Sometimes simple is better. To my taste buds this applies to apple pie. There is nothing in this pie to overpower or detract from the apples. The best pie apples are ones you probably wouldn't pick to eat out-of-hand. For most people, they're too tart and too hard. Use those for your pies. Prep time does not include making pie crust.

6 cups firmly textured tart apples
1 tablespoon lemon juice (optional)
1 cup sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1 dash nutmeg
2 tablespoons butter
2 (9 inch) pie crusts

Steps:

  • Preheat oven to 425°F.
  • Peel, core and thinly and thickly slice the apples; toss with lemon juice if using.
  • Combine and mix apples, sugar, flour, cinnamon and nutmeg; pour into crust-lined pie plate; dot with butter.
  • Place top crust, seal and vent; cover edges of crust with narrow band of aluminum foil, shiny side out.
  • Bake at 425°F for 20 minutes; reduce temperature to 375°F and bake another 30-40 minutes until filling is bubbling and crust is nicely browned.
  • If necessary remove foil last 10 minutes to brown edges.

Flaky pie crusts that are pretty close to perfect. Many first prize ribbons in my drawer are due to this recipe. When I was catering fulltime, we made about 6 pies every day, and we always used this recipe from the Tenderflake box.

Yield 6 pie shells or 3 double pie shells

Number Of Ingredients 6

5 1/2 cups all-purpose flour
2 teaspoons salt
1 lb tenderflake lard
1 egg, stirred slightly
1 tablespoon vinegar
7/8 cup cold water

Steps:

  • Stir the flour and salt together.
  • Cut in the lard with a pastry blender or 2 knives until the shortening is in pea size pieces.
  • In a measuring cup, combine the egg and vinegar.
  • Add enough cold water to make one cup.
  • Stir the liquid into the flour mixture, adding just enough to make the dough cling together.
  • Stir the water in with a wooden spoon until mixed thoroughly, then gather the dough into a ball, and separate into 6 portions.
  • Cover and refrigerate for one hour, you can chill overnite, covered, providing you leave it at room temp for 15 mins before rolling.
  • Lightly flour surface and roll into circles, then pat the dough into pie pans, following pie recipes. Be careful not to stretch the dough.
  • This is also a good dough for tarts, but you will want to roll the dough a little thicker than you would for pies.

⅔ cup lard
5 tablespoons ice water, or as needed

Steps:

  • Whisk flour and salt together in a large bowl. Cut in the lard with a knife or pastry blender until the mixture resembles coarse crumbs. Sprinkle in water, 1 tablespoon at a time, blending gently with a fork or pastry blender until all flour is moistened and dough almost cleans the sides of the bowl. Divide the dough in half and shape flattened rounds. Wrap in plastic and refrigerate for at least 1 hour.

5 c all purpose or pastry flour
2 tsp salt
1 lb tenderflake lard (= 2 cups)
1 Tbsp vinegar
1 large egg, lightly beaten
water

Steps:

  • 1. Step 1 - Mix together the flour and salt. Cut in lard with a pastry blender or 2 knives until the mixture resembles coarse oatmeal.
  • 2. Step 2 - In a 1 cup measure, combine the vinegar and egg. Add water to make the 1 cup measure full. Gradually stir liquid into the flour/lard. Add only enough liquid to make dough cling together. You will probably have some liquid left over. You can use your pastry blender or knives to mix the liquid in well.
  • 3. Step 3 - Gather this into a ball and divide it into 4 portions. Be sure to cover whatever you are not using at the moment with saran wrap to keep from drying out. Roll out each portion as you need it on a lightly floured surface or in between 2 pieces of waxed paper. *NOTE* for pie shell you obviously just roll out one shell at a time. Make it bigger than the pie plate so there is plenty to edge the pan with. If you are making tarts, I use the lid of a one lb margarine tub to use as a cutter. Perfect size for muffin tins.
  • 4. Step 4 - Once rolled out, transfer to a pie plate. The easiest way to do this is to roll the dough a bit on your rolling pin (to about the half way mark) then lift it on the pin, put the rolling pin at the halfway mark on the pie plate and unroll. Lifting it and depositing it this way makes for less opportunity for any crust to tear. (You can try to transfer it from the waxed paper, but it may prove more difficult.
  • 5. Step 5 - Gently ease the pie dough into the shape of the pan. Make sure that the dough fits smoothly (without air bubbles) on the bottom and sides then trim off the excess.
  • 6. Imperfections are easily fixed! Roll a small portion of excess dough out and cut a piece large enough to cover the needed area. Simply place the patch over the imperfection and smooth the dough into place. To keep extra dough if leftovers simply wrap it in saran wrap and it will keep for a couple of days in the fridge or you can freeze this dough! For a double crusted pie, don't flute the edges of the bottom crust. After filling pie with fruit, etc., make 2 or 3 small slices in the center of the 2nd rolled out pie crust then repeat step 4 with 2nd pie crust, trim excess crust, then flute edges of both crusts together.
  • 7. Bake pie according to your recipe.
  • 8. Note: For a pre-baked pie shell like for lemon meringue be sure to poke a fork all over the bottom shell then bake for about 10-15 minutes at 350°F. Watch so it doesn't get too well done. Poking the pastry will help keep it from rising in the bottom and getting air bubbles in it. This step is not necessary for pies that you fill and bake in one step, such as fruit pies. For strip top or criss-cross crusts, cut rolled out dough in strips and pattern over filling and crimp to edges

