1 teaspoon seafood seasoning
1 dash salt
1 dash pepper
1 1/2 cups flour
3 eggs
1/4 cup milk
1 1/2 cups panko breadcrumbs

Steps:

  • wash and dry shrimp.
  • season with essense or seafood season of your choice.
  • salt and pepper to taste.
  • coat in flour.
  • mix eggs and milk to make a wash.
  • run floured shrimp through egg wash.
  • coat with panko crumbs,set aside.
  • heat oil in fry pan over medium high heat until a popcorn kernal pops.
  • add half of shrimp to oil,cook to golden brown both sides (3-4 min.).
  • remove and add second half of shrimp and repeat.

Uncle Bill's Jumbo Deep Fried Prawns (Shrimp) image

I started to develop a recipe for jumbo prawns in 1996 and finally succeeded in a very tasty recipe. These jumbo prawns are not difficult to prepare and will satisfy your desire for an enjoyable meal. I cooked these prawns (shrimp) for a Seafood Dinner for 12 couples in the year 2000, and their comment was that they had never tasted prawns that were so well prepared and tasted so good. Because of their size and cost, one does not want to spoil a tasty prawn. Chilling time for the prawns in the refrigerator is not included in the preparation time.

4 jumbo tiger shrimp (4 - 6 ounces each)
2 large eggs
2 tablespoons whole milk, homogenized
1/2 cup all-purpose flour
1/4 teaspoon black pepper
3/4 cup panko breadcrumbs or 3/4 cup crushed soda cracker
1 1/2 teaspoons dried dill weed
1/2 teaspoon seasoning salt or 1/2 teaspoon coarse sea salt
3/4 teaspoon granulated garlic powder
1/2 teaspoon beau monde seasoning (optional)
2 cups canola oil (for deep frying)
1 large lemon, cut into wedges
1/4 cup tartar sauce, if desired

Steps:

  • Peel off shell, devein prawns and rinse in cold water. Pat dry with paper towels.
  • Cut slit in each prawn about 1/4 inch deep.
  • In a mixing bowl, whisk together eggs and milk until frothy.
  • In a plastic bag, add flour and pepper and shake well to blend.
  • In a separate plastic bag, add Panko crumbs, dried dill weed, seasoning salt, garlic powder and Beau Monde seasoning, shake well to combine.
  • Dip prepared prawns individually into the egg mixture to coat well.
  • Drop each prawn into the flour mixture and shake to coat well.
  • Dip the prawns again in the egg mixture, turn to coat well.
  • Drop each prawn into the Panko crumb mixture and shake until well coated.
  • Place coated prawns on a plate, cover with plastic wrap and refrigerate for about 2 hours to chill.
  • In a medium size saucepan, or a deep frying pan, or a WOK, add oil and heat to 350°F.
  • Carefully drop the prawns two at a time into the hot oil and deep fry for about 1 1/2 minutes, turn over and continue to fry for an additional 1 to 1 1/2 minutes, and the prawns are a light golden brown. (Do not overcook prawns.).
  • Serve immediately with lemon wedges and tartar sauce or a sauce of your choice.

1/2 cup cornstarch
1/2 cup all-purpose flour
3 large eggs
1 cup panko breadcrumbs
1/2 cup seasoned breadcrumbs
1 1/2 pounds peeled and deveined jumbo shrimp, butterflied
Vegetable oil, for shallow frying
Kosher salt and freshly ground black pepper
Cocktail Sauce, recipe follows
2 cups ketchup
2 heaping tablespoons prepared horseradish

Steps:

  • Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
  • Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.
  • Fry the shrimp in batches until golden and crispy, approximately 2 minutes per side. Drain on a paper towel-lined plate and season with salt and pepper. Serve with Cocktail Sauce.
  • Stir together the ketchup and horseradish in a bowl. Chill until ready to serve.

1/2 cup whole-wheat flour
2 cups whole-wheat panko breadcrumbs, such as Ian's All-Natural
3 large egg whites
12 ounces jumbo shrimp, peeled and deveined
Salt and freshly ground black pepper
Nonstick cooking spray
1/2 cup Tartar Sauce (page 217) or store-bought low-fat tartar sauce

Steps:

  • Preheat the oven to 450°F. Place a wire rack on a foil-lined baking sheet.
  • Put the flour in a shallow dish. Put the panko in another shallow dish. In a large bowl, whip the egg whites with a whisk until they are very foamy but not quite holding peaks. Working in batches, dredge the shrimp in the flour, shaking off any excess. Add the shrimp to the egg whites and toss gently to completely coat them. Working with a few at a time, add the shrimp to the panko and coat completely.
  • Lay the shrimp on the wire rack. Season them generously with salt and pepper, and spray them lightly with cooking spray.
  • Bake until the breading is golden and crispy and the shrimp are cooked through, about 8 minutes. Serve with the tartar sauce.

