TERIYAKI SALMON WITH SESAME PAK CHOI

Teriyaki salmon with sesame pak choi image

Sweet chilli, honey, sesame oil, mirin and soy combine to make a punchy sauce for fish. Elaine Paige's dish is a simple and quick midweek meal

Provided by Good Food team

Categories     Dinner, Main course

Time 20m

Number Of Ingredients 14

2 skinless salmon fillets
1 tbsp sweet chilli sauce
1 tbsp honey
1 tsp sesame oil
1 tbsp mirin or dry sherry
2 tbsp soy sauce
2 tsp finely grated ginger
brown rice or noodles, to serve (optional)
2 large pak choi (about 250g)
2 tsp vegetable oil
2 tsp sesame oil
3 garlic cloves, grated
75ml fish or vegetable stock
2 tsp toasted sesame seeds, for sprinkling

Steps:

  • Heat oven to 200C/180C fan/gas 6 and put 2 skinless salmon fillets in a shallow baking dish.
  • Mix 1 tbsp sweet chilli sauce, 1 tbsp honey, 1 tsp sesame oil, 1 tbsp mirin or dry sherry, 2 tbsp soy sauce and 2 tsp finely grated ginger in a small bowl and pour over the salmon so the fillets are completely covered. Bake for 10 mins.
  • Meanwhile, cook the pack choi. Cut a slice across the base of 2 large pak choi so the leaves separate.
  • Heat 2 tsp vegetable oil and 2 tsp sesame oil in a wok, add 3 grated garlic cloves and stir-fry briefly to soften.
  • Add the pak choi and fry until the leaves start to wilt. Pour over 75ml fish or vegetable stock, tightly cover the pan and allow to cook for 5 mins - you're aiming for the stems to be tender but still have a bit of bite.
  • Serve the pak choi in shallow bowls, top with the salmon and spoon over the juices. Scatter with 2 tsp toasted sesame seeds and serve with brown rice or noodles, if you like.

SPICY SALMON TERIYAKI WITH STEAMED BOK CHOY

Spicy Salmon Teriyaki with Steamed Bok Choy image

Tossing salmon pieces in cornstarch before cooking helps them develop a crust that this spicy-sweet teriyaki sauce can really cling to.

Provided by Anna Stockwell

Categories     Salmon     Dairy Free     Rice     Soy Sauce     Honey     Bok Choy     Green Onion/Scallion     Sesame     Dinner     Quick & Easy

Yield 4 servings

Number Of Ingredients 12

5 Tbsp. unseasoned rice vinegar
3 Tbsp. low-sodium soy sauce or tamari
2 Tbsp. hot chili paste (such as sambal oelek)
2 Tbsp. honey
1 lb. skinless salmon fillet, cut into 3x1 1/2" strips
1 1/2 tsp. kosher salt, divided, plus more
3 Tbsp. cornstarch
2 Tbsp. vegetable oil
4 small heads baby bok choy (about 1 lb.), trimmed, quartered
Steamed rice (for serving; optional)
3 scallions, very thinly sliced on a diagonal
1 tsp. toasted sesame seeds

Steps:

  • Whisk vinegar, soy sauce, chili paste, and honey in a small bowl; set aside.
  • Season salmon with 1 tsp. salt. Place on a plate and sprinkle with cornstarch, turning to coat. Heat oil in a large nonstick skillet over medium-high. Cook salmon in a single layer, undisturbed, until golden brown underneath, 2-3 minutes. Turn and cook until other side is lightly golden, about 2 minutes. Pour sauce over salmon and continue to cook, gently turning salmon halfway through, until sauce is thickened slightly and clinging to salmon, about 1 minute. (Sauce will bubble aggressively when first added and will then calm down.)
  • Meanwhile, set a steamer basket in a large pot filled with about 1" salted water. Cover pot and bring water to a boil. Place bok choy in steamer basket, cover pot, and steam until just tender, 5-7 minutes. Season with remaining 1/2 tsp. salt.
  • Place rice (if using) and bok choy on a platter. Arrange salmon over and drizzle bok choy and salmon with any remaining sauce in skillet. Top with scallions and sesame seeds.

TERIYAKI-LIME SALMON

Teriyaki-Lime Salmon image

I got this on a recipe card at the local supermarket. The credit on the bottom of the card is TRY-FOODS INTL, Inc. (which is my motto too!) Seems easy and it looks good in the photo with lots of scallions on top of the fish and white rice on the side. Can easily be doubled to serve 4. My DH liked this a lot. Don't overcook or it will dry out.

TERIYAKI SALMON

Teriyaki Salmon image

A bonus for cooking this delicious dish is that when you're through, you will know how to make real teriyaki sauce.

