A lemony, creamy chive dressing that is versatile for salads, tacos, vegetables or proteins like chicken or fish.

Steps:
- Combine all ingredients in a food processor and grind for 30 seconds to a minute, enough for chives to be well chopped and incorporated.
- Serve as a side dipping sauce or over salad, tacos, vegetables or proteins.
HEIRLOOM TOMATO SALAD WITH FRESH GREENS, BLUE CHEESE AND CREAMY CHIVE DRESSING
Steps:
- Place greens in a bowl and toss with the vinegar and oil and season with salt and pepper. Transfer to a platter. Arrange tomatoes over greens, sprinkle with salt, and drizzle with chive dressing. Sprinkle blue cheese over top and garnish with a few fresh chives.
- Combine all ingredients in a blender and blend until smooth.

- In a small jar, combine lemon juice and 1/2 teaspoon salt. Cover and shake until salt is dissolved. Add cream and chives; shake to blend. Season with salt. Store, covered and refrigerated, up to 1 week. Shake to blend before using.

- In small saucepan, combine garlic and 1 cup water; bring to a boil.
- Reduce heat to low; simmer for 10 minutes.
- With a slotted spoon, transfer garlic to paper towel, reserving 2 tablespoons of the cooking liquid.
- In a blender or food processor, combine cooked garlic, reserved liquid, ricotta cheese and yogurt; puree until smooth.

- Bring carrots and cauliflower to boil in 1 inch water in Dutch oven or large deep skillet; cover. Cook 2 min. Add broccoli; cook, covered, 3 to 5 min. or until vegetables are crisp-tender.
- Meanwhile, heat oil in small saucepan on medium-high heat. Add onions; cook and stir 1 min. Add cream cheese spread and milk; cook and stir 2 to 3 min. or until cream cheese is melted, stirring frequently.
- Drain vegetables; place in serving dish. Top with cream cheese sauce.
