I dreamed up this hearty chili with a Tex-Mex twist 25 years ago. It's still everyone's favorite and the go-to recipe in our family cookbook.-Martha B. Hook, Dallas, Texas

1-1/2 pounds ground beef
1 medium onion, chopped
5 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water
1 cup V8 juice
1/4 cup brewed coffee
2 envelopes chili seasoning
1 can (16 ounces) refried beans
1 can (15 ounces) Ranch Style beans (pinto beans in seasoned tomato sauce)
2 tablespoons ground cumin
2 tablespoons chili powder
1/4 teaspoon lemon juice

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomatoes, water, juice, coffee and chili seasoning., Transfer to a 4-qt. slow cooker. Stir in remaining ingredients. Cover and cook on low for 4-5 hours to allow flavors to blend.

2 lb ground beef
6 - 8 slice bacon cut into 1 1/2
1 large onion chopped
1 red bell pepper chopped
1 orange bell pepper chopped
1 yellow bell pepper chopped
1 green bell pepper chopped
3 green onions sliced including tops
3 large cloves of garlic chopped
2 c frozen yellow corn
1 can(s) (6oz.) tomato paste
1 can(s) (10oz.) rotel tomatoes with green chiles
1 can(s) (28oz.) diced tomatoes
1 can(s) (27oz.) chili beans with sauce (pinto)
1 can(s) (15oz.) cannellini beans (drained)
1 can(s) (15oz.) black beans (drained)
1 16oz. bag of frozen veggie soup mix with tomatoes
2 the veggie mix has: (carrots, potatoes, okra, green beans, lima beans, onions and celery)
48oz. containers of beef broth (but you will only need 1 1/2 of them)
juice of 1 small lemon
SPICES:
1 Tbsp cumin
1 Tbsp chili powder
1 Tbsp paprika
2 Tbsp fresh chopped cilantro
1 tsp garlic powder
1 tsp dried oregano
sea salt and pepper to taste

Steps:

  • 1. Brown Ground Beef in Large Soup Pot Until Pink is Gone, Then Remove From Pot and Set Aside. Next, Cut Bacon Into 1 1/2" Pieces, Put Into Same Soup Pot and Cook Until Done, Then Remove Bacon and Add to Beef on the Side. Leaving Half of the Bacon Fat in the Pot.
  • 2. Add Chopped Onions, Chopped Peppers and Chopped Garlic to Bacon Fat in the Pot and Cook Until Almost Transparent. Then Add 2 Cups of Frozen Corn and Cook for 3-5 Minutes on Medium High.
  • 3. Now Add the Rotel Tomatoes, The Diced Tomatoes, The Bag of Frozen Veggie Soup Mix and All of The Spices - Then Continue Cooking for 10 Miniutes On Med. - Medium High
  • 4. Now Add the Ground Beef, The Bacon, All of the Beans, Tomato Paste and the 1 1/2 Containers of the Beef Broth and The Juice of 1 Small Lemon Stir to Combine All of the Ingredients and Cook for Another 10 Minutes On Medium High Until Done.
  • 5. Serve with A Tablespoon of Sour Cream in the Middle of Your Bowl, Fresh Corn Tortillas Warmed or Your Favorite Doritos

1 tablespoon canola oil
3 garlic cloves, minced
3 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (15 ounces each) tomato sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water
1 can (6 ounces) tomato paste
3/4 cup salsa verde
1 envelope chili seasoning
2 teaspoons dried minced onion
1 teaspoon chili powder
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
Optional: Shredded cheddar cheese, minced fresh cilantro, sour cream, sliced jalapeno or fresno peppers and additional salsa verde

Steps:

  • In a large skillet, brown beef in oil in batches. Add garlic; cook 1 minute longer. Transfer to a 6-qt. slow cooker. , Stir in the beans, tomato sauce, tomatoes, water, tomato paste, salsa verde and seasonings. Cover and cook on low for 6-8 hours or until meat is tender. Garnish each serving with toppings as desired. Freeze option: Before adding toppings, cool chili. Freeze chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary. Garnish with toppings as desired.

