TURKEY TOSTADAS

8 tostadas
1 teaspoon chile-lime seasoning (or 1/2 teaspoon chili powder plus a pinch of salt)
2 tablespoons extra-virgin olive oil
1 carrot, grated on the large holes of a box grater
2 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
1 pound ground turkey
2 tablespoons tomato paste
2 teaspoons chili powder
1 teaspoon ground cumin
2/3 cup sour cream
Shredded lettuce, diced tomato, chopped avocado and shredded cheddar cheese, for topping

Steps:

  • Preheat the oven to 350˚ F. Lay the tostadas on a rimmed baking sheet and bake until toasted, about 5 minutes. Sprinkle with the chile-lime seasoning while still warm; set aside.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the carrot, garlic and a pinch each of salt and pepper. Cook, stirring occasionally, until the carrot is lightly browned, about 3 minutes.
  • Add the turkey and cook, breaking it up into small pieces with a wooden spoon, until no longer pink, about 5 minutes. Clear a space in the middle of the skillet and add the tomato paste, chili powder and cumin. Cook the paste mixture, stirring, until a shade darker, about 30 seconds, then stir the mixture into the turkey. Cook until well coated, about 1 more minute. Add 1/4 cup water and cook until saucy, about 1 minute. Remove from the heat and season with salt and pepper.
  • Spread the sour cream on the tostadas, then add the turkey. Top with lettuce, tomato, avocado and cheese.

4 (8 inch) flour tortillas
1 lb ground chicken or 1 lb turkey
1 teaspoon chili powder
1 (8 ounce) jar medium salsa or 1 (8 ounce) jar hot salsa
1 (15 ounce) can black beans or 1 (15 ounce) can pinto beans
2 tablespoons diced pimentos
1 cup shredded lettuce
1/4 cup thinly sliced radish (optional)
1/2-1 cup shredded cheddar cheese
1 (2 1/4 ounce) can sliced pitted ripe olives
sour cream (optional)
additional salsa (optional) or chopped tomato (optional)
2 tablespoons thinly sliced onions
fresh cilantro (optional)

Steps:

  • For tostada shells, place tortillas in a single layer on the middle oven rack. Bake in a 350* oven for 6 minutes, turning halfway through baking time or till golden and crisp. (If they bubble, prick with fork.).
  • Set aside and cover to keep warm.
  • Meanwhile, in a medium skillet,cook and stir chicken or turkey and chili powder over medium heat till chicken is tender and no longer pink.
  • Stir in salsa.
  • Set aside; keep warm.
  • Drain beans, reserving liquid.
  • In a small saucepan, stir beans over low heat until heated through.
  • With a potato masher or fork, mash beans with reserved liquid till of spreadable consistency; heat through.
  • To assemble, place warm tortilla on plate, spread with thin layer of beans, chicken, and so forth.

3/4 cup sliced fresh mushrooms
1 medium green pepper, chopped
1 small onion, chopped

1 can (16 ounces) kidney beans, rinsed and drained
1 cup salsa
1 can (4 ounces) chopped green chilies
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
4 drops hot pepper sauce
1-1/2 cups (6 ounces) reduced-fat Mexican cheese blend
1/2 cup frozen corn, thawed
16 tostada shells
2 cups shredded lettuce
1 cup chopped tomatoes
1/4 cup minced fresh cilantro

Steps:

  • In a large skillet, cook turkey, mushrooms, pepper and onion over medium heat 6-8 minutes or until turkey is no longer pink and vegetables are tender, breaking turkey into crumbles; drain. Stir in garlic; cook 1 minute longer., Stir in beans, salsa, green chilies, chili powder, cumin, salt and pepper sauce. Cook, uncovered, 4-5 minutes or until heated through. Add cheese and corn; heat through. Spread about 1/3 cup filling over each tostada shell. Sprinkle with lettuce, tomatoes and cilantro. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve on tostada shells with toppings.

1 medium onion, thinly sliced
3 cups shredded cooked turkey or chicken (12 ounces; see Tip)
8 corn tortillas
Canola or olive oil cooking spray
1 avocado, pitted
1/4 cup prepared salsa
2 tablespoons reduced-fat sour cream
2 tablespoons chopped fresh cilantro
1 cup shredded romaine lettuce
1/2 cup shredded Monterey Jack cheese
1 14-ounce can petite diced tomatoes, preferably with jalapenos

Steps:

  • Shredded leftover turkey tops homemade tostadas in this Tex-Mex favorite. Making your own tostada shells from fresh corn tortillas is easier than you might think-crisp them up in the oven while you prepare the toppings. Choose either regular petite diced tomatoes or those with added jalapenos, depending on your inclination for spicy food. Serve with black beans, rice and extra salsa or hot sauce on the side.;
  • Position racks in the upper and lower thirds of the oven; preheat to 375degreesF. Bring tomatoes and their juice to a boil in a medium saucepan over medium heat. A friend brought this to a potluck and it's been a family favorite ever since. It is easy to make and healthy. You can use mild sausage if you prefer.

1 cup brown rice
2 cups water
1/4 teaspoon salt
1/2 lb Italian turkey sausage
1/3 cup reduced-sodium fat-free chicken broth
1 green bell pepper
14 1/2 ounces stewed tomatoes
4 1/2 ounces mild green chilies
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 cup frozen corn kernels

Steps:

  • cut the sausage into 1- inch pieces.
  • cut the bell pepper into 1-inch squares.
  • Put the rice and water in a rice cooker and start.
  • while the rice is cooking spray a large non stick skillet with non stick cooking spray. Add the turkey sausage and cook over medium heat just until lightly browned, about 3 minutes. Add the broth and bell pepper and simmer until the pepper is tender, about 4 minutes.
  • Stir the tomatoes, chilies, cumin, oregano and salt into the skillet. Bring to a boil, reduce to a simmer, and cook until the sausage is cooked through and the sauce is slightly thickened, about 5 minutes. Stir in the corn and cook just until warmed through. Divide the rice among 4 plates, spoon the stew alongside and serve.

1 cup chopped green pepper

1 tablespoon chili powder

1/2 cup frozen corn, thawed
16 corn tostadas (5 inches)
2 cups shredded lettuce

Steps:

  • Cook turkey over medium heat in a large nonstick skillet until no longer pink; drain.
  • Add onion, green pepper, and garlic; cook and stir for about 3 minutes or until onion is slightly tender.
  • Add mushrooms and cook 1 minute longer.

3/4 cup shredded reduced-fat monterey jack cheese (or nonfat cheese) or 3/4 cup Mexican blend cheese (or nonfat cheese)
6 light hamburger buns or 6 multi-grain hamburger buns
1/4 cup salsa (or mix half and half) or 1/4 cup ketchup, plus (or mix half and half)

Steps:

  • Place the mushrooms, zucchini, onion, and red bell pepper in the bowl of a food processor and process until the vegetables are finely chopped.
