These smoky chicken fajitas will rival those from your favorite Tex-Mex restaurant.

1½ to 1¾ pounds chicken tenderloins or boneless, skinless chicken breasts
¼ cup vegetable oil
3 cloves garlic, minced
1 tablespoon lime zest, from 2 limes
1 teaspoon cumin
¾ teaspoon oregano
¾ teaspoon ancho chili powder
½ teaspoon smoked paprika
1 teaspoon salt
8-12 small soft flour tortillas
2 tablespoons vegetable oil
1 large red onion, sliced ¼" thick
2 bell peppers, sliced ¼" thick
¼ teaspoon salt
½ teaspoon sugar
Sour cream
Guacamole, store bought or homemade
Salsa, store bought or homemade
Shredded cheese
Chopped cilantro

Steps:

  • (Skip this step if using chicken tenderloins.) One at a time, place the chicken breasts in a sealable plastic bag and, using a meat mallet, pound to an even ½-inch thickness.
  • Open a 1 gallon zip-lock bag and place in a medium bowl. Add the oil, garlic, lime zest, cumin, oregano, ancho chili powder, smoked paprika and salt into the bag. Mash the outside of the bag with your hands to blend the marinade together. Add the tenderloins or pounded chicken breasts and seal shut, releasing any air in the bag. Using your hands, massage the marinade into meat until evenly coated. Place the bag back in the bowl and place in the refrigerator (the bowl protects against leakage); let the chicken marinate at least 8 hours or up to 24 hours.
  • Clean the grill and preheat to high.
  • While the grill heats, cook the peppers. Heat the oil in a large skillet (preferably not non-stick) over medium-high heat. Add the sliced onions, peppers, salt, and sugar; cook, stirring occasionally, until the vegetables start to brown and a brown film forms around edges of the bottom of the pan, 8 to 10 minutes. Add ¼ cup of water to the pan; scrape the bottom of the pan with a wooden spoon to release any browned bits. Continue cooking for 3 to 4 minutes, until the water is evaporated and the pan starts to brown again; add ¼ cup more water and cook a few minutes more, until the vegetables are tender-crisp. Season to taste with more salt and sugar if necessary. Set aside.
  • Oil the grates on the grill. Grill the chicken, covered, for 2 to 3 minutes per side. Do not overcook. Let the chicken cool slightly, then transfer to a cutting board and cut into ½-inch strips.
  • Arrange the chicken and peppers on a serving platter. To warm the tortillas: stack 4-6 tortillas on a plate and cover them with a damp paper towel, then microwave for 30 seconds to 1 minute. Repeat with the remaining tortillas. Serve with the chicken, peppers and optional accompaniments.
  • Note: The onion and pepper mixture can be made ahead of time and reheated in the microwave.

1 red bell pepper
2 medium carrots, peeled
1 head broccoli
1 1/2 cups sugar snap peas
1 1/2 Tablespoons olive oil
1/2 cup homemade or store-bought teriyaki sauce
Sesame seeds, for serving
Rice or noodles, for serving (optional)

Steps:

  • Preheat the oven to 400°F and line a large baking sheet with foil. Grease the baking sheet with cooking spray.
  • Cut the chicken breasts and bell pepper into 1-inch strips. Thinly slice the carrots into ribbons then cut the ribbons into 1-inch batons. Cut the broccoli into small florets.
  • Add the chicken strips to one bowl then add the teriyaki sauce and a pinch of salt and pepper and toss to combine.
  • Add the peppers, carrots, broccoli and sugar snap peas to a separate large bowl. Add the olive oil and a pinch of salt and pepper and toss well to combine. Arrange the chicken and veggies on the baking sheet, spreading them into an even layer with as little overlap as possible.
  • Bake for 20 to 25 minutes or until the chicken is cooked through and the veggies are tender.
  • Remove the baking sheet from the oven and divide the chicken and veggies among serving plates. Top with sesame seeds and serve alongside rice or noodles (optional).

