1 1/2 tablespoons whole coriander seeds, coarsely ground in spice mill or mortar with pestle
1 3/4 teaspoons coarse kosher salt
1/2 teaspoon dried crushed red pepper
1 (3 1/2- to 4-pound) cut-up (best of fryer) chicken
1/3 cup orange juice or pineapple juice
1/4 cup gold or silver tequila
2 tablespoons (packed) golden brown sugar
2 tablespoons honey
1 to 2 red jalapeño chiles with seeds, finely chopped
1 shallot, minced
Nonstick vegetable oil spray

Steps:

  • Mix coriander, salt, and red pepper. Sprinkle mixture all over chicken. Arrange chicken, skin side up, on baking sheet; cover and chill at least 6 hours or overnight.
  • Combine orange juice, tequila, brown sugar, honey, 1 jalapeño, and shallot in small saucepan. Bring to boil, stirring until sugar dissolves. Reduce heat to medium-low; simmer until mixture thickens slightly, about 10 minutes. Add 1 more jalapeño if more heat is desired. Cool glaze. Transfer 3 tablespoons glaze to small bowl and set aside for serving.
  • Spray grill with nonstick spray. Prepare barbecue (medium heat). Arrange chicken, skin side up, on grill. Grill 15 minutes, turning occasionally. Brush chicken with glaze in saucepan. Turn chicken over; brush with glaze. Grill until juices run clear when pierced with fork or until instant-read thermometer inserted into chicken registers 170°F, turning and brushing occasionally with glaze, about 10 minutes longer. Transfer to platter. Spoon reserved glaze over.

4 (6 ounce) boneless chicken breast halves (with skin, about 6 oz. each)
1/2 cup tightly packed fresh mint leaves
1/2 cup tightly packed fresh Italian parsley (with some stems)
1/2 cup fresh orange juice
2 tablespoons tequila
2 tablespoons extra virgin olive oil
2 garlic cloves, crushed
2 teaspoons minced jalapeno peppers, without seeds
1 1/2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon ground chili powder
1/4 teaspoon fresh ground black pepper

Steps:

  • To make the marinade: combine all the marinade ingredients in a food processor; process until smooth.
  • Rinse the chicken breast under cold water; pat dry with paper towels.
  • Place chicken in a large heavy-duty plastic zip-lock bag; pour in the marinade.
  • Press the air out of the bag and seal tightly.
  • Turn the bag to distribute the marinade; place in a bowl, and refrigerate 2-4 hours, turning every now and then.
  • Remove the chicken from the bag and reserve the marinade.
  • Pour the marinade into a saucepan; bring to a boil over high heat; boil for 1 minute.
  • Grill the chicken breasts, skin side down, over Direct Medium heat, for 8-12 minutes or until the meat is firm and the juices run clear, turning and basting with the marinade once halfway through grilling time; serve warm.

This is a versatile recipe. Use boneless skinless chicken breasts and chop up for a salad or cut up a fryer chicken and grill with the skin on for a chicken dinner. Prep time does not include marinade time.

1 1/2 teaspoons ground coriander
1/2-1 teaspoon kosher salt
1/4 teaspoon red pepper
4 boneless skinless chicken breast halves
1/3 cup orange juice
1/4 cup tequila
2 tablespoons brown sugar
2 tablespoons honey
1 jalapeno pepper, chopped
1 tablespoon diced onion

Steps:

  • Mix coriander, salt and pepper. Sprinkle over chicken. Cover and chill at least 1 hour or overnight.
  • Combine remaining ingredients in a small saucepan. Bring to a boil stirring constantly until sugar dissolves. Reduce heat to medium low and cook till slightly thick about 10 minutes. Set aside some sauce if you'd like some to serve with cooked chicken. Cool sauce.
  • Heat grill and cook chicken until done turning frequently and basting with sauce. Cook time will vary on cut of chicken used.
  • Serve as desired and with sauce if you'd like.
  • I like to serve this sliced into strips atop salad greens. The Southwest Ranch Salad Dressing by Parsley on this site goes well with this chicken.

2 tablespoons canola or olive oil, plus 3 tablespoons
1/8 cup finely chopped red onion
1 1/2 tablespoons ground cumin
1/4 teaspoon chopped garlic
1/4 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
2 dashes cayenne pepper (less than 1/8 teaspoon)
1/4 teaspoon granulated garlic
2 tablespoons finely chopped fresh cilantro leaves
1 pound (2 large half breasts) boneless skinless chicken breast; sliced
completely in half making 4 pieces
1 -ounce tequila
4 ounces shredded Colby Jack cheese
Optional garnish (2 tablespoons each serving):
1 small red onion, diced (use remainder of onion for marinade)
1 green bell pepper, diced
1 red bell pepper, diced
1 whole green onion, chopped
1 curly "Mexican" pepper or cubano, diced
1 sprig fresh cilantro leaves
Salsa picante
Sour cream, in a squeeze bottle
1 tablespoon sliced black olives
1 lemon and lime, cut in thin wedges

