1 tablespoon butter
1 red cabbage, sliced 1/4 inches thick
Salt and freshly ground black pepper
1/2 red onion, sliced
2 sweet apples, quartered and sliced thin
6 allspice berries, lightly crushed, wrapped in cheesecloth and tied
1/3 cup red wine
1/3 cup red wine vinegar
1/4 cup molasses or cane syrup (the cane syrup is lighter in color)

Steps:

  • Melt butter in a deep saute pan with a cover. Once the butter's melted, and the foam's subsided, add the cabbage and stir to coat.
  • Add salt and pepper, to taste, red onion, apple, and allspice packet, cover the pan and lower the flame to low-medium, turning once in a while, until the cabbage is soft, but still slightly firm, about 15 minutes.
  • Remove lid and deglaze with the red wine, bring up flame and cook, uncovered, until the wine is reduced by at least half. Add the red wine vinegar reduce a little, add the molasses or cane syrup and toss to coat. Cook 2 to 3 more minutes, remove allspice packet, season with salt and pepper, to taste.

1/4 baguette, split
4 tablespoons unsalted butter
Pinch of paprika
Kosher salt
One 1- to 1 1/2-pound head red cabbage, quartered, cored and thinly sliced (8 cups)
1 sprig fresh rosemary, finely chopped
2 tablespoons hard cider, plus more if necessary
2 to 4 tablespoons best quality apple cider vinegar

Steps:

  • Pull out the soft center of the baguette and pull into small pieces. Reserve the crust for another use. In a saute pan, melt 2 tablespoons of the butter over medium heat. When the butter is very hot, add the breadcrumbs and cook, stirring constantly, until dark golden brown and crunchy, 7 to 10 minutes. Stir in the paprika and salt to taste. Transfer the breadcrumbs to a paper towel-lined plate. Set aside.
  • In a heavy-bottomed 12-inch skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the cabbage, rosemary and 1/4 teaspoon salt. Cook, stirring occasionally, until the cabbage starts to wilt, about 5 minutes. Add the hard cider, stir, cover and cook until the liquid evaporates, 12 to 15 minutes. Remove the lid and add 2 tablespoons apple cider vinegar. Stir constantly until the cabbage is completely tender, about 3 minutes. Season to taste, adding more apple cider vinegar if desired, and top with the sauteed breadcrumbs. Serve immediately.

1/2 cup dry red wine
3/4 cup water
2 tablespoons dark-brown sugar

1 Golden Delicious apple, peeled, cored, and cut into 1/2-inch pieces

Steps:

  • Cook bacon in a large pot over medium heat, stirring occasionally, until fat renders and bacon is crisp, about 8 minutes. Add onion, and cook, stirring occasionally, until translucent, about 3 minutes. Add cabbage, vinegar, wine, water, sugar, and 1 1/2 teaspoons salt; stir to combine. Raise heat to medium-high, cover, and cook 5 minutes.
  • Reduce heat to medium-low, and continue to cook, covered, stirring occasionally, 30 minutes. Stir apple into cabbage, and cook, covered, until cabbage and apples are tender, 25 to 35 minutes. Season with pepper.

  • Quarter the red cabbage and remove the core, then finely shred. Tip into a large pan with the red onion, brown sugar, cider vinegar, red wine, butter and cinnamon stick and season well.   • Melt butter in a large skillet over medium heat; cook cabbage in the hot butter until it begins to soften, 1 to 2 minutes. Season with salt. Pour in water, red wine, and red wine vinegar. Stir to combine. Mix in sugar and caraway seeds.

In addition to adapting the recipe for the crockpot, I added an apple and a bay leaf, used lemon juice instead of vinegar, and added 1 1/2 cups chicken stock.

1 apple, peeled, cored, and chopped
2 tablespoons butter
1 onion, sliced

  • Shred the cabbage and slice the onion.

1 medium red cabbage, halved and cored
2 tablespoons butter
1 onion, sliced
1 tablespoon granulated sugar
1 tablespoon vinegar
1/2 cup red wine
salt, to taste

Steps:

  • Preheat oven to 350F degrees (175C degrees).
  • Shred cabbage.
  • Heat butter in a 2-quart oven-proof casserole with lid. Stir in onion. Saute until soft but not browned.
  • Add sugar. Cook, stirring constantly, until sugar caramelizes.
  • Add shredded cabbage and vinegar; stir thoroughly. Add red wine, salt, and pepper.
  • Cover and bake 45 to 55 minutes until cabbage is very tender, stirring once or twice.
  • Remove lid toward end of cooking time if cabbage is very moist.
  • Taste for seasoning, adding a little more sugar or vinegar if necessary.
  • Serve hot.

