This green chile egg casserole is a favorite for brunch or morning pot lucks! It has a great mexican flavors without being spicy, so it is friendly for adults and children alike.

6 oz monterey jack cheese (grated)
8 oz sharp cheddar cheese (grated)
7 oz canned mild chopped green chiles
2 tbsp flour
1/2 cup milk
8 eggs
Salt & pepper to taste

Steps:

  • Preheat the oven to 350˚F.
  • Mix the cheeses and then sprinkle 1 cup of the cheese (about 2/3) in the bottom of a casserole dish. Then dollop the green chiles evenly over the cheese.
  • Place the flour in the bottom of a bowl and use a whisk to slowly mix in a little of the milk to make a paste, then continue to pour the milk in while whisking until it is all smoothly combined. Then add the eggs into the milk, season with salt and pepper, and use the whisk to combine well. Pour the mixture into the casserole dish over the cheese and chiles.
  • Top the casserole with remaining cheese and then bake on the middle rack of the oven for 25-35 minutes or until eggs are set in the middle.
  • Remove from oven and let sit for 5 minutes then serve hot. Enjoy!

My family demands this casserole every Christmas morning. I've only once dared to try something new, and this was sorely missed! Make this for a brunch and I guarantee you will get recipe requests. This family-favorite is not very healthy, so it only comes out for special occasions.

½ cup butter
1 (16 ounce) package cottage cheese
1 pound shredded Monterey Jack cheese
2 (4 ounce) cans diced green chiles
10 eggs
¼ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Set butter in a 6x10-inch casserole dish; place dish in the preheating oven until butter is melted.
  • Mix cottage cheese, Jack cheese, green chiles, eggs, flour, baking powder, and salt in a large bowl using an electric hand mixer. Pour mixture into the melted butter in the casserole dish.
  • Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C); bake until middle of casserole is set, about 50 more minutes. Allow to stand for 10 minutes before serving.

1 dozen eggs
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups (1 pint) small curd cottage cheese
3 cups shredded Mexican blend cheese
6 tablespoons butter, melted
2 (4 oz.) cans diced green chilies

Steps:

  • Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with non-stick cooking spray.
  • In a large bowl, beat eggs with an electric mixer until light and fluffy. Mix in flour, baking powder, salt and pepper.
  • Stir in cottage cheese, Mexican cheese blend, melted butter and green chilies. Pour into prepared baking dish. Bake immediately for 35-40 minutes, or until edges are browned and center is set. Alternately, you can cover and refrigerate the casserole overnight and bake the next day. You may need to add 5 minutes to the baking time. Cool for about 10 minutes before slicing into squares and serving.

6 eggs
¼ cup all-purpose flour
½ tsp baking powder
2 ounces canned chopped green chilies
½ pint small curd cottage cheese (1 cup)
¼ cup milk
1 cup cheddar cheese, shredded
1 cup jack cheese, shredded

Steps:

  • Preheat oven to 400 degrees
  • Melt butter in a 9-inch square pan in the oven, tipping the pan to coat the bottom and sides with melted butter
  • In a large bowl, beat the eggs
  • Stir in flour and baking powder, adding the flour slowly to avoid clumps. Add melted butter from pan
  • Stir in chilies, cottage cheese, milk, cheddar cheese, and jack cheese, and mix until blended
  • Pour mixture into butter-coated pan and bake for 15 minutes at 400 degrees
  • Reduce heat to 350 degrees and bake 30 to 35 minutes longer or until lightly browned on top
  • Cool slightly and cut into squares

1 - 10 ounce(s) can, whole chiles chopped or already chopped chiles
6 large eggs
1/2 - onion, chopped small
2 tablespoon(s) red bell pepper, chopped
Salt - and pepper to taste
Red - pepper flakes to taste - optional
8 ounce(s) fresh shredded colby jack cheese

Steps:

  • Preheat oven to 325 degree F. Spray a 9 inch dish with non stick cooking spray. In a bowl, beat eggs, add red pepper, seasonings, onion. Spread chilies on bottom of dish.
  • Pour egg mixture over chilies.
  • Sprinkle evenly with cheese.
  • Bake 25 - 30 minutes or until egg is puffed around the edges and cooked in center.
  • Cut and serve with salsa! Add more salt if needed.

  • Toss Monterey Jack cheese with flour; place in a greased 13x9-in. baking dish. Top with cheddar cheese; sprinkle with bacon. Beat eggs and milk; pour over all. Cover and chill for 8 hours or overnight. Remove from refrigerator 30 minutes before baking. , Bake, uncovered, at 325° for 40-45 minutes or until a knife inserted in the center comes out clean.
