TEX-MEX TURKEY BURGERS WITH CHIPOTLE MAYO
Ground turkey has it rough in the reputation department. It's notoriously dry and flavorless, especially in burger form, and it's usually only preferred to beef when healthiness is a factor. But not for long! We can finally take back the bad rap of crumbly turkey burgers everywhere with these moist and juicy Tex-Mex-inspired patties, all thanks to a humble can of creamed corn. On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

Steps:
- Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
- Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
- Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
- Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.
TEX-MEX TURKEY BURGERS WITH AVOCADO MAYONNAISE

- Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
- Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
- Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
- Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

- Before starting, preheat the oven to 425˚F. Wash and dry all produce. Halve cucumber lengthwise, then cut into 1/4-inch half-moons.Cut tomato into 1/4-inch rounds. Whisk together chipotle sauce and half the ranch dressing in a large bowl.
- Add turkey, panko, Southwest Spice Blend and 1/4 tsp (½ tsp) salt to a medium bowl. Season with pepper, then combine. Form mixture into two 4-inch-wide patties (4 patties for 4 ppl).
- Heat a large non-stick pan over medium heat.When hot, add 1/2 tbsp (1 tbsp) oil, then patties.Pan-fry until patties are cooked through, 5-6 min per side.** (NOTE: After patties are flipped, use a spatula to carefully re-shape them by pressing against the edges.)Transfer patties to a plate, then cover to keep warm.
- Meanwhile, halve buns.Arrange on an unlined baking sheet, cut-side up. Sprinkle cheese over top buns.Toast in the bottom of the oven, until cheese melts and buns are golden-brown, 4-5 min. (TIP: Keep your eye on buns so they don't burn!)
- Meanwhile, add carrots, cucumbers and spring mix to the bowl with dressing. Season with salt and pepper, then toss to combine.
- Spread guacamole, then remaining ranch dressing on bottom buns, then stack with patties and tomatoes. Close with top buns.Divide burgers and salad between plates.

- Prepare the guacamole by stirring together mashed avocado and lime juice, and adding salt to taste. Set aside.
- Stir together the spices for the Tex-Mex Seasoning. Divide in half.
- Stir together mayo (or sour cream) and half of Tex-Mex Seasoning. Set aside.
- In a large bowl combine ground turkey and remaining half of the Tex-Mex Seasoning. Mix well by hand, then form into 4 equal-sized patties.
- Grill burger patties for about 6 minutes on each side over medium heat til browned and cooked through.
- Top each patty with a slice of cheese, cover the grill and allow the cheese to get melty (about 1-2 minutes).
- Assemble turkey burgers by slathering mayo sauce on the bottom bun, then top with the turkey burger patty, followed by a big dollop of guacamole, some shredded lettuce, and the top of the bun. Serve and enjoy!

- Place the mushrooms, zucchini, onion, and red bell pepper in the bowl of a food processor and process until the vegetables are finely chopped.
- Place the vegetables, ground meat, and taco seasoning mix in a medium-sized bowl and mix thoroughly.
- Shape the mixture into six 4-inch patties.
- Grill the burgers over medium coals or cook under a broiler for about 6 minutes on each side, until the internal temperature of the patties reaches 165 degrees (160 degrees for ground beef) and the meat is no longer pink inside.
- (To retain moisture, avoid pressing down on the patties as they cook.).
- Alternatively, coat a large nonstick skillet or griddle with cooking spray and cook the burgers over medium heat for about 5 minutes per side.

My family loves spicy food and these have a bit of a kick. You can tone it down a bit by leaving out the jalapeno and exchanging some other cheese for the Pepper Jack.

- Sandwich Spread:.
- In a medium mixing bowl, mix together until well blended the mayonnaise, sour cream, sugar, cilantro, red onion, garlic and jalapeno. Add salt and pepper to taste. Chill for at least 4 hours or as long as overnight to let flavors blend.
- Building Sandwiches:.
- Very lightly toast the 8 slices of bread. Spread the sandwich spread mixture on one side of each toasted slice. On 4 slices of prepared bread layer the turkey, ham, jack cheese, Colby cheese, tomato slices, avocado slices and black olives. Top with remaining 4 slices of prepared bread.
- Using a sharp serrated bread knife, cut each sandwich on diagonal from corner to corner. Make 2nd cut on opposite corner, making 4 sandwich segments. Secure segments with toothpicks and serve.

- Heat olive oil in a large saucepan over medium heat. Add minced onions and cook until onions begin to soften, about 4 minutes. Add garlic, chili powder, cumin and oregano and cook, stirring, for 1 minute.
