Steps:
- Preheat oven to 375 degrees.
- Sauté onion and bell pepper in olive oil, until softened, and starting to caramelize.
- In a large bowl combine sautéed onion mixture, ground beef, oatmeal, ketchup, eggs, worcestershire sauce, brown sugar, Cajun seasoning, mustard, hot sauce, and salt.
- Mix until well combined.
- Place into pan, and shape into a loaf.
- If you have a broiler pan available you can line the lower pan with foil or parchment paper for easy clean up and cook meatloaf on upper pan so the grease can drip off.
- Mix all ingredients together, until well combined.
- Spread 3/4 of barbecue sauce over meatloaf. Cover with bacon strips.
- Bake uncovered for 30 minutes. Brush with remaining barbecue sauce, and bake an additional 30-45 minutes until cooked through. Internal temperature should be 160 degrees.
- Allow Meatloaf to rest 5-10 minutes before slicing.

- Preheat oven to 375 degrees F (190 degrees C).
- In a small bowl, stir together paprika, brown sugar, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper.
- Slice the sweet potatoes in half lengthwise. Brush each half with olive oil. Rub the seasoning mix over the cut surface of each half. Place sweet potatoes on a baking sheet, or in a shallow pan.
- Bake in preheated oven until tender, or about 1 hour.

CAJUN STYLE MEATLOAF

Steps:
- In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
- Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
- Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
- Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

CAJUN MEATLOAF

- Preheat oven to 400 degrees.Chop all of the fresh vegetables (peppers, onions, celery) into a small dice and mince the garlic. Over medium-high heat, melt 6 tablespoons butter. Once butter begins to start browning, add the diced vegetables and garlic. Add about 1 teaspoon salt. After these have cooked for a few minutes add 1 tablespoon Worcestershire sauce, 1 teaspoon black pepper, 1 teaspoon nutmeg and 1 teaspoon cayenne pepper. If you like it hot, add a couple shakes of your favorite hot sauce. Next add about ½ cup of ketchup. Continue cooking and stirring for a few more minutes. Remove from heat.After allowing the mixture to cool for a couple of minutes, add about ½ cup of milk. Stir until combined. Next add at least 1 cup of breadcrumbs. Continue adding breadcrumbs and stirring until mixture is a nice, thick paste. In a large mixing bowl place the ground beef and pork. Whisk 3 eggs and add to the meat. After allowing the pasty vegetable mixture to cool down a bit, begin incorporating it into the meat. Keep working all of the Cajun-Vegetable mix into the meat until all is blended well.Spray a sheet pan with some non-stick cooking spray. Next, using your hands, form your meat mixture into a loaf on the sheet pan. Make the loaf around 6-8 inches wide and about 1 ½ inches thick. In a small bowl or measuring cup, mix together ¾ cup of ketchup with about 2 tablespoons honey. Slather this sauce over the whole meatloaf.Place in a 400 degree oven for about 40 minutes.
CAJUN-STYLE MEATLOAF

- Preheat oven to 350°F with rack in top third position. Line a 9- x 5-inch loaf pan with a double layer of aluminum foil, leaving a 3-inch overhang on long sides. Lightly coat with cooking spray, and set aside.
- Heat oil in a large skillet over medium-high. Add onion, and cook, stirring occasionally, until tender, about 4 minutes. Add celery and bell pepper; cook, stirring often, until tender, about 4 minutes. Add Creole seasoning and pepper; cook, stirring often, until fragrant, about 1 minute. Transfer to a large bowl; spread in an even layer across bottom of bowl, and let cool for 5 minutes.
- Add beef, pork, breadcrumbs, parsley, eggs, and 2 tablespoons of the ketchup to onion mixture in bowl. Gently fold together using your hands just until incorporated. Press into prepared loaf pan.
- Stir together sugar and remaining 1/4 cup ketchup in a small bowl; spread evenly over meatloaf.
- Bake in preheated oven until well browned and a thermometer inserted in thickest portion of meatloaf registers 165°F, 50 minutes to 1 hour. Let cool for 15 minutes. Remove meatloaf from loaf pan using foil overhang as handles, and transfer to a cutting board. Cut into 8 slices.
CAJUN MEATLOAF WITH ROASTED SWEET POTATOES
From the Kansas City Star. This calls for turkey, but we're big beef fans, so we'll probably use beef for this.

- Heat oven to 350 degrees.
- Coat a roasting pan with cooking spray.
- In large bowl, mix turkey, oil, ketchup, bell pepper, celery, Cajun seasoning, onion powder and hot sauce.
- Shape into a 9x4 inch oval loaf.
- Place in roasting pan.
- In separate large bowl, combine potatoes, salt, pepper, and oil and toss to coat.

- Preheat oven to 450 degrees F. Line a baking sheet with parchment paper and grease with cooking spray, set aside.
- In a large bowl, combine all of the meatloaf ingredients (except for 1 cup of BBQ sauce) until evenly incorporated. Divide the mixture into four, and then shape each into a small loaf. - Meatloaf: Heat oil in large skillet over medium-high heat. Add red pepper, green pepper, onion and salt; cover and cook on low heat until very tender, about 8.5 minutes. Remove from heat and cool slightly.
- Heat oven to 350 degrees F. Grease a 9 x 5 x 3-inch loaf pan.
- Mix bread, and milk in a large bowl; let stand a few minutes to soften. Add beef, pork, bread crumbs, 1/2 cup Chile Sauce , egg, hot pepper sauce and sweet red pepper mixture; toss easy to coat.
