TERIYAKI CHICKEN MARINADE

Everyone's favorite flavors come together in this easy marinade. Mix it up with 1 1/2 pounds of chicken to keep in the freezer for those weeks when meal prep falls by the wayside.

1/2 cup soy sauce
1/4 cup canola oil
3 tablespoons sugar
2 teaspoons grated fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons sesame seeds
2 cloves garlic, grated
Kosher salt

Steps:

  • For the marinade: Combine the soy sauce, oil, sugar, ginger, sesame oil, sesame seeds, garlic and 1/2 teaspoon salt in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.
  • To cook: Remove the chicken from the bag, letting any excess marinade drip off, and transfer to a foil-lined baking sheet. Broil, turning halfway through, until lightly charred, cooked through and an instant-read thermometer registers 165 degrees F, about 12 minutes.

This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

EASY BEEF TERIYAKI



Easy Beef Teriyaki image

Easy 20 Minute Beef Teriyaki. Tender, juicy and smothered with a homemade teriyaki sauce. So much better than takeout!

1 pound flank steak (sliced against the grain and cut into bite size pieces)
1/4 cup cornstarch
3 tablespoons oil (divided)
1 garlic clove (minced)
½ teaspoon ginger (minced)
½ cup soy sauce
½ cup mirin
4 tablespoons brown sugar
½ teaspoon sesame oil
a couple of dashes of fish sauce
1 teaspoon cornstarch
1 tablespoon water

Steps:

  • Toss the beef in the cornstarch and place in the fridge for 10 minutes while you are making the sauce and heating up the oil.
  • Heat 2 tablespoons of oil in a large skillet.
  • When the oil is nice and hot add in the steak (I had to do two batches to avoid overcrowding the pan). Sauté until browned on both side, 3-4 minutes. Remove from the pan and set aside.
  • Add the remaining tablespoon of oil to the same pan.
  • Add in garlic and ginger and cook for 1-2 minutes.
  • In a small bowl combine soy sauce, mirin, brown sugar, sesame oil and fish sauce.
  • Pour the soy sauce mixture into the pan and bring to a simmer and cook for 2-3 minutes.
  • In a small bowl mix together the cornstarch and water.
  • Slowly pour in the cornstarch mixture whisking continuously. Continue to cook until your desired thickness.
  • Add steak back to the pan and toss to coat the beef with the sauce.
  • Serve immediately with green onions and sesame seeds if desired.

1 tablespoon dark brown sugar
1 lime, zested and juiced
6 tablespoons soy sauce
Ground black pepper
1/4 cup thick teriyaki sauce

1 tablespoon rice vinegar
3 tablespoons vegetable oil
4 cloves garlic, cut into thin slices
One 1-inch piece fresh ginger, peeled and cut into julienne strips
1 jalapeno pepper, seeded and cut into thin strips
8 ounces green beans, cut in half across
1 cup julienned carrots
1 red bell pepper, cut into thin strips

Steps:

  • Cut the beef into 1-by-2-by-1/4-inch strips. Put in a bowl and coat with the brown sugar, lime zest, 3 tablespoons of the soy sauce and some black pepper. Set aside for a few minutes while you make the sauce.
  • Whisk together the teriyaki sauce, cornstarch, sesame oil, rice vinegar, lime juice and remaining 3 tablespoons soy sauce in a bowl.
  • Heat a large skillet over medium-high heat. Add 1 tablespoon of the vegetable oil. Add the beef and stir-fry until brown around the edges, 2 to 3 minutes. Remove to a plate and keep warm.
  • Add the remaining 2 tablespoons vegetable oil to the skillet. Add the garlic, ginger and jalapeno and cook for 30 seconds. Add the green beans, carrots and bell pepper and stir-fry for 1 minute. Add the snow peas. Add the beef with its juices and the sauce and cook for another minute.
  • Serve over rice and garnish with scallions and sesame seeds.

1 1/2 lbs boneless steak (I love Skirt or Flank steak for this) or 1 1/2 lbs boneless skinless chicken breasts, cut into 1 inch cubes
1 (16 ounce) bottle teriyaki sauce
1 garlic clove, minced
6 -8 carrots, cut into 2 inch pieces
3 zucchini, sliced
2 yellow squash or 2 crook neck squash, sliced
8 ounces mushrooms, sliced
1 (9 ounce) can baby corn, sliced in half
rice
oil

Steps:

  • Marinate your beef or chicken for about 5 hours using about 1/2 the bottle of the teriyaki sauce.
  • Put oil in a wok or a frying pan with a cover and heat.
  • Drain the meat from the marinade discarding the marinade and add the meat and garlic to wok.
  • Cook until it is done about 7 minutes.
  • Remove the meat from the wok and wipe out the wok with a paper towel.
  • Add more oil and stir fry the carrots for about 6 minutes.
  • Add the zucchini, crookneck squash, baby corn and mushrooms and stir fry for about 10 minutes.
  • Add the meat back into the wok and stir through and add more teriyaki sauce to taste.
  • Cover and cook for about 5 minutes.
  • Serve over rice.

3 -4 lbs beef or 3 -4 lbs chicken
2/3 cup shoyu (Asian soy sauce)
1/2 cup sugar
2 tablespoons sherry wine or 2 tablespoons white wine
3 garlic cloves, minced
1 inch piece ginger, crushed
3 green onions (chopped fine)
1 teaspoon Chinese five spice powder (optional)

Steps:

  • Mix all ingredients. Soak beef 4 hours or overnight in sauce. Bake in shallow pan. Turn pieces over and marinate with sauce. Ten minutes before turning heat off, pour off rest of shoyu mixture. Serve with chopped green onions and Chinese parsley. Bake 325 degrees for 1 hour or less depending on how well you like your meat. Medium is best. This is also a great for grilling on the BBQ. Makes about 6 servings.
  • Grilled Teri-Beef and Teri-Chicken Sticks: A great way to make teriyaki beef or chicken when grilling is to slice the meat into thin strips before marinating. Then put on bamboo skewers and grill for 2-3 minutes per side. The meat comes out tender tasty and is easy to eat right off the stick.

  • Thread chicken and peppers on skewers, alternating as you go
  • In a glass bowl mix together all marinade ingredients.

  • Place chicken and pepper kabobs on preheated grill over medium temperature.