2 to 3 cups low-sodium chicken broth

  • Cook the bacon until crisp, over medium heat in a large Dutch, that has a lid, about 4 minutes. Add the onions, cinnamon, bay leaves, and 1 teaspoon of the salt. Cover, and cook, stirring occasionally, until the onion is tender, about 8 minutes.
  • Increase the heat to medium-high, add the cabbage and cook, stirring, until wilted, about 8 minutes. Add the apple, broth, vinegar, sugar, the remaining salt, and pepper, and cook, covered, stirring occasionally, until the cabbage is tender, about 1 hour.
  • Uncover; bring to a boil, and cook, stirring, until the liquid has reduced to a sauce-like consistency, about 5 minutes. Transfer to a serving dish and serve.

1/2 cup julienned red onion (about 1/2 onion)
3 cloves garlic, thinly sliced
6 cups shredded red cabbage (1/2 small head)
1 cup red wine vinegar
1/2 cup fresh orange juice
1 Granny Smith apple, julienned
Kosher salt and freshly ground pepper

Steps:

  • Cook the bacon in a Dutch oven over medium heat until just crisp. Add the onion and garlic and sweat until translucent, 8 to 10 minutes. Add the cabbage and stir to coat in the rendered bacon fat. Add the vinegar, reduce the heat to low and simmer until the liquid is reduced by three-quarters and the cabbage is tender, about 12 minutes. Add the orange juice and cook until reduced by half, about 5 more minutes.
  • Remove the cabbage from the heat and fold in the apple. Season with salt and pepper. Serve hot.

2 tablespoons unsalted butter (or canola oil)
1/4 cup shallot, finely chopped
1 cup apple, peeled and diced (approximately 1 large apple)
1 (2 1/2 lb) red cabbage, cored, tough outer leaves removed and thinly sliced
2 tablespoons apple cider vinegar
1 cup dry red wine, divided
1 tablespoon honey (or agave for vegans)
salt
4 fresh thyme sprigs
12 juniper berries
pepper
1 teaspoon caraway seed
1 cup hazelnuts, toasted, skins removed and coarsely chopped

Steps:

  • In a large casserole or Dutch oven, melt the butter and cook the shallots and apples over medium-low heat until soft and fragrant, about 5 minutes.
  • Stir in the cabbage, vinegar, three-fourths cup wine, the honey and 1 teaspoons salt. Tie the thyme and juniper berries in a cheesecloth bag and stir in with the rest of the ingredients. Cover the pot and bring to a slow simmer.
  • Simmer the cabbage until tender, about 1 hour, stirring occasionally to make sure that the cabbage doesn't stick to the bottom of the pan. Stir the remaining one-fourth cup wine into the pot halfway through cooking, and add additional water throughout the cooking process if the liquid evaporates and the cabbage becomes dry.
  • When the cabbage is almost done, toast the caraway seeds in a small sauté pan over medium-high heat until fragrant, 2 to 3 minutes. Shake the pan frequently so the seeds do not burn. Remove from heat.
  • When the cabbage is tender, remove the pot from heat and season to taste with salt and pepper. Stir in the toasted caraway seeds, then cool, cover and refrigerate until needed. Reheat, adjust the seasoning if needed and serve sprinkled with toasted hazelnuts.

My friend and I went for a bar lunch one day and this was a side dish. I did try to get the recipe from the chef, but he just would not be coaxed into giving me it. So here is my effort and I think it tastes just like it. You can add more cinnamon if you wish. You can serve this with lots of different dishes it goes well with most things.

My mother always served this dish with roast pork, or sometimes goose, and tiny boiled potatoes. I have served it with our Seared Duck Breasts with Pepper Jelly Glaze (p. 264) for a long time, and I never get tired of it. It's easy to prepare, and yet, to please Alice, my mother, it must be "just so."

Yield makes 4 to 6 servings

Number Of Ingredients 6

2 tablespoons butter
1 small red onion, thinly sliced
1 small head red cabbage, quartered, cored, and sliced as thin as possible
Salt
2 tablespoons brown sugar
2-3 tablespoons red wine vinegar

Steps:

  • Melt the butter in a Dutch oven or heavy-bottomed skillet over medium heat. Add the onion and cabbage and stir to mix. Sprinkle with salt and cook over medium-low heat for about 10 minutes, until the cabbage is starting to wilt. Stir in the brown sugar and vinegar and cover. Cook for about 15 minutes, stirring from time to time to prevent the vegetables from getting too brown.
  • Remove the cover and raise the heat a little to evaporate the liquid in the pot. Cook for about 5 more minutes, stirring often. The cabbage will be very tender and a dark reddish purple when ready. If the color is still light and opaque, you need to keep cooking and stirring, until the cabbage is moist and tender but not wet or mushy. Taste for seasonings (it should be a balance of sweet and sour) and add vinegar or salt as necessary.
