The Best Sweet Potato Potato Salad image

1/4 cup chopped cornichons or relish
2 tablespoons whole-grain mustard
1 tablespoon honey
2 ribs celery, diced
Zest and juice from 1 lemon
1/2 small red onion, minced
Kosher salt and freshly ground black pepper
2 pounds sweet potatoes, peeled and cut into 1-inch cubes
1/4 cup white vinegar
1/2 cup mayonnaise
2 tablespoons minced fresh chives, plus more for garnish
2 tablespoons minced fresh parsley, plus more for garnish

Steps:

  • In a bowl, mix together the cornichons or relish, mustard, honey, celery, lemon zest and juice and red onion. Season with salt and pepper and let sit while the potatoes cook.
  • Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat. Reduce the heat to a simmer and cook until the potatoes are tender, about 10 minutes.
  • Drain the potatoes in a colander, put back in the saucepan, add the vinegar and, using a rubber spatula, toss gently to combine.
  • Add the mayonnaise, chives and parsley to the celery-onion mixture and stir to combine. Add the warm potatoes to the dressing and toss. Season to taste. Garnish with extra chives and parsley.

2 potatoes
1 sweet potato
4 eggs
2 stalks celery, chopped
½ onion, chopped
¾ cup mayonnaise
1 tablespoon prepared mustard
1 teaspoon salt
1 ½ teaspoons ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool, peel and chop.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; cool, peel and chop.
  • Combine the potatoes, eggs, celery and onion.
  • Whisk together the mayonnaise, mustard, salt and pepper. Add to potato mixture, toss well to coat. Refrigerate and serve chilled.

2 large japanese sweet potatoes
1 large cucumber
5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
2/3 cup coconut vinegar (decrease amount if using white vinegar) or 2/3 cup other vinegar (decrease amount if using white vinegar)
1/4 cup chopped fresh dill (or more)
salt and black pepper

Steps:

  • Cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
  • White they cool a bit, dice the cucumber and combine with the rest of the ingredients.
  • Add in cooled sweet potatoes and stir well.
  • Taste for salt and pepper and chill or serve room temperature.

2 lbs sweet potatoes, peeled and cut into 1-inch cubes
vegetable oil cooking spray
3/4 teaspoon salt, divided
2 celery ribs, diced
1 jalapeno pepper, seeded and finely chopped
1/2 cup diced onion
1/3 cup diced green bell pepper
3 tablespoons brown sugar
2 tablespoons chopped fresh parsley or 1 tablespoon dried parsley flakes
5 tablespoons white vinegar
1 tablespoon vegetable oil
1 teaspoon hot sauce
1 teaspoon prepared mustard
3 slices pepper bacon (optional) or 3 slices regular bacon, cooked and crumbled (optional)
fresh flat-leaf parsley sprig

Steps:

  • Arrange potatoes in an even layer in a 15x10-inch jelly-roll pan.
  • Coat with cooking spray, and sprinkle with 1/2 teaspoon salt.
  • Bake at 400°F for 25 minutes or just until tender. Let cool slightly.
  • Stir together remaining 1/4 teaspoon salt, celery, and next 9 ingredients in a large bowl until blended.
  • Add potatoes, and toss gently to coat.
  • Sprinkle with crumbled bacon, if desired; garnish, if desired.
  • Serve warm or chilled.

1/2 cup raisins
2/3 cup finely diced red onion
1/3 cup finely diced celery
2 teaspoons freshly grated ginger
1/2 cup mayonnaise
1 tablespoon finely chopped parsley

Steps:

  • Cook potatoes until they are fork tender in boiling water. Drain the potatoes and cool them completely. Soak the raisins in hot water for 15 minutes and then drain. Combine all the ingredients and mix them thoroughly, but gently. Chill for 24 hours before serving.

1 large potato, diced
1 large sweet potato, diced
1 cup corn
1 teaspoon prepared dijon-style mustard
2 tablespoons fresh lime juice
3 tablespoons chopped fresh coriander
1 garlic clove, minced
3 tablespoons canola oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cucumber, halved lengthwise and chopped
1/2 red onion, thinly sliced
1/4 cup finely chopped peanuts

Steps:

  • Place potato pieces into a large saucepan, and cover with salted water. Bring to a boil, turn the heat down, and simmer for 5 minutes approximately
  • Add the sweet potato, and cook about 8-10 minutes more or until potatoes are tender but still firm enough to hold their shape.
  • Once the potatoes are tender, add corn kernels; cook another 30 seconds. Drain through a colander.
  • Fill the saucepan with cold water, and drop vegetables into water. Cool for 5 minutes, and drain.
  • In a large bowl, whisk together mustard, lime juice, coriander, and garlic. Slowly whisk in oil. Mix in salt and black pepper.
  • Add cooled potatoes, to dressing along with cucumber, and red onion. Toss well. Serve at room temperature or chilled. Toss the peanuts in just before serving.

Tasted at a picnic, and had to have the recipe. It turned out to be "bunch of this, glop of that," so I came up with the following ballpark measurements that seemed right - but adjust as needed! Once I got asked for the recipe too, I posted it here.

4 sweet potatoes (peeled, cubed, and boiled)
1/4 cup scallion (chopped)
1/3 cup fresh cilantro (chopped)
1/2 cup dried cranberries
1/2 cup sunflower seeds
1/2 cup red wine vinegar (approximate)
1/2 cup olive oil (approximate)
1 tablespoon spicy mustard

Steps:

  • Combine the first 5 ingredients in a large bowl.
  • Stir together the last 3 for the dressing. You want almost equal amounts of vinegar and oil - but a bit more vinegar.
  • Pour dressing over salad and refrigerate until ready to serve.
