CHORIZO CROQUETAS WITH AïOLI

Chorizo croquetas with aïoli image

Try a new way to use chorizo, with these fabulous croquetas served with garlic mayonnaise. They require a little effort, but make a great starter or party snack

Provided by Diana Henry

Categories     Starter

Time 1h

Yield Makes about 25 croquetas

Number Of Ingredients 14

50g butter
½ medium onion, finely chopped
70g plain flour
435ml whole milk
135g chorizo, cut into small chunks
50g grated manchego
2 tbsp finely chopped parsley
3 eggs, lightly beaten
150g dry breadcrumbs
groundnut oil, for frying
4 garlic cloves, crushed
2 large egg yolks (freeze the whites for another recipe)
250-300ml extra virgin olive oil
squeeze of lemon juice

Steps:

  • Heat the butter in a pan over a medium-low heat, and fry the onion for 8 mins until softened but not coloured. Stir in the flour until it's incorporated into the fat and onions. Reduce the heat to low and cook for 4 mins, stirring - don't let it brown. Warm the milk in a medium pan over a low heat until steaming.
  • Remove the onion mixture from the heat and add the milk, a little at a time, stirring after each addition until smooth. When all the milk has been added, return the pan to medium-low heat and bring to the boil, stirring constantly. Reduce the heat to low and cook for 6 mins, stirring often to prevent it from catching. Set aside.
  • Cook the chorizo in a frying pan over a medium heat for 3 mins - you don't need any fat, as fat will be released from the chorizo as it cooks. Stir the fried chorizo into the sauce along with the cheese, parsley and seasoning. Pour the sauce into a dish and leave to cool completely, then cover and chill for at least 3 hrs, or overnight.
  • Next, make the aïoli. Put the garlic and the egg yolks in a bowl and beat with an electric whisk while slowly adding the oil, a drop at a time. As the mixture starts to thicken, you can add the oil more quickly, in greater amounts. Squeeze in some lemon juice and season, tasting as you go to ensure the flavour is balanced (you can also add a drop of white wine vinegar as well as lemon juice, if you like). Cover and chill until ready to serve.
  • Using wet hands, roll the chilled chorizo mixture into walnut-sized balls. Put the egg in a shallow bowl and the breadcrumbs on a shallow plate. Roll the croquetas in the egg, then crumbs, making sure each is well coated. Put the croquetas on a baking tray, then cover loosely and chill for a few hours to firm up, so they don't break up when you fry them.
  • Pour the groundnut oil into a pan until it is no more than a third full, and heat to 180C, or until a cube of bread dropped in turns golden within 30 seconds. Deep-fry the croquetas in batches for 2-3 mins per batch, keeping an eye on the temperature. If the oil is too hot, the croquetas will darken on the outside before the inside is hot - they should be golden. Use a slotted spoon to transfer the croquetas to a plate lined with kitchen paper, leave to drain for a few minutes, then serve with the aïoli.

ROASTED SQUID WITH CHORIZO AND PIMENTóN

Roasted Squid With Chorizo and Pimentón image

Everyone knows about fried calamari, but pan-roasted is a different beast entirely. This easy technique begins on the stovetop and finishes in a hot oven. In less than 10 minutes, you have savory roasted whole-body squid, made spicy with Spanish chorizo and a dash of pimentón, crisp on the outside and juicy and tender in the middle. Eat with a knife and fork or slice into rings for a warm salad.

Provided by David Tanis

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 9

2 pounds small yellow-fleshed potatoes, preferably Yukon Gold
Salt and pepper
1 1/2 pounds cleaned squid, both bodies and tentacles
Extra-virgin olive oil
4 ounces Spanish chorizo, diced (about 3/4 cup)
Pinch of red pepper flakes
8 ounces arugula, baby spinach or tender dandelion leaves (4 large handfuls)
Pimentón (Spanish paprika) for dusting
3 tablespoons chopped Italian parsley

Steps:

  • Put potatoes in a pot of well-salted water and bring to a simmer. Let simmer until tender, about 20 minutes. Drain; keep warm.
  • Place oven rack in the top position and heat oven to 475 degrees. Rinse squid inside and out, then drain and pat dry. Cut tentacles in half if large, but leave squid bodies whole. Season on both sides with salt and pepper.
  • Put a large cast-iron skillet over high heat. When hot, add 2 tablespoons olive oil and the chorizo. Let chorizo sizzle. Add red pepper flakes, then add squid all at once in 1 layer. Do not crowd squid; use 2 pans if necessary. Stir to coat squid with oil.
  • Immediately transfer pan to top rack in hot oven. Let roast for 6 to 10 minutes, depending on size of squid. They are ready when bodies are puffed and starting to brown and crisp at edges. Pour off and reserve pan juices and chorizo.
  • To serve, slice potatoes and, if you like, cut squid into rings. Arrange greens, potatoes and squid on a large platter, dust lightly with pimentón and sprinkle with parsley. Spoon pan juices and chorizo over everything.

BAKED COD WITH A CHORIZO CRUMB & LEMON AïOLI

Baked cod with a chorizo crumb & lemon aïoli image

White fish and chorizo are a classic Spanish pairing. The spicy sausage adds a lovely rich smokiness to the meaty cod

Provided by Good Food team

Categories     Dinner

Time 25m

Number Of Ingredients 9

175g cooking chorizo , skin removed, cut into chunks
50g slightly stale breadcrumb
25g blanched almond , toasted and roughly chopped
zest ½ lemon
1 ½ tbsp olive oil , plus extra for greasing
6 boneless, skinless sustainable cod fillets (about 175g each)
6 tbsp good-quality mayonnaise
½ garlic clove , crushed
2 tsp lemon juice

Steps:

  • Tip the chorizo into a frying pan and cook over a medium heat until it releases its oil and becomes crisp in places. Meanwhile, make the aïoli: stir together the ingredients with some seasoning, then chill.
  • Put the chorizo and its oil in a food processor and pulse until broken into small chunks. Add the breadcrumbs, almonds, lemon zest, seasoning and half the olive oil, then blitz to a crumb.
  • Heat oven to 200C/180C fan/gas 6. Put the cod fillets on a lightly greased baking tray, then brush with the remaining oil. Heap the crumbs onto the fish and pat down so that the fillets are well covered. Let them firm up in the fridge for at least 20 mins.
  • When you're ready to cook, pop the fish in the oven for 10-15 mins, depending on the thickness of your fillets, until the flesh has turned opaque and the chorizo crumb is golden.
