CROCKPOT MEATLOAF
Just set it and forget it! You can "bake" a classic comfort food dinner in your slow cooker with this easy crockpot meatloaf recipe.

Steps:
- Spray slow cooker with nonstick cooking spray.
- Gently combine all ingredients (except ketchup) in a large bowl. Just be careful not to over-mix, or the meat will be tough. I like to use my hands for this!
- Shape beef mixture into a loaf and place in the prepared slow cooker.
- Spread a thin layer of ketchup over the top of the meatloaf.
- Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, or until a meat thermometer inserted in the center of the meatloaf reads 160°F.
- Remove meatloaf from slow cooker. Place on a cutting board, slice and serve.

- Line the crock pot with a large piece of heavy-duty foil, spray with cooking spray, and set aside.
- In a large bowl add the grated onion, milk, eggs, brown sugar, ketchup, bbq sauce, Worcestershire sauce, garlic powder, salt, and pepper.
- Whisk this mixture until fully combined.
- Add in the breadcrumbs. Stir in the breadcrumbs until mixed well.
- Next, add the ground beef.
- Using your hands, mix everything together until well combined but do not overmix.
- Add the mixture to the aluminum foil in the slow cooker, and form it into a long oval shape, set aside.
- In a small bowl add the ketchup, bbq sauce, and brown sugar. Whisk this mixture together to make the glaze.
- Brush half of the glaze on top of the meatloaf. Cook on low for 6 hours or until the internal temperature reaches at least 165°F.
- Take the meatloaf out of the crockpot using the foil to help lift it out. Place on a sheet tray and brush the remaining glaze on top.
- Broil until the glaze is bubbly and starts to brown slightly. Serve with optional parsley garnish.

Steps:
- Tear off a large strip of aluminum foil (heavy duty works well), and press it into the bottom and up two of the sides of a 6 quart or larger slow cooker. Spray lightly with non-stick cooking spray, then set aside.
- Combine all ketchup glaze ingredients in a small mixing bowl and whisk to combine. Set aside.
- Add ground beef, all but 2 Tbsp of the minced onion, stuffing mix, milk, eggs, 2 Tbsp glaze, salt and pepper. Use your hands to mix until just combined.
- Shape into an oval-like shape and place into the foil lined crockpot. Top with ½ cup of the glaze, cover, and cook on LOW for 6 hours.
- When finished cooking, carefully lift out the meatloaf, using the foil overhang, and place on a baking sheet. Top with 2/3 cup of the glaze and broil until glaze is sticky and bubbly.
- Serve sliced, with remaining glaze sauce served on the side for drizzling.

SPICY TEX MEX MEATLOAF

- Preheat oven to 350°F In heavy skillet, saute onion, garlic, and jalapeno in olive oil until tender, about 5 minutes add bread crumbs.
- In large bowl, combine eggs, salsa, chili powder, refried beans, black olives, salt, cayenne pepper, cilantro and sauteed vegetables. Mix well until thoroughly combined. Add ground beef, pork and cubed cheese and mix gently but thoroughly with hands.
- Shape meat into a loaf and place on a pan. Bake at 350 degrees for 55-60 minutes, until internal temperatures registers 160°F Sprinkle meatloaf with shredded cheese and bake 5 minutes more until cheese melts. Place onto serving platter, cover with foil, and let stand 15 minutes before slicing.
- Serve with additional salsa, sour cream, cheese and jalapenos!

- Mix sauce ingredients in a 3-quart or larger crock pot; add pork, then spoon sauce over pork to cover.

CROCK POT MEXICAN MEATLOAF
Being without a kitchen while we remodel I'm having to get creative about finding/inventing new tastes from my crock pot. This is the most successful invention so far. The kids loved it hot and then ate the leftovers for lunches so fast I hardly got any. LOL I used a 6qt, oval crock pot and 4lbs of meat to feed my large family. If you want to halve the recipe you're on your own about how to cook it because I'm sure it would burn or dry out in a 6qt oval.

- Mix everything except the salsa and the cheese together, blending very well.
- Put into a 6qt, oval crock pot. Form an oval donut shape that does not touch the outer walls and has a hollow in the middle the size of a small woman's fist all the way to the bottom.
- Pour the salsa over the meat. Cook on high for 3 hours then turn down to low to finish for another 4-5 hours. Open the pot, top the meat with the shredded cheese, cover, and cook on low another half hour.
- Serve either nacho style over corn chips or wrapped in flour tortillas. I recommend a salad and the usual taco fixings on the side.

- To remove loaf when done, line crock with wide strip of aluminum foil, coming up sides of crock.

- Preheat oven to 375.
- In a small bowl mix ketchup, cumin, and chilli powder.
- Set aside.
- Next, mix beef, salt, oats, salsa, and eggs.
- Place mixture in a large glass baking dish.
- Form into a loaf.
- Spread ketchup mixture on top of meatloaf.
- Bake on middle rack for 45 minutes.
- Remove from oven and place pepper rings on top.
- Return to oven and cook for 15 minutes more.
- Let rest for 5 minutes.
