BEST TOFFEE EVER - SUPER EASY
Chocolate and almonds top off a rich buttery toffee. A simple recipe that you could easily remember and whip up any time. I always get compliments and requests for more. Use any type of nut that you like in place of the almonds.

Steps:
- In a large heavy bottomed saucepan, combine the butter, sugar and salt. Cook over medium heat, stirring until the butter is melted. Allow to come to a boil, and cook until the mixture becomes a dark amber color, and the temperature has reached 285 degrees F (137 degrees C). Stir occasionally.
- While the toffee is cooking, cover a large baking sheet with aluminum foil or parchment paper.
- As soon as the toffee reaches the proper temperature, pour it out onto the prepared baking sheet. Sprinkle the chocolate over the top, and let it set for a minute or two to soften. Spread the chocolate into a thin even layer once it is melted. Sprinkle the nuts over the chocolate, and press in slightly. Putting a plastic bag over your hand will minimize the mess.
- Place the toffee in the refrigerator to chill until set. Break into pieces, and store in an airtight container.

- Line a 15x10x1-in. baking pan with heavy-duty foil. Arrange saltines in a single layer on foil; set aside., In a large heavy saucepan over medium heat, melt butter. Stir in sugar. Bring to a boil; cook and stir for 1-2 minutes or until sugar is dissolved. Pour evenly over crackers., Bake at 350° for 8-10 minutes or until bubbly. Immediately sprinkle with chocolate chips. Allow chips to soften for a few minutes, then spread over top. Sprinkle with toffee bits. Cool., Cover and refrigerate for 1 hour or until set. Break into pieces. Store in an airtight container.

I'm sure there are many versions of this recipe already posted to Zaar, but I wanted to keep mine safe here. A coworker brought this into work one day, and it disappeared FAST.

- Preheat oven to 400°F.
- Line a 15 x 10 x 1 inch jelly roll pan with tin foil. Lightly spray the foil with a non-stick cooking spray.
- Place the crackers salty side up in the prepared pan.
- In a saucepan, boil the butter and sugar 2 to 3 minutes, stirring constantly. Remove from heat and stir in almond extract.
- Pour the mixture evenly over the crackers so that all pieces are covered, and bake for 4 to 6 minutes.
- Remove from the oven, top with the candy bar pieces, and spread them evenly as they begin to melt.
- Cool slightly and transfer to wax paper. Allow to cool completely.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.
PINE BARK STEW - CATFISH STEW
This stew is so named because it was prepared on the bank of the river where the fish were caught and pine bark is used to build a quick fire. The stew is also sometimes served on large smooth pieces of pine bark. A food processor makes quick work of the mincing (the original recipe calls for forcing the vegetables through a food mill or grinder). - Melt butter over low. Spread foil over cookie sheet and brush with some of the melted butter.
- Add sugar, corn syrup, water and nuts to butter in pan and slowly bring to a boil. (Turn heat up by 1/2 increments every few minutes until reaches medium low.).
- Watch for 298 degrees (soft crack stage) on a candy thermometer. pour onto the foil and quickly spread and reshape.
- Let set for two minutes, then immediately sprinkle half (measure!) of the chocolate chips on top.
- After another 2 minutes, spread the now softened chocolate chips and sprinkle with half the nuts.
- Flip onto foil covered second cookie sheet and immediately sprinkle remaining chocolate chips on top. Wait 2 minutes then spread chocolate and sprinkle nuts.
- When completely cool, break into pieces and store in tightly covered container.

- In heavy saucepan, combine butter, sugar, water, and salt.
- Cook to hard-crack stage (300°F) stirring with a WOODEN SPOON constantly and watching carefully. Do not try a plastic spoon, it will melt into your delicious candy!
- Immediately pour into ungreased 13"x9" pan.
- Cool until hard.
- Melt chocolate over hot, but not boiling water.
- Spread over toffee; sprinkle with nuts, pressing them into chocolate.
- Let stand 2-3 hours or chill 30 minutes.
- Break into bite-size pieces.