2 ancho chilies
3 large tomatoes, thickly sliced
1 small onion, thickly sliced
1 garlic clove, chopped
4 cups chicken stock
1 cup mushroom, finely chopped
1/2 cup lean bacon, chopped
1 tablespoon olive oil
1 tablespoon ricotta cheese
cilantro, to serve

Steps:

  • Preheat the grill to a high heat. Toast the whole chillies, turning often to avoid burning (blackening). Remove the chilli seeds and stems, reserving them in case you want to increase the heat of the soup later. Soak the chillies in 1 cup of the stock for 10 minutes then blend the chilli and stock mixture until smooth in a food processor or blender.
  • Char the onion slices and whole garlic clove all over. Peel the garlic clove after cooling a few minutes. Char the tomato slices then chop roughly.
  • Blend the onion, tomato and peeled garlic clove with 2 cups of the stock until smooth and add to the chilli mixture.
  • Heat the tablespoon of olive oil in a pan then fry the chopped bacon. After a minute or two, add the mushrooms and cook for about 5 minutes. Blend the bacon and mushroom mixture with the ricotta in the remaining cup of stock. Combine with the rest of the soup in a large pan and reheat for about 5 minutes. Serve garnished with the fresh coriander.

1 bag of dried pinto beans
1 can(s) whole tomatoes (in sauce)
1 smoked hamhock
2 Tbsp extra virgin olive oil
4 fresh cloves of garlic (chopped)
1 fresh yellow onion (chopped)
1 1/4 Tbsp granulated garlic (not garlic salt)
2 1/2 Tbsp ground cumin
2 tsp kosher salt
1 Tbsp ground black pepper
1 tsp cayenne pepper
2 tsp chili powder
1 jalepeno pepper (deseeded & chopped)
2 Tbsp white vinegar

Steps:

  • 1. Soak them beans in a big pot of water overnight. Next morning, pour the water off the beans into a colander. In the pot you're gonna cook them beans in, add the olive oil and sauté the onions and garlic. Add the tomatoes, the beans and all the rest of the ingredients. (Is this easy, or what?) Cover in water and cook at medium heat for about an hour or so. The beans should be soft and the juice should have cooked down a bit. If the beans are still a bit hard,and it seems to need more water, say, after 40 minutes or so, add a cup or two and let that cook down some. And, honey, you got yourself some tasty chili beans!
  • 2. NOTE: When I make my Tex-Mex Chili, I start with this bean recipe. Then,in a fry pan, I brown 1 or 2 lbs. of ground round, add a teaspoon of all the spices I used in my beans, pour off any excess grease and set aside a minute. THEN: get a saucepan, pour some of that juice (1 cup or so) from the beans into a separate pot/let it boil up/ add a tablespoon of flour (or a little more if it's not thick)/whisk it til it's like a thick gravy/pour the gravy into the meat mixture/ then add the meat mix all into the beans/stir it up/let cook for another 15 minutes or so...and you got yourself some great Tex-Mex Chili! Stick it in a big bowl/top with guacamole, a spoon of picante sauce,sour cream blob, fresh chopped cilantro, and a couple of corn chips and grated cheddar cheese...and you'll be the kitchen queen, for sure!

1 tablespoon olive oil
1 lb lean ground beef
1 (1 1/4 ounce) envelope taco seasoning
2 teaspoons cumin
6 ounces tomato paste
22 ounces chili beans
15 1/2 ounces diced tomatoes
7 ounces chopped green chilies
1 (12 ounce) can beer (or beef broth or water)
salt and pepper
chopped raw onion
grated cheddar cheese
sour cream

Steps:

  • Saute onions and garlic in oil.
  • Add ground beef and brown. Drain.
  • Add taco seasoning and cumin. Mix well.
  • Add remaining ingredients, salt and pepper to taste.
  • Cook 20-30 minutes.
  • Serve hot with garnishes of your choice.
  • NOTE: For FRITO PIE serve over a bed of fritos and topped with grated cheddar.

I'm neither Texan nor Mexican and I can't claim this to be a real Tex-Mex dish, but it definitely has that taste to it. I had black bean soup in mind when I was experimenting and came up with this. Enjoy!

