Here's a spicy twist on an old-fashioned baked mac & cheese. We added a layer of tomatoes and green chilies and topped it with tortilla chips.

1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 can (10 oz.) diced tomatoes and green chiles, drained
2 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
3/4 cup KRAFT Mexican Style Finely Shredded Four Cheese
1 Tbsp. butter, melted
20 tortilla chips, crushed (about 1/2 cup)

Steps:

  • Heat oven to 375°F.
  • Prepare Dinner as directed on package. Spoon into 8-inch square baking dish sprayed with cooking spray.
  • Mix tomatoes and dressing; spoon over macaroni mixture. Top with shredded cheese. Mix butter and tortilla crumbs; sprinkle over cheese.
  • Bake 20 min. or until heated through and crumbs are golden brown.

16 ounces jumbo pasta shells
1 tablespoon butter
2 (5 ounce) cans evaporated milk
2 eggs
1 tablespoon Worcestershire sauce (or Tobasco sauce)
3/4 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon white pepper
3 cups shredded cheddar cheese or 3 cups Mexican blend cheese, divided (12 oz.)

Steps:

  • Cook the pasta according to package directions in salted water; drain and return shells to the pot.
  • Stir in the butter; cover, and set aside.
  • Position a boiler rack so that the top of your macaroni and cheese (in its baking dish) will be 4-6" from the heat source; preheat the broiler.
  • Meanwhile, whisk together the eggs, evaporated milk, Worcestershire sauce, salt, chili powder, and pepper until combined.
  • Place the pasta over low heat; stir in the milk mixture and 2 cups of the cheese.
  • Cook, stirring, until a creamy sauce forms and the mixture is hot, about 5 minutes.
  • Pour the mixture into an ungreases 6-cup baking dish; sprinkle with remaining cheese.

12 ounces cavatappi pasta
1 (16 ounce) jar alfredo sauce
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 (14 1/2 ounce) can diced tomatoes with green chilies, drained
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat broiler and position the rack so that a 1 1/2 quart baking dish will be 4" from the heat source.
  • Cook pasta in salted water according to pkg. directions; drain.
  • In same pot, heat sauce with cumin, chili and garlic powders, and pepper over low heat.
  • Stir in tomatoes and 1 cup cheese; stir until cheese has melted.
  • Add drained pasta.
  • Transfer to ungreased 1 1/2 quart baking or casserole dish, and sprinkle with remaining cheese.
  • Broil until cheese is melted and lightly browned, about 2 minutes.

2 poblano peppers
2 ears fresh corn, husks removed
8 ounces uncooked rotini pasta or 8 ounces fusilli
1/2 cup chopped cooked mexican-style chorizo sausage
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
3 cups shredded monterey jack pepper cheese
1 teaspoon salt
1/4 teaspoon fresh ground pepper
3/4 cup crushed tortilla chips
1/4 cup panko breadcrumbs (Japanese breadcrumbs)
3 tablespoons melted butter

Steps:

  • Preheat broiler with oven rack 5 1/2 inches from heat. Broil peppers and corn at the same time on an aluminum foil-lined jelly-roll pan. Broil peppers 10 minutes or until blistered, turning after 5 minutes. Broil corn 20 minutes or until charred, turning every 5 minutes. Place peppers in a zip-top plastic freezer bag; seal and let stand 10 minutes to loosen skins. Peel peppers; remove and discard seeds. Chop peppers. Cut corn kernels from cobs. Reduce oven temperature to 400°.
  • Cook pasta in boiling salted water to cover 8 to 10 minutes or until al dente. Drain.
  • Cook chorizo in a medium skillet over medium heat, stirring often, 2 to 3 minutes or until crisp; remove chorizo, and drain on paper towels. Discard drippings.
  • Melt 3 tablespoons butter in a large heavy saucepan over medium heat; whisk in flour until smooth, and cook, whisking constantly, 2 minutes or until golden brown. Slowly whisk in milk, and cook, whisking often, 10 to 12 minutes or until thickened. Remove from heat, and gradually add cheese, stirring until smooth. Stir in chopped peppers, corn kernels, chorizo, salt, and pepper. Gently stir together cheese mixture and pasta in a large bowl. Spoon into 6 (8-oz.) ramekins.
  • Combine tortilla chips, panko, and 3 tablespoons melted butter; sprinkle over pasta.
  • Bake at 400° for 12 to 15 minutes or until golden and bubbly. Let stand 5 minutes before serving.