Nonstick cooking spray
4 medium boneless, skinless chicken breasts
1 red bell pepper
2 medium carrots
1 head broccoli
Kosher salt and freshly ground black pepper
1 1/2 cups sugar snap peas, strings removed
1 1/2 tablespoons olive oil
1/2 cup Homemade Teriyaki Sauce, recipe follows, or store-bought teriyaki sauce
Sesame seeds, for serving
Cooked rice or noodles, for serving, optional
1/3 cup low-sodium soy sauce
1/4 cup pineapple juice
1/4 cup packed light brown sugar
2 teaspoons minced garlic
1 teaspoon minced peeled ginger
1 1/2 teaspoons cornstarch

Steps:

  • Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with foil and grease with nonstick cooking spray.
  • Cut the chicken and bell pepper into 1-inch strips. Thinly slice the carrots lengthwise, then cut into 1-inch batons. Cut the broccoli into small florets.
  • Transfer the chicken strips to a medium bowl, add the teriyaki sauce and a pinch each of salt and pepper and toss to combine.
  • Combine the peppers, carrots, broccoli and sugar snap peas in a large bowl. Add the olive oil and a pinch each of salt and pepper and toss well to combine. Arrange the chicken and vegetables on the prepared baking sheet, spreading them into an even layer with as little overlap as possible.

  • Whisk together the soy sauce, pineapple juice, brown sugar, garlic, ginger and 1/4 cup water in a medium saucepan. Cook over medium heat, whisking constantly, until the sugar has completely dissolved.
  • Whisk together the cornstarch with 1 tablespoon water in a small bowl to make a slurry. Whisk the slurry into the sauce and simmer until it has thickened to the consistency of syrup, about 5 minutes.
  • Remove from the heat, pour into a small heatproof bowl and let cool. Use right away or refrigerate for up to 3 days.

MEAT
2 lb boneless skinless chicken thighs (not breasts)
TERIYAKI MARINADE
1 c low sodium soy sauce
2 clove garlic minced
2 tsp ginger
4 Tbsp brown sugar
1 whole lemon or lime thinly sliced
4 Tbsp oil
2 Tbsp dried minced onion
1 tsp black pepper
SWEET AND SOUR ONIONS AND PEPPERS
1 Tbsp oil
3 c sliced onions in 1/4 inch (about 3 onions)
2 red bell peppers sliced 1/4 inch slices
2 green bell peppers sliced 1/4 inch slices
4 Tbsp apple cider vinegar
4 Tbsp sugar
GARNISH
fresh parsley or cilantro for garnish

Steps:

  • 1. 8-24 hours before cooking, whisk together marinade ingredients.
  • 2. Marinate chicken thighs.
  • 3. Prepare grill to medium-high heat.
  • 4. Put oil for veggies into a large foil pan.
  • 5. Add all of the sliced onions and peppers. DO NOT ADD vinegar and sugar yet! Put foil cover over this veggie pan.
  • 6. Saute veggies in pan. Cover grill. Check and stir/turn periodically. Let veggies soften and start to brown just a bit.
  • 7. Put marinated chicken thighs on grill. These don't take too long... maybe 5 minutes on each side. Make sure they get glazy/crispy on the outside. But don't cook too long.
  • 8. Put to the side or on a top rack when you think they are done.
  • 9. Combine the vinegar and sugar.
  • 10. To the browned/sauteed veggies add vinegar and sugar, lighty mix.
  • 11. When sugar is melted and everything is mixed, add grilled chicken thighs... nestle them into the veggies. Cover grill and heat for 3-5 minutes.
  • 12. Sprinkle fresh parsley or cilantro on top for garnish (if desired) and serve!

