CRISPY CHEESE AND BACON POTATOES



Crispy Cheese and Bacon Potatoes image

Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish for any meal.

Provided by Mary Younkin

Number Of Ingredients 6

1/2 pound bacon
3 extra large russet potatoes (peeled and chopped into 1/2"-3/4" pieces, about 6 cups worth)
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 1/2 cups shredded cheddar or Mexican blend shredded cheeses
3 green onions (sliced thin)

Steps:

  • COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
  • COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
  • Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

1 1/2 pounds small red-skinned potatoes, quartered
Kosher salt and freshly ground black pepper
3 slices bacon, chopped
2 tablespoons olive oil
2 tablespoons chopped fresh chives

Steps:

  • Put the potatoes in a medium saucepan, cover with cold water and add a generous pinch of salt. Bring to a boil, simmer for 1 minute and then drain well and set aside. The potatoes will be cooked about halfway through.
  • Cook the bacon in a large skillet over medium-low heat, stirring occasionally, until crisp, about 5 minutes. Transfer the bacon with a slotted spoon to a paper-towel-lined plate to drain. Add the olive oil to the skillet with the bacon drippings and increase the heat to medium. Add the potatoes cut-side down. Cook, turning occasionally until the potatoes are golden brown and cooked through, about 15 minutes. Remove from the heat and stir in the crispy bacon. Season generously with salt and pepper and sprinkle with the chives.

6 slices OSCAR MAYER Bacon, cut into 1/2-inch pieces
1 small onion, chopped
2 lb. Yukon Gold potatoes (about 6), thinly sliced
1/4 tsp. each ground cumin, chili powder and garlic powder
1 cup KRAFT Shredded Colby & Monterey Jack Cheeses
6 Tbsp. sour cream

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 3 Tbsp. drippings from skillet.
  • Add onions to reserved drippings; cook and stir 5 min. Stir in potatoes; sprinkle with cumin, chili powder and garlic powder. Cover; cook on medium-low heat 20 to 25 min. or until potatoes are tender, stirring occasionally.
  • Top with cheese and bacon; cook, covered, 1 to 2 min. or until cheese is melted.
  • Serve topped with sour cream.

4 large baking potatoes
4 slices bacon
1/3 cup onion, chopped
1/3 cup green pepper, diced
2 cups sliced mushrooms
1 1/2 cups grated cheddar cheese, divided
2 tablespoons milk
2 tablespoons butter or 2 tablespoons margarine
1 egg, slightly beaten
1 teaspoon salt

Steps:

  • Scrub potatoes, pat dry and pierce with a fork.
  • Bake at 425 for 55-65 minutes or until soft.
  • While potatoes are baking, cook bacon in a skillet until browned, cool and crumble.
  • In 2 Tbsp of bacon grease, saute onion and green pepper until still tender crisp, then add mushrooms and saute until mushrooms are cooked, then set aside.
  • When potatoes are cooked, cut a slice from the top of each.
  • Scoop out the flesh, keeping the shell intact.
  • Mash potato, adding 1 cup of the cheese, milk, butter, egg, salt, vegetable mixture and half of the bacon.
  • Spoon mixture into the shells, top with remaining cheese and bacon.
  • Bake at 350 for 20 minutes or until slightly brown on top.

1 (15 1/2 ounce) jar salsa con queso
1/2 cup butter
1 (8 ounce) container sour cream
2 tablespoons of minced onions
1 (2 lb) bag frozen hash browns
2 cups shredded mexican cheese

Steps:

  • Preheat oven to 350 degrees.
  • In bowl combine melted butter, minced onion, sour cream and the Salsa Con Queso.
  • Stir until well blended.
  • Stir in hash brown potatoes until mixture is blended.
  • Place mixture into a glass oven proof 13x9-inch rectangular pan.
  • Bake for 1 hour.
  • Prior to taking out of oven, melt shredded Mexican cheese over the potato dish.

Dot 3 tablespoons of butter across the potatoes. Sprinkle with salt and pepper, as desired. Add about 2/3 of the onion and then 2/3 of the bacon. Sprinkle on half of the herbs.
  • Then add 1-1/2 cups of the 6 Cheese Italian and 1 cup of the Cheddar. Now add the remaining potatoes and dot with the remaining 3 tablespoons of butter. Sprinkle with salt and pepper. Add the remaining onion, bacon, and herbs. Sprinkle the remaining 6 Cheese Italian over the top, finishing with the remaining Cheddar. Poke a few pieces of the bacon up through the cheese, for a pretty effect, if desired.
  • Cover skillet loosely with foil, taking care to not let the foil touch the top of the potatoes (so the cheese doesn't stick to the foil). Set skillet on hot grill grates and check the potatoes after they have been on the grill for 30 minutes, adjusting temperature if needed. The pan should be sizzling, but make sure the temperature isn't too hot that the potatoes are burning.
