HEALTHY GRANOLA

Healthy Granola image

This delicious healthy granola recipe is naturally sweetened with maple syrup (or honey). It's made with oats, coconut oil and your favorite nuts and fruit. Make it your own! Recipe yields about 8 cups granola, enough for about 16 half-cup servings.

Provided by Cookie and Kate

Categories     Breakfast

Time 26m

Number Of Ingredients 9

4 cups old-fashioned rolled oats (use certified gluten-free oats for gluten-free granola)
1 1/2 cup raw nuts and/or seeds (I used 1 cup pecans and 1/2 cup pepitas)
1 teaspoon fine-grain sea salt (if you're using standard table salt, scale back to 3/4 teaspoon)
1/2 teaspoon ground cinnamon
1/2 cup melted coconut oil or olive oil
1/2 cup maple syrup or honey
1 teaspoon vanilla extract
2/3 cup dried fruit, chopped if large (I used dried cranberries)
Totally optional additional mix-ins: 1/2 cup chocolate chips or coconut flakes*

Steps:

  • Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  • In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  • Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
  • Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
  • Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
  • Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

HEALTHY GRANOLA

Healthy Granola image

We decided to give granola a makeover, and not just by cutting calories and sweeteners. Yes, we trimmed the sugar-but we also added healthy fats, like olive oil, and increased the fiber by including with almonds, sesame seeds and puffed millet. One 1/2-cup serving delivers 4 grams of fiber and only 8 grams of sugar! Add some milk (for calcium and protein) and your favorite dried or fresh fruit and you've got a complete breakfast or snack.

Provided by Food Network Kitchen

Time 55m

Yield 7 cups (fourteen 1/2-cup servings)

Number Of Ingredients 11

3 1/2 cups rolled oats
1 1/2 cups puffed millet
1 cup sliced skin-on almonds
1/3 cup unsweetened coconut flakes
1/3 cup roasted unsalted pumpkin seeds
2 tablespoons sesame seeds
1/3 cup extra-virgin olive oil
1/4 cup light brown sugar
1/4 cup pure maple syrup
2 teaspoons pure vanilla extract
Kosher salt

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
  • Toss together the oats, millet, almonds, coconut flakes, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl.
  • Whisk together the olive oil, brown sugar, maple syrup, vanilla and 3/4 teaspoon salt together in a small bowl.
  • Pour the olive oil mixture into the oat mixture and toss until evenly coated. Spread out on a rimmed baking sheet and bake until golden and toasted, tossing the mixture around about halfway through, 30 to 40 minutes. Let cool completely on the baking sheet, then store at room temperature in an airtight container for up to 1 week.

NINA'S HEALTHY GRANOLA

Nina's Healthy Granola image

This is a recipe that I got from my wonderful friend. It's one of those granola recipes that you can easily tweak to fit your personal choice of tastes. If you don't like wheat germ, try flax meal. Not a coconut fan? Leave it out. And you can add any type of dried fruit that you like! You can't go wrong with this one. Plus...only 1/3 cup of brown sugar!! Let me know how yours turns out, and what fun takes you have on this recipe! I appreciate your input =)

KID SAFE (NUT FREE) GRANOLA

Kid Safe (Nut Free) Granola image

My kids love granola sprinkled over their yogurt, but they are still young enough that nuts are a choking hazard for them. This recipe is a modification of my more "adult" one (variation at bottom) to make it safe for them to eat. The taste reminds me a bit of a Nature Valley brand maple/brown sugar granola bar. Number of servings is a guess as it depends on whether you use the granola for yogurt or as a cereal with milk poured over or just as a snack. A great OAMC recipe too!

Time 25m

Yield 1 batch, 12 serving(s)

Number Of Ingredients 9

5 cups old fashioned oats
1 1/2 cups crisp rice cereal
1/2 cup wheat germ or 1/2 cup ground flax seeds
1/2 cup brown sugar
1/4 cup maple syrup
1/4 cup honey
2 tablespoons vegetable oil
1/2 teaspoon salt
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Combine oats, cereal, and wheat germ or flaxseed in large bowl.
  • Heat brown sugar, maple syrup, honey, oil, and salt in saucepan just until sauce melts together.
  • Remove from heat, add vanilla, stir, and add to oat mixture.
  • Thoroughly fold sauce into the cereal. This takes a bit of patience and the cereal mixture will appear a bit dry.
  • Spread onto greased jelly roll pan.
  • Bake approximately 20 minutes, taking out to stir (so the edges don't burn) every 6 or 7 minutes, until it is toasted to your liking. I like it nice and crunchy so I let mine go about 24 minutes or so normally.
  • Cool, stirring every 5 minutes or so to ensure that it doesn't clump together too much - it will not harden in "clusters," rather it ends up a little looser like cereal, which is great for sprinkling over yogurt.
  • Store in airtight container.
  • *VARIATION for adults: Replace crisp rice cereal with 2 cups nuts of choice - almonds, walnuts, pecans, sunflower seeds, pumpkin seeds, etc. or combination. Follow remainder of recipe as directed.