1 pound Tenderflake lard
1 tablespoon vinegar
1 egg lightly beaten
ice water

Steps:

  • Whisk together flour and salt.
  • Cut in Tenderflake with pastry blender or 2 knives until the lard is pea sized within the flour.
  • In a 1 cup measure combine the vinegar and egg. Add the ice water to make 1 cup.
  • Gradually stir liquid into Tenderflake mixture, adding only enough liquid to make dough cling together.
  • Gently gather the dough into a ball and divide into 6 equal portions.
  • Wrap the portions and refrigerate for 15-30 minutes (if you are using right away) or freeze for future use.
  • When you are ready to use and the dough has chilled for at least another 15 minutes, roll out each portion on a lightly floured surface. If the dough is sticking, chill again for another hour or two. The dough must be cold to be flaky!
  • Transfer the prepared dough to pie plate.
  • Trim and flute shells or crusts and bake according to your pie recipe. Yield: 3 9-inch double crust pies or 6 pie shells.

The recipe for the flakiest pie pastry has been found on the side of the Tenderflake® box almost since the beginning of time. My grandmother used it, my mother used it. It has been used by generations of women on the Canadian prairies and is undoubtedly the "go-to" recipe for the best-ever pie pastry. I sometimes use 1/2 lard and 1/2 butter for some recipes. I also use 1/2 whole wheat flour and 1/2 white flour for other recipes. Either way, the formula cannot be messed with if you want a flaky crust. Yield: 3 9-inch double crust pies or 6 pie shells.

Steps:

  • Whisk flour and salt; cut in ice cold fat until it is pea sized or looks like slow cooking raw oats
  • In a 1 cup liquid measure, combine vinegar and egg; add ice water to make 1 cup
  • Gradually pour liquid around the edges of the mixture, mixing by hand, adding only enough for dough to cling together
  • Form gently into a ball; divide into 6 equal portions on counter
  • Wrap and label portions
  • Refrigerate for 15-30 minutes if you are using right away, or
  • Freeze for future use by placing wrapped pastry dough in container, tightly sealed
  • When ready to use, roll out each portion on lightly floured surface; If pastry dough is sticking, chill for another hour or two
  • Transfer rolled pastry dough to pie plate
  • Trim and flute shells or crusts and bake according to your pie recipe

10 whole Granny Smith apples (cored, and cut into wedges)
14.1 ounces pre-made pie crusts (One box (2 crusts))
1/4 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 tablespoon fresh lemon juice
1/2 cup white sugar
1/3 cup light brown sugar
3 tbsps. butter (cubed )
1 egg (whisked )

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Line the bottom of your pie plate with one crust. Be sure to spread it out and then gently pinch the edges to crimp; set aside.
  • Peel, slice apples almost to the core, and then slice them in thin slices. You do not want them thick or too chunky because they will not bake properly.
  • Add apple slices to a large mixing bowl and toss with flour, both sugars, cinnamon, nutmeg, and lemon juice; combine.
  • Carefully pour spiced apples over the bottom pie crust and spray them out evenly. They will look pretty high.
  • Add butter cubes around the top layer of the pie.
  • Unwrap the pie top crust and carefully cover the pie. Pinch pie edges to crimp and seal the pie.
  • Brush on the mixed egg wash on all surfaces of the top pie. You will not use the whole egg.
  • Using a BBQ skewer, poke 4 holes in your pie center for venting. You can also make 4 slits with a knife.
  • Bake pie for 45 minutes with a pie shield to prevent the crust edges from over-browning.
  • Allow pie to cool for at least 3 hours before cutting into it. Do not cover the pie when warm or the crust will get soggy. Only cover it once the pie is 100% cooled.
