Tourtière: A French-Canadian Meat Pie Recipe image

Tourtière, also known as pork pie or meat pie, is a combination of ground meat, onions, spices, and herbs baked in a traditional piecrust.

2 cups unbleached all purpose flour
1/2 teaspoon kosher salt
2/3 cup butter or lard (chilled)
6-7 tablespoons ice cold water
2 large Russet or Yukon Gold potatoes (about 1 pound)
1 tablespoon extra virgin olive oil
1 small onion (finely chopped)
1 clove garlic (finely minced)
1 pound ground pork
1 pound ground beef
1/2 teaspoon Bells poultry seasoning (or your favorite poultry seasoning)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon kosher salt
1/8 teaspoon pepper
1 large egg (scrambled for glazing)

Steps:

  • Combine flour and salt in a large bowl.
  • Cut in butter or lard until mixture is a rough crumbly texture.
  • Add ice water one tablespoon at a time and mix just until the dough comes together.
  • Shape the dough into a ball, flatten, wrap, and chill in the refrigerator. While pastry is chilling, prepare the filling.
  • Peel and cut potatoes into 2-inch chunks, add them to a medium saucepan, and fill with water until it covers the potatoes by 2-inches.
  • Bring the saucepan to a boil over high heat and then reduce the heat to medium-high and boil until the potatoes are until tender, about 12 minutes.
  • Reserve 1/2-cup of potato water and drain the rest. Mash potatoes and set aside.
  • Heat a large skillet over medium heat.
  • Add olive oil, onions, and garlic, and sauté until softened, about 3 minutes.
  • Add the ground beef and pork and cook until the meat is no longer pink. Drain off excess fat.
  • Add the poultry seasoning, cinnamon, cloves, nutmeg, salt, pepper, and reserved potato water. Mix well and simmer for about 10 minutes until the liquid is absorbed.
  • Remove the skillet from the heat, stir in mashed potatoes, and set the filling aside to cool slightly.
  • Preheat oven to 400°F/205°C
  • On a lightly floured surface, divide dough in half and flatten one ball of dough with your hands. Roll dough to about 12-inches in diameter to fit a 9-inch pie pan.
  • Place the pastry into the pie plate and add the meat filling. Brush around the outer edge of the pastry with the beaten egg.
  • Roll out the top pastry and place on top of the filling. Fold the top crust under the bottom crust and pinch or flute the edges. Brush with egg wash and cut vent holes.
  • Bake the pie in a preheated oven for 30 to 35 minutes or until the pastry is golden brown.
  • Remove the tourtière from oven and let it cool at least 10 minutes before serving.
  • Yield: Makes 1 pie, about 8 servings.

1 onion, diced
1 clove garlic, minced
½ cup water
1 ½ teaspoons salt
½ teaspoon dried thyme, crushed
¼ teaspoon ground sage
¼ teaspoon ground black pepper
⅛ teaspoon ground cloves
1 recipe pastry for a 9 inch double crust pie

Steps:

  • In a saucepan, combine pork, beef, onion, garlic, water, salt, thyme, sage, black pepper and cloves. Cook over medium heat until mixture boils; stirring occasionally. Reduce heat to low and simmer until meat is cooked, about 5 minutes. Allow to cool to room temperature.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Spoon the meat mixture into the pie crust. Place top crust on top of pie and pinch edges to seal. Cut slits in top crust so steam can escape. Cover edges of pie with strips of aluminum foil.
  • Bake in preheated oven for 20 minutes; remove foil and return to oven. Bake for an additional 15 to 20 minutes, or until golden brown. Let cool 10 minutes before slicing.

I'm a seventh-generation French Canadian, and my ancestors started the tradition of serving this meat pie on Christmas Eve. One year I didn't make it, and my daughter and I felt something was missing. The savory pie goes well with salad and fresh rolls for a lighter meal, and it's good served in small portions with turkey and all the trimmings, too.

1-1/4 pounds ground pork
1/2 pound ground beef
1/4 pound ground veal
1 cup grated peeled potatoes
1/2 cup grated onion
3 garlic cloves, minced

1/4 teaspoon rubbed sage
1/8 teaspoon ground cloves
1/4 cup plus 2 tablespoons water, divided
1/4 cup dry bread crumbs

Steps:

  • In a large skillet over medium heat, cook the pork, beef, veal, potatoes and onion until meat is no longer pink; drain. Stir in the garlic, seasonings and 1/4 cup water. Bring to a boil. Reduce heat; cover and simmer for 15 minutes, stirring frequently., Remove from the heat; cool to room temperature. Stir in bread crumbs. Combine egg and remaining water; stir into meat mixture. , Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Fill with meat mixture. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Cover edges loosely with foil., Bake 15 minutes. Remove foil. Reduce heat to 375°; bake 30-35 minutes or until crust is golden brown.