Provided by Food Network

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 9

10 ounces soy sauce
8 ounces mirin
8 ounces sake
3 ounces sugar
4 salmon fillets
Kosher salt and freshly ground black pepper
1 tablespoon potato flour or cornstarch
3 tablespoons vegetable oil
1 spring onion, green parts only, chopped

Steps:

  • For the teriyaki sauce: Combine the soy sauce, mirin, sake and sugar in a bowl. Add the mixture to a large nonstick skillet and bring to a light simmer over medium heat, stirring gently, until the sugar is dissolved. Remove from the heat. Transfer to a bowl and set aside to let cool. Wipe out the skillet with a paper towel.
  • For the salmon: Sprinkle each salmon fillet with salt and pepper. Put the potato starch in a bowl and season with salt and pepper. Lightly dust each fillet with potato flour all over.
  • Set a skillet over high heat until hot, then add the oil. Add the salmon and fry each side until golden brown all over, 3 to 4 minutes total. Remove the salmon to a plate.
  • Add 1/2 cup of the teriyaki sauce to the skillet. Transfer the remaining sauce to an airtight container and reserve for another use; the sauce will keep up to 3 weeks in the refrigerator. Bring the sauce in the skillet to a boil over medium heat, then immediately reduce the heat and bring to a simmer. Cook until the sauce is reduced by half then return the salmon to the skillet and warm through. Turn off the heat and spoon the sauce over the salmon.
  • Sprinkle the salmon with spring onions and serve.

TERIYAKI SALMON WITH SCALLIONS

Teriyaki Salmon with Scallions image

Provided by Rozanne Gold

Categories     Onion     Salmon     Fall

Yield Serves 4

Number Of Ingredients 3

4 6-ounce center-cut salmon filets, skin on
1 cup teriyaki sauce
3 bunches scallions

Steps:

  • Remove any bones from salmon and discard. Place salmon in bowl or shallow casserole. Cover with teriyaki sauce. Marinate for 5 minutes
  • Meanwhile, trim roots from scallions. Trim 2 bunches of scallions so that each scallion has only 1 inch of green on top. Place trimmed scallions in nonstick skillet with enough salted water to cover. Bring to a boil, lower heat, and cook until scallions are soft, about 5 minutes. Keep warm.
  • Remove salmon from marinade. Reserve marinade. Press 1/2 teaspoon of butcher-grind black pepper into skinless side of each salmon fillet. Heat 1 very large or 2 smaller nonstick skillets until very hot. Put salmon skin side up in pan(s) and cook over medium-high heat for 3 minutes. Turn over and cook 2 more minutes.
  • Meanwhile, finely dice remaining scallions so that you have 1/2 cup. Add to reserved marinade. Add marinade and 1/4 cup water to salmon. Heat for 1 to 2 minutes, until salmon is cooked as desired. Serve immediately with boiled scallions.

  • Place the salmon fillets, soy sauce, and mirin in a large, resealable plastic bag. Seal the bag, gently turning several times to coat the fish with marinade, and refrigerate for 30 minutes.
  • Place an oven rack on the center shelf. Preheat the oven to 425 degrees F, and lightly grease a baking sheet with cooking spray or olive oil. Remove the fish from the marinade, patting dry with paper towels. Reserve 3/4 cup of the marinade, discarding the remainder.
  • Place the fish skin-side down on the prepared baking sheet. Cook for 11-13 minutes, until just cooked through (for tender results, it’s better to slightly undercook than to overcook salmon).
  • While the salmon is baking, prepare the sauce. Place the cornstarch in a small saucepan and whisk in 2 tablespoons of the reserved marinade to create a slurry. Whisk in the remaining marinade, garlic, ginger and both sugars. Turn the heat to medium and continue whisking frequently until the sauce thickens, approximately 5 minutes. Remove from the heat and whisk in the sesame oil.

  • Prepare the salmon - remove the skin using a sharp, flexible knife and remove pin bones using kitchen tweezers. Combine the marinade ingredients for the salmon in large bowl and whisk them together: soy sauce, water, brown sugar, sesame seed oil, vinegar, ginger and garlic. Place the salmon into bowl, coating it well in the marinade. Refrigerate for 2 hours.
  • For the risotto, preheat the chicken broth in a small saucepan to almost boiling; remove from heat and keep warm. Preheat a large saute pan over medium-high heat and add 1 tablespoon olive oil, the asparagus and sliced mushrooms. Sauté them until light golden brown, about 3 to 4 minutes, then season with salt and pepper. Remove the veggies from the pan and set them aside; keep warm.
  • Keep the saute pan at a medium heat and add in the butter and shallot - sauté until onion is translucent but not browned. Add rice and season lightly with salt and pepper, and cook until the butter is absorbed into the rice, then add white wine. Cook for several minutes until wine is absorbed and begin adding stock.
  • Begin adding the hot broth 1/2 cup at a time, whisking continuously after each addition until broth is completely absorbed. Continue until all the broth is absorbed, about 25 to 30 minutes (rice needs to be done!). When risotto is done, stir in asparagus, mushrooms, green onion and parmesan cheese. Serve risotto immediately if possible.

  • Season the salmon. I prefer using chilled salmon fillet weighted between 200g to 250g. Since this is a pan-fried teriyaki salmon recipe, I choose a fillet with even thickens to fry it evenly.
  • Pan-fry the salmon. Heat some olive oil (or other oil of your choice) in a pan over medium heat. When it is sufficiently hot, place the salmon skin-side down.
  • Make the teriyaki sauce. Japanese soy sauce, sake, and mirin are the trio that makes up the teriyaki sauce. I also include some sugar and ginger to accentuate the taste.
  • Glaze the salmon with the teriyaki sauce. The final step of cooking the salmon is to glaze it with the sauce. Reduce the sauce to half of the original volume nu heating it further before adding the salmon.
  • Serving suggestion. This teriyaki salmon recipe is very versatile. It is perfect for serving with plain rice as a teriyaki salmon rice bowl. The extra teriyaki sauce will sip into the bed of rice beneath the fillet.
