BERRY CRUMBLE PIE

1 1/4 cups all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1/2 teaspoon kosher salt
4 tablespoons cold vegetable shortening
6 tablespoons cold unsalted butter, cut into small pieces
2 tablespoons apple cider vinegar
2 to 4 tablespoons ice water
3/4 cup rolled oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
6 tablespoons cold unsalted butter, cut into small pieces
6 cups mixed berries (blackberries, raspberries and blueberries)
1/3 cup granulated sugar
1/3 cup packed light brown sugar
3 tablespoons fresh lemon juice
2 tablespoons instant tapioca
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon kosher salt

Steps:

  • Make the crust: Pulse the flour, granulated sugar and salt in a food processor to combine. Add the shortening and pulse a few times until coarse crumbs form. Pulse in the butter until just combined with some pea-size pieces remaining. Pulse in the vinegar and 2 tablespoons ice water until the dough starts to come together but is still crumbly, adding up to 2 more tablespoons ice water if needed. Turn out the dough onto a piece of plastic wrap and pat into a disk. Wrap and refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the topping: Combine the oats, flour, brown sugar, salt, cinnamon and allspice in a medium bowl. Work in the butter with your fingers until clumps form. Refrigerate until ready to assemble the pie.
  • Make the filling: Combine the berries, granulated sugar, brown sugar, lemon juice, tapioca, cinnamon, cardamom and salt in a large bowl; toss well.
  • Place a baking sheet on the lowest oven rack and preheat to 425 degrees F. Roll out the dough into a 12-inch round on a lightly floured surface; ease into a 9-inch pie plate and crimp the edge. Refrigerate until firm, at least 20 minutes.
  • Pour the berry filling into the crust and sprinkle evenly with the crumb topping. Transfer the pie to the hot baking sheet and bake 20 minutes. Reduce the oven temperature to 375 degrees F and continue baking, rotating the pie halfway through, until the crust and topping are browned and the filling is bubbling, 35 to 40 more minutes. (Tent loosely with foil if the pie is browning too quickly.) Transfer to a rack and let cool completely.

You'll think the crust for this super-simple pie is a mistake, but trust us. Letting it puff up and then gently patting it down makes for an easy instant crust. Use your favorite fruit preserves or jam for the filling.

One 8.4-ounce sheet puff pastry, thawed
2 ounces cream cheese, at room temperature
1/3 cup confectioners' sugar
1/2 teaspoon pure vanilla extract
1 cup heavy cream
1/3 cup fruit jam or preserves like raspberry, strawberry or apricot
1/2 cup fresh berries

Steps:

  • Preheat the oven to 400 degrees F.
  • Roll the puff pastry into an 11-inch square. Invert a 9-inch pie plate onto the center of the square and use a paring knife to cut a circle about half an inch larger than the edge of the pie plate (save the scraps for another use). Put the circle into the pie plate. Bake until the pastry rises into a golden dome, 15 to 20 minutes. Immediately use the bottom of a heat-safe measuring cup to pat down the pastry into the bottom and sides until flat, making a crust (some small pieces of puff pastry will flake off; this is fine). Let cool completely.
  • Make the filling: Beat the cream cheese in a large bowl with an electric mixer on medium speed until smooth. Add the sugar and vanilla and beat until incorporated. Pour in the cream and beat on medium-high speed until stiff peaks form (take care not to overbeat).
  • Spread the jam out on the bottom of the crust and then scrape the cream filling on top of it. Spread out into an even layer. Loosely cover with plastic wrap and refrigerate for at least 2 hours. Top with berries, cut into slices and serve.

2 tablespoons fresh lemon juice
1 quart premium vanilla ice cream, softened slightly

Steps:

  • Combine the blackberries, sugar and lemon juice in a nonreactive bowl.
  • Let the berries macerate, covered, at room temperature until the juices have run, about 1 hour.
  • Gently mash berries with a spoon.
  • Place the softened ice cream in a large bowl and fold in the berry mixture.
  • *If you prefer, you could just drizzle the sauce on top of individual servings of ice cream*.

1 (9 inch) pie crusts
1 cup sugar
1/3 cup all-purpose flour
1/8 teaspoon salt
2 eggs, beaten
1/2 cup sour cream
1/2 cup sugar
1/2 cup all-purpose flour
1/4 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • Place berries in unbaked pie crust; set aside.
  • Combine sugar, flour and salt.
  • In a separate bowl, beat eggs and sour cream together; add to flour mixture. Spoon over berries.
  • Combine all of the topping ingredients until crumbly.

I have a neighbour that brings me raspberries from her everbearing bush. There are only so many batches of jam that one can make. This is the best summer drink ever. This recipe came from my sister, a great cook herself.

1 (1 7/8 liter) can pineapple juice
2 (355 ml) cans frozen lemonade
200 ml reallemon lemon juice
3 (8 g) packages unsweetened raspberry kool-aid
750 ml mashed fresh raspberries (or frozen)
375 ml sugar
750 ml vodka

Steps:

  • Mix everything together in a clean ice cream pail.
  • Put into the freezer.
  • Stir every couple of hours.
  • Once this is frozen to a nice slush consistency, spoon 45 ml.(or more) into a tall glass. Top with club soda, gingerale, or 7-up.
  • You could substitute strawberries for a strawberry slush, but you'll want to use strawberry koolaid instead.

8 ounces cream cheese, at room temperature

1 1/2 cups chill heavy cream
1/2 teaspoon vanilla extract
2 cups strawberries, hulled and cut into quarters
1 cup raspberries
1 cup blueberries

Steps:

  • Preheat oven to 400°.
  • In a bowl, mix flour and salt. With a pastry blender or two knives, cut in butter and shortening until crumbly. Sprinkle with 3 tablespoons ice water; mix with a fork just until dough forms a ball (add water if needed). Form into a disk, wrap in plastic and chill for 30 minutes. On a floured surface roll out the dough into an 11" round. Fit into a 9" pie pan and crimp edge. Refrigerate for 10 minutes.
  • Line crust with foil and fill with pie weights. Bake for 6 minutes, remove foil and bake until lightly golden, 10 to 12 minutes. Let cool.
  • In a bowl, beat cream cheese and sugar with a mixer on high speed. Beat in cream and vanilla, scraping down sides of bowl, until fluffy and well-mixed. In another bowl, gently mix berries.
  • Spoon two-thirds of cream mixture into crust; smooth top. Spoon two-thirds of berries over cream. Mound remaining cream in center and top with remaining berries. Chill overnight.

  • Combine dry ingredients for the crust in a small bowl. You may not need all of the butter! Gradually add melted butter (or dairy free alternative) to the mixture until it will hold when pressed to the side of the bowl and looks like damp sand.
  • In a large pot, all at once, combine the blueberries, lemon juice, cardamom, sugar and cornstarch. Turn your burner to a medium high heat and cook until the blueberry mixture is bubbling and has thickened. The sauce will turn from white-ish light purple to clear purple and coat the back of the spoon when it is ready. Remove from heat and let cool to room temperature (don’t put in the fridge or it may set and won’t pour into the crust properly).
  • In a small bowl, using a hand mixer combine the whipping cream, powdered sugar and vanilla. Whip on a high speed until stiff peaks form. Cover and refrigerate until ready to top the pie.
