Turn off the heat and allow the sauce to cool to nearly room temperature. You can use the sauce as is, if you like the texture of the onions and garlic. If you prefer a smooth sauce, carefully transfer the sauce to a blender, seal the lid tightly, and blend on high speed until the sauce is a smooth consistency.
- Refrigerate, serve and store. This sauce tastes best when allowed to rest overnight (24 hours for the best flavor) before serving. Serve alongside brisket, mop on ribs, or drizzle on cheeseburgers. Sauce will last 2 weeks in the refrigerator in a tightly sealed jar.