2 pounds lean ground pork
1 cup water
1 cup chopped celery
1/2 cup chopped celery leaves
2 large onions, chopped
2 cloves garlic, chopped
1/2 cup chopped fresh parsley
1 tablespoon chopped fresh savory (or 1 teaspoon dried savory)
Pinch each ground cinnamon and cloves
Salt and freshly ground pepper
Pastry for 2 double-crust, 8-inch pies (see below)
1 egg yolk beaten with 1 tablespoon milk

Steps:

  • In a large, heavy saucepan over medium heat, combine pork, water, celery and leaves, onions, garlic, parsley, savory, cinnamon, cloves, and salt and pepper to taste. Cook, stirring occasionally, for 30 minutes, adding more water, if necessary, to prevent mixture from drying. Adjust seasoning, if necessary. Let cool.
  • Line two 8-inch pie plates with pastry and fill with meat mixture. Roll out top crusts, cutting a generous vent in the centre of each. (Mme Fleur-Ange Rochon always cut her vents in the shape of an evergreen tree.) Cover each pie with top crust, trim pastry, crimp the edges to seal, and cut small steam vents. Brush top of pastry with egg yolk and milk mixture.
  • Bake pies in a preheated 400 degree F oven for 35 to 40 minutes or until crust is golden. Serve either hot or cold with pickles or relish.
  • Tip: Meat pies may be made ahead and refrigerated. Unbaked pies may be refrigerated for 24 hours, or frozen. Thaw in refrigerator before baking.
  • For Pastry:
  • In a bowl, mix 2 cups sifted, all-purpose flour with 1/4 teaspoon salt. With pastry blender or 2 knives, cut in 3/4 cup chilled, cubed shortening or lard until mixture resembles coarse crumbs. Measure 1/4 to 1/3 cup ice water. Sprinkle over mixture, a spoonful at a time, stirring with a fork, adding just enough water so dough holds together. Shape into a ball, press into a flat disc, wrap in plastic wrap and chill for 1 hour. Leftover pastry can be frozen for later use.

This is a great dish to make around the holidays because it is not only great served hot but is every bit as good warm or at room temperature. Just set it out when guests arrive and watch it disappear. I would say it makes great leftovers but it has never made it that far.

2 cups sifted all-purpose flour, plus more for flouring
1/4 teaspoon salt
3/4 cup cubed lard (preferably leaf lard), chilled
1/4 to 1/3 cup ice water
8 ounces bacon, cut into medium dice
2 pounds ground pork
Salt
1 pound russet potatoes, peeled and cut into large dice
2 cups chopped celery
1/2 cup chopped celery leaves
1/2 cup chopped fresh parsley
1 tablespoon chopped fresh savory or equal parts chopped fresh rosemary and oregano
2 cloves garlic, chopped
2 large onions, chopped
Pinch ground cinnamon
Pinch ground cloves
1 egg yolk beaten with 1 tablespoon milk

Steps:

  • For the double crust leaf lard pastry: In a bowl, mix the flour and salt together with 2 knives. Cut in the lard until the mixture resembles coarse crumbs. Sprinkle the ice water over the mixture, a spoonful at a time, stirring with a fork and adding just enough water so it holds together. Shape into a ball, press into a flat disc, wrap in plastic wrap and chill for 1 hour.
  • For the pork filling: Heat a 10-inch cast-iron skillet over medium heat. Add the bacon and cook until crisp; remove to a plate. Add the pork and a pinch of salt and brown for 2 minutes; remove to a plate. Add the potatoes, celery, celery leaves, parsley, savory, garlic and onions and sweat for 3 to 5 minutes. Deglaze the skillet with 1 cup of water, scraping up the brown bits from the bottom with a wooden spoon. Add the pork and bacon back to the skillet with the cinnamon, cloves and a large pinch of salt, and simmer until the liquid has evaporated, 20 minutes.
  • While the mixture is simmering, preheat the oven to 400 degrees F. Lightly flour a work surface. Roll out the chilled pastry into two 13-inch rounds for a 10-inch double-crust pie, or into one 14-inch round for a single-crust pie. If using the double-crust method, line a 10-inch pie plate with one of the pastry rounds and fill with the meat mixture; cover with the remaining pastry. Trim and crimp the edges to seal, and cut small steam vents. Brush the top of the pastry with the egg yolk and milk mixture. If using the single-crust method, place the meat mixture in a 10-inch pie plate and cover with the single pastry round. Trim, press the edges into the sides of the pan and cut small steam vents in the center. Brush the top of the pastry with the egg yolk and milk mixture. Bake until the crust is golden, 35 to 40 minutes. Let cool for 30 minutes and serve warm.