2 large chicken breasts, finely sliced
1 red onion, finely sliced
1 red pepper, sliced
1 red chilli, finely sliced (optional)
1 heaped tbsp smoked paprika
1 tbsp ground coriander
pinch of ground cumin
2 medium garlic cloves, crushed
4 tbsp olive oil
1 lime, juiced
4-5 drops Tabasco
6 medium tortillas
bag mixed salad
230g tub fresh salsa

Steps:

  • Heat oven to 200C/180C fan/gas 6 and wrap 6 medium tortillas in foil.
  • Mix 1 heaped tbsp smoked paprika, 1 tbsp ground coriander, a pinch of ground cumin, 2 crushed garlic cloves, 4 tbsp olive oil, the juice of 1 lime and 4-5 drops Tabasco together in a bowl with a big pinch each of salt and pepper.
  • Stir 2 finely sliced chicken breasts, 1 finely sliced red onion, 1 sliced red pepper and 1 finely sliced red chilli, if using, into the marinade.
  • Heat a griddle pan until smoking hot and add the chicken and marinade to the pan.
  • Keep everything moving over a high heat for about 5 mins using tongs until you get a nice charred effect. If your griddle pan is small you may need to do this in two batches.
  • To check the chicken is cooked, find the thickest part and tear in half - if any part is still raw cook until done.
  • Put the tortillas in the oven to heat up and serve with the cooked chicken, a bag of mixed salad and one 230g tub of fresh salsa.

1/2 cup teriyaki sauce
1/2 bunch fresh cilantro, chopped
2 garlic cloves, crushed
1/2 lime, juice
1/2 teaspoon cumin
16 boneless skinless chicken tenderloins
1/2 cup low sodium soy sauce
1/2 cup grapefruit juice
1/8 cup hoisin sauce
1/8 cup ketchup
1/8 cup brown sugar
2 garlic cloves, crushed
1 inch piece gingerroot, chopped fine
1 1/2 teaspoons rice vinegar
1 teaspoon sriracha sauce
1 onion, sliced
1 red bell pepper, sliced
2 tablespoons olive oil
2 tablespoons butter
10 tortillas (preferably whole wheat)
2 cups colby cheese, shredded

Steps:

  • In zip top plastic bag, mix together marinade ingredients. Add chicken and refrigerate.
  • Prepare teriyaki glaze by combining all of the ingredients in saucepan over medium heat. Bring to a slow simmer and cook, stirring occasionally, until glaze thickens.
  • Caramelize onions and peppers in oil and butter in skillet over medium heat.
  • Set aside some of the teriyaki glaze for serving. Brush remaining teriyaki glaze on chicken and broil about 6 inches from heat. Continue basting with teriyaki glaze until chicken is cooked through and no longer pink inside (about 10 to 15 minutes).
  • To serve, pile shredded lettuce on plate. Divide chicken and caramelized vegetables among 10 tortillas. Drizzle teriyaki glaze on top and cover with shredded cheese.

2 tbsp toasted sesame oil
6 skinless and boneless chicken thighs, sliced
2 large garlic cloves, crushed
1 thumb-sized piece ginger, grated
50g runny honey
30ml light soy sauce
1 tbsp rice wine vinegar
1 tbsp sesame seeds , to serve
4 spring onions, shredded, to serve
sticky rice, to serve
steamed bok choi or spring greens, to serve

Steps:

  • Heat the oil in a non-stick pan over a medium heat. Add the chicken and fry for 7 mins, or until golden. Add the garlic and ginger and fry for 2 mins. 1 pinch salt and ground black pepper to taste
⅓ large sweet onion, sliced
⅓ green bell pepper, sliced
⅓ red bell pepper, sliced

1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
1 (10 ounce) package frozen cauliflower rice
1 cup shredded mild Cheddar cheese
½ avocado, diced

Steps:

  • Grease a grill pan with cooking spray. Season chicken with salt and pepper; place in the prepared pan. Cook and stir over medium heat until chicken is no longer pink, about 7 minutes.
  • Heat a skillet over medium-high heat. Add onion and bell pepper slices; saute until slightly browned, about 5 minutes. Mix in diced tomatoes and cooked chicken. Cook until liquid is mostly evaporated, 2 to 3 minutes.
  • Microwave cauliflower rice following package instructions for 5 minutes. Let stand for 1 minute.
  • Carefully open the package of cauliflower rice and divide between 2 bowls. Divide the chicken and vegetable mixture evenly between the bowls. Top with Cheddar cheese, avocado, salsa, and sour cream.