  • INSTRUCTIONS.
  • Beat butter with fork in small bowl until light and fluffy. Stir in garlic, lemon juice, parsley, and 1/8 teaspoon salt until combined. Set aside.
  • Heat 1 tablespoon oil in 12-inch skillet over high heat until smoking. Meanwhile, toss shrimp, salt, pepper, and sugar in medium bowl. Add half of shrimp to pan in single layer and cook until spotty brown and edges turn pink, about 1 minute. Remove pan from heat; using tongs, flip each shrimp and let stand until all but very center is opaque, about 30 seconds. Transfer shrimp to large plate. Repeat with remaining tablespoon oil and shrimp; after second batch has stood off heat, return first batch to skillet along with flavored butter and toss to combine. 1 1/2 lbs jumbo shrimp or 1 1/2 lbs jumbo shrimp, peeled,with tail and last shell segment left on (16 shrimp U10/lb)
1 English muffin, finely minced to crumbs
1/4 cup pine nuts, lightly toasted in a little extra virgin olive oil
1/4 cup slivered almonds, lightly toasted in a little extra virgin olive oil
1/4 lb crabmeat, drained and picked over to remove shell and cartilage pieces
4 cloves garlic, finely minced
4 scallions, including tops,finely chopped (green onions)
1 teaspoon extra virgin olive oil
1/4 cup chopped fresh parsley leaves
2 -4 jalapeno peppers, seeded and chopped,to taste
1 tablespoon capers, drained and chopped
1 teaspoon Worcestershire sauce (white Worcestershire if desired for looks, but dark tastes better)
8 ounces cream cheese, room temperature
1/2 cup crumbled feta cheese, room temperature (4 oz)
1 -2 tablespoon fresh lemon juice, to taste
salt & freshly ground black pepper
1 dash paprika (if baking naked) (optional)
lemon wedges or lemon juice, as accompaniment
1 egg, lightly beaten (optional)
1 cup wine or 1 cup water (optional)

Steps:

  • Butterfly shrimp by cutting down through the back most of the way through the shrimp.
  • Devein and press to flatten, cut side up, on a cookie sheet or large shallow baking pan.
  • Press with paper towels to remove excess moisture.
  • Combine muffin crumbs, nuts, and crabmeat in a medium bowl, and set aside.
  • Saute onions and garlic in olive oil over medium heat until softened.
  • Add parsley, jalapeno peppers, capers, and Worcestershire sauce.
  • Reduce heat; add lemon juice, cream cheese, and feta cheese.
  • Mix thoroughly, allowing to heat just until cheese is smooth and mixed with vegetables.
  • Remove from heat, and add to crumb mixture.
  • Toss together gently until thoroughly combined.
  • Season to taste with salt and freshly ground pepper.
  • Place 2-3 Tbsp of cheese mixture on top of each shrimp, molding and smoothing to cover.
  • Place in freezer for about 30 minutes to firm.
  • If deep frying battered shrimp, preheat oven to 250 degrees F.
  • Make batter by beating together egg and beer, wine, or water; if using beer, beat a little extra to reduce foam.
  • Add all remaining ingredients, and mix just until dry ingredients are combined with the liquid.
  • Let batter rest about 5-10 minutes.
  • Heat about 2" of oil to 375 degrees F in a large saucepan or deep fryer.
  • Dip prepared shrimp in batter one at a time, holding by tail, allowing excess batter to drain from shrimp before placing in hot oil.
  • Cook 4-6 at a time until browned, turning once.
  • Remove to a pan lined with paper towels and keep warm in the oven while cooking remaining shrimp.
  • Allow oil to return to 375 degrees F before cooking each batch.
  • Serve immediately with lemon wedges, tartar sauce, and/or cocktail sauce if desired.
  • If baking breaded shrimp, preheat oven to 350 degrees F.
  • Lightly oil baking sheet and sprinkle lightly with breadcrumbs.
  • If breading, brush tops of prepared shrimp lightly with egg-wash.
  • Press breadcrumbs onto surface until they adhere, and place on baking sheet.
  • After all shrimp are coated, sprinkle with paprika and drizzle with melted butter.
  • Bake for about 25 minutes or until lightly browned.
  • Drizzle with fresh lemon juice, if desired.
  • If serving naked, sprinkle prepared shrimp lightly with paprika, and bake as above, until lightly browned and bubbly.
  • Naked shrimp can also be cooked on the barbecue, over low to medium coals.
  • Place on oiled grate, cheese side up.
  • Do not turn unless you love the taste and smell of burning cheese.
  • Cook, covered for about 10 minutes.
  • Drizzle with fresh lemon juice if desired.

1/4 cup flour
1/4 cup egg substitute
2 tablespoons skim milk
1 tablespoon lemon juice
1/4-1/2 cup Italian seasoned breadcrumbs

1/2 teaspoon Old Bay Seasoning
1/8 teaspoon cayenne pepper

Steps:

  • Heat oven to 425.
  • Mix egg beater, skim milk, and lemon juice in a small bowl.