1 1/2 pounds cooked boneless beef chuck roast, cut into 1/2-inch cubes (recipe follows for Roasting Pork Shoulder and Beef Chuck)
1 1/2 pounds cooked boneless pork shoulder roast, cut into 1/2-inch cubes (recipes follows)
1 cup yellow onions, chopped
4 garlic cloves, chopped
1 tablespoon unsalted butter
1 cup red burgundy wine
1 cup button mushrooms, chopped
1 small bunch fresh basil, chopped
1/2 small bunch fresh parsley, chopped
1 sprig fresh thyme
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 cup demi-glace
3 pounds purchased puff pastry
1 egg, lightly beaten with 1 tablespoon water

Steps:

  • In a large skillet, saute the precooked beef and pork cubes, onions and garlic in the butter over high heat for 5 minutes, until the onions are golden brown.
  • Add the red wine to deglaze the pan, loosening any browned bits on the bottom of the pan with a wooden spoon. Add the mushrooms, basil, parsley, thyme, salt, pepper, and cook until the liquid has evaporated.
  • Stir in the demi-glace and cook about 5 minutes more, until all liquid has evaporated again. Remove from the heat. Spread the mixture out onto a baking sheet and let it cool for about 10 minutes. Refrigerate the mixture about 1 hour to cool completely. Preheat oven to 450 degrees F.
  • On a lightly floured surface, roll out the puff pastry to 1/8-inch thickness. Cut out 6 (6 to 8-inch) squares and brush the edges with the egg mixture. Place 1 cup of the meat mixture in the center of each square. Fold each square over diagonally to form a triangle and press the edges firmly to seal. Using a fork, gently prick the center of each triangle to allow steam to escape. Lightly brush the edges again with the egg mixture. Arrange the triangles 2-inches apart on a greased baking sheet.
  • Bake for 8 to 10 minutes, until golden brown.

THE SHAKESPEARE TAVERN'S SHEPHERD'S PIE

I'll be surprised if this isn't the best shepherd's pie you've ever eaten! This recipe is adapted from the New American Shakespeare Tavern in Atlanta, Georgia. I would like to point out that the chef at the Tavern likes to clarify that in England this would be called cottage pie because it is made with beef, not mutton (lamb) - "thus the need for the shepherd." Most Americans are more familiar with the name, shepherd's pie. No matter what you call it, this pie is something special ...chuck roast slow-cooked until it's falling apart tender with delicious vegetables and herbs, topped with garlic mashed potatoes. It smells so heavenly while it's cooking that I guarantee your family (and friends and neighbors) will gather around the oven waiting for you to serve it. Although, this shepherd's pie is fairly easy to prepare, make it on a day that you have some extra time, since it is a little time consuming...but, Oh, So Well Worth It!!!!!!

1 tablespoon vegetable oil
2 teaspoons vegetable oil, divided
2 cups diced onions
2 -3 large carrots, peeled and cut in half lengthwise and then across into 1-inch chunks
1/2 bunch fresh celery, chopped (about 1 1/2 cups)
2 garlic cloves, minced
2 1/4 lbs beef chuck roast, trimmed and cut into 1-inch pieces
salt and pepper, to taste
2/3 cup white wine, divided
1 cup canned low sodium chicken broth, divided
2 tablespoons Worcestershire sauce
1 1/2 teaspoons fresh thyme, minced and divided
2 tablespoons fresh rosemary, minced and divided
1/4 cup cornstarch
2 1/2 lbs russet potatoes, unpeeled and scrubbed
1/4 cup butter (1/2 stick)
6 garlic cloves, minced
salt and pepper, to taste

Steps:

  • Preheat the oven to 350 degrees.
  • In an ovenproof Dutch oven, heat 1 tablespoon oil over medium heat. Add the onion, carrots, celery, and 2 cloves of minced garlic and cook until the vegetables begin to soften, about 8 to 10 minutes.
  • Meanwhile, heat a 12-inch skillet over high heat. Add 1 teaspoon vegetable oil and swirl to cover the pan. Sprinkle the beef pieces with salt and pepper. When the oil is shimmering, but not smoking, add half the beef and brown on all sides, then add the beef to the Dutch oven with the vegetables. Pour 1/3 cup of the white wine into the skillet and cook over high heat until it reduces by half, scraping up any of the browned bits left by the beef. Pour the reduction into the Dutch oven. Repeat the browning process with the oil and beef, and repeat the wine reduction, adding both to the Dutch oven.
  • Pour 3/4 cup of the chicken broth and the Worcestershire sauce into the Dutch oven, and add half of the minced thyme and half the minced rosemary, reserving the remaining chicken broth and herbs. Stir the beef mixture well and bring to a simmer on top of the stove. Once the beef is simmering, cover the Dutch oven and put it in the oven for 1 1/2 hours.
  • While the beef is cooking, start the potatoes. Boil the whole potatoes in plenty of water until the are easily pierced with a fork, about 45 minutes. Pour off the water and let the potatoes sit, off the heat, until they are cool enough to handle. Melt the butter in a small saucepan. Add the 6 cloves of minced garlic and cook for 30 seconds, then remove from heat. Press the potatoes through a potato ricer, or peel and mash them by hand. Pour in the melted garlic butter, and beat the potatoes until they are light and fluffy. Cover and keep warm.
  • After 1 1/2 hours in the oven, check the beef for tenderness - it should be just about falling apart. Stir the cornstarch into the reserved 1/4 cup of chicken broth and stir the mixture into the hot beef. Stir in the remaining minced rosemary and thyme. and continue stirring until the mixture has thickened.
  • Pour the beef mixture into a 9-x13-inch baking dish . Spread the mashed potatoes over the top, return to the oven and bake for 30 minutes until hot and bubbly.