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl, place 2 tablespoons canola oil, all marinade ingredients, and chicken, and mix thoroughly.
  • In a large saute pan, heat 3 tablespoons canola oil over medium-high to high heat. Place the coated chicken breasts in the hot pan and sear on one side until golden brown for about 1 minute. Turn and sear the other side for a few seconds more, and sizzle with the tequila.
  • Transfer seared chicken breasts to a lightly greased sheet pan and bake in oven for about 10 minutes until fully cooked.
  • Remove chicken from oven and top with the shredded cheese. Place back in the oven for just a minute to melt the cheese and remove. Serve and enjoy!
  • Make it Supreme!
  • Before serving, top with sour cream, salsa picante, and other vegetables for garnish.

1 lime
1/4 cup tequila
2 tablespoon olive oil
1/2 teaspoon salt
4 cloves garlic
1/2 jalapeno
1/4 cup fresh cilantro
3 chicken breasts (boneless, skinless, cut in half lengthwise)
1 cup long grain rice (I used basmati)
1 tablespoon olive oil
3 cloves garlic (minced)
1 onion (chopped)
1/2 teaspoon cumin
salt and pepper to taste
1/4 teaspoon cayenne pepper
1/4 teaspoon turmeric (for nice yellow color)
2 cups low sodium chicken broth
juice from half a lime
fresh cilantro (sliced tomatoes, sliced jalapenos and lime slices for serving)

Steps:

  • Heat the oil in a dutch oven and add onion and garlic. Cook for 3 to 4 minutes until onion is tender and translucent. Reduce heat to low and add the rice. Cook for about a minute stirring constantly making sure the rice doesn't burn.
  • Add cumin, salt, pepper, cayenne and turmeric, and then add the chicken broth and stir everything together. Bring the mixture to a boil and then reduce the heat to low. Cover, and simmer until the rice is done. Stir in lime juice and cilantro.
  • Slice the lime and squeeze the juice into a blender. Add tequila, olive oil, salt, garlic, jalapeno, and cilantro. Blend the mixture until totally combined.
  • Add the chicken to a large plastic bag and pour in the lime-tequila mixture. Seal the bag and marinate in the fridge for several hours or overnight.
  • Remove the chicken from the bag and grill it over medium-high heat, flip the chicken and continue grilling until chicken is cooked through, about 5 min per side. Slice the chicken and server over the cilantro and lime rice.
  • Top with diced tomatoes, jalapenos, cilantro and lime slices.

5 California (dried Anaheim) chiles, stemmed and seeded
3 3/4 cups chicken broth, divided
4 tablespoons (1/2 stick) unsalted butter, melted
3 tablespoons tequila
Salt
1 (14-pound) turkey, giblets removed and reserved
1/3 cup apricot preserves (recommended: Bon Maman)
2 teaspoons dried oregano, crumbled
2 cloves garlic
Freshly ground black pepper
Dried apricots, California chiles, fresh cilantro, for garnish.

Steps:

  • Preheat the oven to 425 degrees F.
  • Place the chiles and 2 cups of chicken broth in medium saucepan. Bring to a boil, and then turn off the heat. Let the chiles stand for 5 to 10 minutes to soften.
  • Mix 3/4 cup of chicken broth, melted butter, and tequila in a small metal bowl. Season with salt. Using a kitchen flavor injector, inject the mixture into the thighs, breasts, and legs of the turkey. If the mixture solidifies, place the bowl over a gas burner or in a warm oven until the butter melts.
  • Place the turkey on a rack set in a large roasting pan. Tuck the wing tips under the turkey body. Tie the legs together with kitchen twine. Place the giblets in the pan.
  • Transfer the chiles with their liquid to a blender. Add the apricot preserves, oregano, and garlic and process until smooth. Season with salt and pepper, to taste.
  • Transfer the chile puree to a medium saucepan. Rub about 1 cup of the chile puree all over the turkey (reserve the rest for the sauce at the end), working some of it between the breast and the skin. Season the turkey generously with salt and pepper.
  • Add 1 cup broth to the roasting pan and roast for 45 minutes.
  • Reduce the oven temperature to 350 degrees F. Continue roasting the turkey until a thermometer inserted into thickest part of thigh registers 165 degrees F, about 2 hours longer, basting every 20 minutes with drippings. Cover the turkey loosely with foil if it begins to brown.
  • Transfer the turkey to a platter, reserving the pan juices, and allow to rest while preparing the sauce.
  • Strain the pan juices into a large, heavy saucepan and discard any solids. Spoon the fat from the top of the liquid and discard. Add the remaining chile puree to the saucepan and stir until well combined. Boil over high heat until slightly thickened, about 10 minutes. Season with salt and pepper, to taste.
  • Garnish the turkey with dried apricots, dried chiles, and fresh cilantro. Serve with the chile puree alongside.
