Teriyaki Beef and Broccoli with Brown Rice image

This teriyaki beef and broccoli recipe is served over brown rice and makes an easy 30 minute meals solution to a busy night.

1 pound beef steak, cut into strip
3 cups broccoli florets
2 cups Minute Rice brown rice cooked according to package directions
2 TBSP olive oil
1 to 2 tsp sesame seeds if desired
FOR THE TERIYAKI GLAZE:
2 TBSP sesame oil
2 TBSP honey
2 TBSP brown sugar
1 TBSP soy sauce
2 TBSP teriyaki sauce
1/2 TBSP sriracha (adjust to taste)
1/2 tsp lemon grass
pinch fresh pepper
1 glove garlic, minced
1 tsp freshly grated ginger

Steps:

  • Cook Minute Rice according to package directions and set aside
  • Heat a cast iron pan over medium high heat and add olive oil
  • Steam the broccoli florets for 4 to 5 minutes until almost tender, Drain and set aside
  • Mix all ingredients for the glaze in a small bowl
  • Coat pan with oil and add strips of steak, cooking until almost all the pink is gone.
  • Add glaze to beef in hot pan and cook 3 to 4 more minutes until sauce thickens and coats the meat.
  • Remove from heat and toss in broccoli. Stir to coat broccoli with sauce
  • To serve: Place cooked brown rice on the plate, top with beef and broccoli and sprinkle with sesame seeds

1 medium bell pepper (any color), coarsely chopped (1 cup)
1 1/2 cups sliced fresh mushrooms (about 5 oz)
4 boneless beef strip steaks, about 3/4 inch thick (6 oz each)
1/2 teaspoon garlic salt
1/4 teaspoon coarsely ground pepper
1/4 cup teriyaki baste and glaze (from 12-oz bottle)
2 tablespoons water

Steps:

  • In 12-inch nonstick skillet, melt butter over medium-high heat. Cook bell pepper in butter 2 minutes, stirring frequently. Stir in mushrooms. Cook 2 to 3 minutes, stirring frequently, until vegetables are tender. Remove vegetable mixture from skillet; cover to keep warm.
  • Sprinkle beef steaks with garlic salt and pepper. In same skillet, cook steaks over medium heat 6 to 8 minutes, turning once or twice, until desired doneness.
  • Return vegetables to skillet. Stir teriyaki glaze and water into vegetables and spoon over steaks. Cook about 1 minute, stirring vegetables occasionally, until thoroughly heated.

1 beef flank steak (1-1/2 to 2 pounds)
1/2 cup plus 1/3 cup reduced-sodium soy sauce, divided
1/4 cup balsamic vinegar
1/4 cup honey
1 teaspoon ground ginger
2 garlic cloves, minced
2 tablespoons butter, divided
3 large eggs, beaten
2 cups cold cooked rice
1 package (9 ounces) frozen peas and pearl onions

Steps:

  • Place steak in a shallow dish. In a small bowl, whisk 1/2 cup soy sauce, vinegar, honey, ginger and garlic. Pour half of the marinade over steak; turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing., Meanwhile, transfer reserved marinade to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Set aside., In a large skillet, heat 1 tablespoon butter over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to plate. Chop eggs into small pieces; set aside., In the same skillet, stir-fry rice in remaining butter over medium-high heat. Stir in the peas, onions and remaining soy sauce., Add eggs; cook and stir until heated through. Thinly slice steak across the grain; serve over rice. Drizzle with sauce mixture.

I got this recipe a few years ago off the back of a Minute Brown Rice box. We have made this not only at home but when we have been camping. It is quick and easy to make. I also use unsalted nuts.

1 lb boneless skinless chicken breast, cut into strips (I get chicken already cut for stir fry)
1 tablespoon vegetable oil
1 1/2 cups water
1/4 cup low-sodium teriyaki sauce or 1/4 cup low sodium soy sauce
1/2 teaspoon garlic powder
2 cups Minute brown rice, uncooked
2 cups fresh broccoli florets (or frozen)
1/2 cup peanuts (optional) or 1/2 cup cashews (optional)

Steps:

  • Add the oil to a skillet and heat.
  • Then add the chicken and cook until lightly browned.
  • Stir in the garlic powder, teriyaki sauce and water.
  • Bring to a boil.
  • Add the broccoli, rice and peanuts and stir.
  • Cover the skillet and turn the heat to low.
  • Cook for 5 minutes or until it is cooked through.
  • Remove from stove top and let stand 5 minutes.
  • Serve.