1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
2 celery ribs, finely chopped
1/4 red bell pepper, chopped
2 cups chicken broth
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red beans, drained and rinsed
1/2 teaspoon cumin
salt, to taste
1 1/2 tablespoons cornstarch, plus 1 1/2 tablespoons cold water
6 teaspoons herdez chipotle salsa (to taste)

Steps:

  • In a soup pot, cook onion, celery, and red bell pepper until softened. Add garlic for last minute so it doesn't burn.
  • Add chicken broth and bring to a simmer. Simmer for 10 minutes.
  • Add cumin and half of the beans and heat through. At this point you may wish to mash or puree the mixture in the pot a bit.
  • Add the rest of the beans and heat through.
  • Dissolve the cornstarch in the water and add to the pot. Heat until slightly thickened.
  • Add Herdez Chipotle Salsa. You may want to start with two teaspoons and add more according to how spicy you like your food. I like 6 teaspoons.
  • Salt to taste.
  • You may want to serve this soup with cheddar cheese and sour cream on top. Enjoy!

1 (14 1/2 ounce) can beef broth
1 1/4 cups water
1 (6 ounce) can tomato paste

3 tablespoons chili powder
1 1/2 teaspoons ground cumin

1 teaspoon dried oregano leaves, crushed

Steps:

  • In 6-quart saucepan, heat oil; saute onion, green pepper and garlic 3-4 minutes, or until tender.
  • Add stew meat and sausage, stirring to crumble sausage; cook 5-6 minutes.
  • Blend in tomato puree, broth, water, tomato paste, green chiles, chili powder, cumin, salt, sugar, oregano and cayenne pepper, if desired. Bring to a boil. Reduce heat; simmer uncovered 1 1/2 hours, stirring occasionally.
  • Mix in beans. Cover and simmer and additional 30 minutes.

2 tsp rapeseed oil
1 large onion, finely chopped
1 red pepper, cut into chunks
2 garlic cloves, chopped
2 tsp mild chilli powder
1 tsp ground coriander
1 tsp ground cumin
400g can chopped tomatoes
400g can black beans
1 tsp vegetable bouillon powder
1 small avocado
handful chopped coriander
1 lime, juiced
½ red chilli, deseeded and finely chopped (optional)

Steps:

  • Heat the oil in a medium pan, add the onion (reserving 1 tbsp to make the guacamole later) and pepper and fry, stirring frequently, for 10 mins. Stir in the garlic and spices, then tip in the tomatoes and beans with their liquid, half a can of water and the bouillon powder. Simmer, covered, for 15 mins.
  • Meanwhile, peel and de-stone the avocado and tip into a bowl, add the remaining onion, coriander and lime juice with a little chilli (if using) and mash well. Ladle the soup into two bowls, top with the guacamole and serve.

  • In a Dutch oven or heavy bottom casserole, heat 3 tablespoons oil over medium-high heat. Add the beef, and begin to brown on all sides. After 2 to 3 minutes, add the ground meat, sprinkle with salt and pepper, and let it brown along with the cubed meat for another 5 to 6 minutes. The juices of the ground meat should have come out and then dry out. Stir as the meat browns.
  • Make room in the center of the pan, add the extra tablespoon of oil and add the onions and peppers, cook for 5 more minutes or until they begin to soften. Make some room in the casserole again, add the garlic, red pepper flakes, cayenne, paprika, chili powder, chipotle sauce, cumin, oregano, stir well.
  • Add the crushed tomatoes, tomato paste, sugar and vinegar, mix well and cook for 3 to 4 minutes stirring a couple times. The tomato paste should have dissolved and the sauce thickened a bit. Pour in the beef stock and once it comes to a strong simmer, reduce heat to medium. Add the beans and stir. Lower the heat to medium-low, it should have a low steady simmer, and cook uncovered for an hour, stir every once in awhile.
  • Serve the chili in bowls and let your guests garnish with sour cream, cilantro, shredded cheddar cheese, tortilla chips and green onions.
