The Best Tuna Salad image

While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole-grain mustard
Freshly ground black pepper
Freshly squeezed lemon juice (optional)

Steps:

  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.

A tempting tempeh vegetarian tuna salad! The powdered kelp helps give this salad a taste of the sea. Adapted from From the Heart of the Harvest Cafe cookbook and also Vegan Vittles, Second Helpings cookbook. Great in sandwiches, rolled up in tortillas or lettuce leaves with sprouts and vegetables, on crackers, etc. A little information on tempeh from Wickpedia: Tempeh, or Tempe in Javanese, is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form. It is especially popular on the island of Java, where it is a staple source of protein. Like tofu, tempeh is made from soybeans, but tempeh is a whole soybean product with different nutritional characteristics and textural qualities. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber and vitamins compared to tofu, as well as firmer texture and stronger flavor. Tofu, however, is thought to be more versatile in dishes. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine; some consider it to be a meat analogue. Even long before people found and realized its rich nutritional value, tempeh was referred to as "Javanese meat."

8 ounces tempeh, cut in 1/4-inch cubes
1 1/2 tablespoons cold water
1 cup celery, finely diced
1/4 cup carrot, finely grated
1/4 cup red onions, finely chopped or 1/4 cup green onion
4 tablespoons fresh parsley, minced
1 teaspoon kelp
1/8 teaspoon salt (to taste) (optional)
1/8 teaspoon black pepper (optional)
1/2-3/4 cup vegan mayonnaise or 1/2-3/4 cup regular mayonnaise
1/4 teaspoon lemon juice
1 teaspoon mustard
1/2 teaspoon curry (to make it more like a chicken salad) or 1/2 teaspoon poultry seasoning (to make it more like a chicken salad)

Steps:

  • Steam tempeh 20 minutes. Place in bowl and add cold water. Mash thoroughly using a fork.
  • Stir in carrots, onioins, parsley, kelp, mayonnaise, lemon juice, mustard and dill.
  • Place in container, cover and chill in refrigerator befroe serving. Enjoy!
  • Will keep up to 3 days.

The crispy, crunchy tempura kale in this salad takes the place of breadcrumbs, adding a filling bite that will have you going back for more. And the best part? The salad is totally #wasteless, using the whole kale bunch-stems and all.

3/4 cup almonds
7 tablespoons vegetable oil, divided
4 cups shiitake mushrooms (about 9 ounces), stemmed, quartered
1 teaspoon kosher salt, divided, plus more
Canola oil (for frying; about 2 quarts)
2 bunches Tuscan kale (about 1 3/4 pounds), stems removed and cut lengthwise into 1" pieces, leaves reserved
3/4 cup cold sparkling water
1/2 cup plus 2 tablespoons rice flour, divided
1/4 cup rice vinegar
2 tablespoons honey
2 tablespoons white miso
1 tablespoon toasted sesame oil
1/8 teaspoon white pepper, plus more
1/2 cup golden raisins, divided
Special Equipment
A deep-fry thermometer

Steps:

  • Preheat oven to 350°F. Toast almonds on a rimmed baking sheet, tossing halfway through, until golden brown, 8-10 minutes. Let cool, then coarsely chop; set aside.
  • Meanwhile, heat 1 Tbsp. vegetable oil in a large heavy pot over medium-high until oil begins to glisten, about 1 minute. Cook mushrooms, stirring occasionally, until golden brown and tender, about 5 minutes. Season with 1/4 teaspoon salt and transfer to a plate; set aside.
  • Wipe out pot and pour in canola oil to a depth of 2"; fit pot with thermometer. Heat oil over medium-high until thermometer registers 350°F.
  • Meanwhile, cut 3 cups kale leaves into 1" pieces. Thinly slice remaining leaves and set aside separately.
  • Combine sparkling water, 1/2 cup rice flour, and 3/4 tsp. salt with a fork in a medium bowl. Toss 1" piece kale leaves, 2 1/4 cups kale stems, and remaining 2 Tbsp. rice flour in another medium bowl. Pour sparkling water mixture over kale, then massage into kale with your hands, coating completely.
  • Working in batches, fry battered kale until golden, about 2 minutes per batch. Transfer to paper towels and season with salt.
  • Blend vinegar, honey, miso, sesame oil, 1/8 tsp. white pepper, 3/4 cup kale stems, and remaining 6 Tbsp. vegetable oil in a blender until smooth.
  • Massage three-quarters of the dressing into reserved sliced kale leaves in a large bowl. Add reserved mushrooms, three-quarters of the tempura kale, and half of the raisins and reserved almonds; toss to combine. Season with salt and white pepper to taste. Transfer to a platter, then top with remaining raisins, almonds, and tempura kale. Drizzle with remaining dressing.

  • Dressing can be made 1 day ahead; cover and chill. Kale can be prepped 1 day ahead; store in airtight containers and chill.

2 7/8 ounces dried soba noodles
1/2 gallon water, to boil
1/2 cup noodle soup base (x4 concentrate)
1 cup water, for noodles soup
2 jumbo shrimp
4 tablespoons tempura flour
3 tablespoons water
chopped green onion
wasabi

Steps:

  • To make shrimp tempura pull off the outhershell.Keep the last segment of shell and tail tip on.
  • Devein the back of shrimp with skewer.
  • Make a couple of slits underside.Hold the shrimp with both hand bend it backward to make it straight.
  • Heat the oil to 340F for tempura and boil the water in a large pot for boil noodles.
  • In a bowl put tempura flour add cold water and stir it dont mix too much.
  • When oil is getting close to 340F put some flour and coat the shrimp and dip it in batter and fry(usually 2-3min).
  • Put soba noodle into the boiling water boil it until cooked(usually 5min).
  • While boilling combine the noodle soup base and water if you want hot noodles,warm up it.
  • Strain away the water, if you want to cold noodles rince them in running water.
  • Serve the noodles and Tempura with green onion with wasabi,and mentsuyu.
