Tex-Mex Turkey Burgers with Chipotle Mayo image

Ground turkey has it rough in the reputation department. It's notoriously dry and flavorless, especially in burger form, and it's usually only preferred to beef when healthiness is a factor. But not for long! We can finally take back the bad rap of crumbly turkey burgers everywhere with these moist and juicy Tex-Mex-inspired patties, all thanks to a humble can of creamed corn. On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

1/2 cup mayonnaise
2 teaspoons sauce from canned chipotles in adobo sauce
2 teaspoons fresh lime juice
1/2 teaspoon kosher salt
1 pound lean ground turkey
1/4 cup canned creamed corn (see Cook's Note)
1/4 cup breadcrumbs
1 large egg
1/4 cup minced onion
2 tablespoons chopped fresh cilantro
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray
4 slices Monterey Jack cheese
4 brioche hamburger buns
Lettuce, tomato, and avocado, for topping

Steps:

  • Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
  • Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
  • Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
  • Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.

1 1/4 pounds lean ground turkey
2 cloves garlic, grated
2 teaspoons hot smoked paprika
Kosher salt and freshly ground pepper
1 avocado, halved
3 tablespoons mayonnaise
Juice of 1 lime
1 tablespoon vegetable oil
4 slices pepper jack cheese (about 3 ounces)
4 sesame potato buns
Shredded lettuce and tortilla chips, for topping

Steps:

  • Combine the turkey, garlic, paprika, 3/4 teaspoon salt and a few grinds of pepper in a medium bowl; mix with your hands until just combined. Form into four 1/2-inch-thick patties; set aside.
  • Combine 1/2 avocado, the mayonnaise, lime juice and 1/4 teaspoon salt in a medium bowl; mash until smooth. Thinly slice the remaining 1/2 avocado and season with salt and pepper. Set aside for topping.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat (or preheat a grill to medium high and oil the grates). Add the burgers and cook until browned, 3 to 4 minutes per side. Top each burger with a slice of cheese; cover and cook until the cheese melts, about 30 seconds.
  • Meanwhile, split and toast the buns; spread the avocado mayonnaise on the cut sides. Serve the burgers on the buns with lettuce, the sliced avocado and tortilla chips.

There will be no boring salad tonight either! We've dressed carrots, cucumbers and spring mix with a zippy chipotle-ranch dressing. Your taste-buds won't know what hit them!

2 piece Brioche Bun
2 tbsp Ranch Dressing
56 g Spring Mix
56 g Carrot, julienned
¼ cup Panko Breadcrumbs
¼ cup Cheddar Cheese, shredded
66 g Mini Cucumber
1 tbsp Southwest Spice Blend
½ tbsp Oil*
0.31 tsp Salt*
2 tbsp Chipotle Sauce
3 tbsp Guacamole
0.13 tsp Pepper*
80 g Roma Tomato

Steps:

  • Before starting, preheat the oven to 425˚F. Wash and dry all produce. Halve cucumber lengthwise, then cut into 1/4-inch half-moons.Cut tomato into 1/4-inch rounds. Whisk together chipotle sauce and half the ranch dressing in a large bowl.
  • Add turkey, panko, Southwest Spice Blend and 1/4 tsp (½ tsp) salt to a medium bowl. Season with pepper, then combine. Form mixture into two 4-inch-wide patties (4 patties for 4 ppl).
  • Heat a large non-stick pan over medium heat.When hot, add 1/2 tbsp (1 tbsp) oil, then patties.Pan-fry until patties are cooked through, 5-6 min per side.** (NOTE: After patties are flipped, use a spatula to carefully re-shape them by pressing against the edges.)Transfer patties to a plate, then cover to keep warm.
  • Meanwhile, halve buns.Arrange on an unlined baking sheet, cut-side up. Sprinkle cheese over top buns.Toast in the bottom of the oven, until cheese melts and buns are golden-brown, 4-5 min. (TIP: Keep your eye on buns so they don't burn!)
  • Meanwhile, add carrots, cucumbers and spring mix to the bowl with dressing. Season with salt and pepper, then toss to combine.
  • Spread guacamole, then remaining ranch dressing on bottom buns, then stack with patties and tomatoes. Close with top buns.Divide burgers and salad between plates.

1 pound lean ground turkey
2 avocados (mashed)
juice of ½ lime
4 pepperjack cheese slices
½ cup light mayo (or sour cream)
1 cup shredded lettuce
4 hamburger buns
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon chili powder

Steps:

  • Prepare the guacamole by stirring together mashed avocado and lime juice, and adding salt to taste. Set aside.
  • Stir together the spices for the Tex-Mex Seasoning. Divide in half.
  • Stir together mayo (or sour cream) and half of Tex-Mex Seasoning. Set aside.
  • In a large bowl combine ground turkey and remaining half of the Tex-Mex Seasoning. Mix well by hand, then form into 4 equal-sized patties.
  • Grill burger patties for about 6 minutes on each side over medium heat til browned and cooked through.
  • Top each patty with a slice of cheese, cover the grill and allow the cheese to get melty (about 1-2 minutes).
  • Assemble turkey burgers by slathering mayo sauce on the bottom bun, then top with the turkey burger patty, followed by a big dollop of guacamole, some shredded lettuce, and the top of the bun. Serve and enjoy!

3/4 cup shredded reduced-fat monterey jack cheese (or nonfat cheese) or 3/4 cup Mexican blend cheese (or nonfat cheese)
6 light hamburger buns or 6 multi-grain hamburger buns
1/4 cup salsa (or mix half and half) or 1/4 cup ketchup, plus (or mix half and half)

Steps:

Steps:

  • Sandwich Spread:.
