1/2 recipe Standard Pie Dough
1/2 c. unsalted butter
1 c. semisweet chocolate chips
1/2 c. granulated sugar
1/2 c. packed light brown sugar
c. all-purpose flour
2 large eggs
1 tsp. pure vanilla extract
1 tsp. instant coffee granules
1/4 tsp. kosher salt
1 c. pecans
Whipped cream

Steps:

  • In a large bowl, whisk together 1 cup flour, 1 tablespoon sugar and 1/2 teaspoon salt. Using your fingers or a pastry cutter, work the chopped butter and shortening into the flour until the mixture resembles coarse crumbs. Sprinkle with 2 tablespoons ice water, 1 tablespoon at a time, until the dough is crumbly but holds together when squeezed (if necessary, add additional ice water, 1 teaspoon at a time).
  • Transfer the dough to a piece of plastic wrap and shape into a 1-inch-thick disk. Wrap tightly and refrigerate until firm, at least 1 hour and up to 2 days.
  • Heat oven to 350 degrees F. On a lightly floured surface, roll a disk of dough into a 12-inch circle. Fit it into the bottom and up the sides of a 9-inch pie plate. Trim the dough so that the overhang is even all the way around (about 1/2 inch from the edge of the pie plate). Fold the overhang under itself to create a thicker rim of dough and crimp as desired. Refrigerate until ready to fill.
  • Melt the 1/2 cup butter. Place the chocolate in a large bowl and pour the warm butter on top; stir until smooth. Add the brown sugar, eggs, vanilla, coffee and remaining 1/3 cup flour, 1/2 cup granulated sugar, and 1/4 teaspoon salt and mix to combine. Stir in the pecans.
  • Pour the chocolate mixture into the pie crust and bake until the filling is set and the crust is golden brown, 30 to 35 minutes. Let stand for at least 1 hour before serving. Serve with whipped cream, if desired.

  • Bake in preheated oven for 35 to 40 minutes. Top should be set, and may crack slightly, but the pie is best if under-baked.

  • Pour warm butter over chocolate chips and stir.
  • Blend all remaining ingredients and stir into chocolate chip mixture.
  • Pour into unbaked pie shell.
  • Bake in 350 degree oven for 30 to 40 minutes.

12 ounces cream cheese, softened
1/2 cup Splenda sugar substitute
1/2 pint whipping cream
fresh strawberries
1 package frozen blueberries (I use two fresh packages)
1/3 cup Splenda sugar substitute

Steps:

  • Using a electric mixer; mix soft cream cheese and splenda until sweetener is dissolved.
  • In another bowl, whip the cream until stiff peaks form.
  • Gently fold the cream into the cream cheese; blend well.
  • Slice strawberries in half lengthwise and place on the bottom and sides of a 9 inch deep-dish pie plate.
  • Pour cheese mixture over top and chill until firm.
  • GLAZE: Combine in a saucepan and cook over low heat until thickened.
  • Be careful not to break up the berries to much.
  • Cool to room temperature.
  • Spoon over cheese mixture and chill several hours more or overnight.
  • The glaze won't be real thick and it goes down into the cream cheese mixture.
  • It's just as good putting fresh blueberries mixed with somersweet on top without making the glaze.
  • Another version for non-SSer's: Use a baked pie crust and line with banana slices instead of strawberries.
  • The rest of the recipe remains the same.

1 (9-inch) deep-dish pie shell, baked

Blueberry Glaze:
1 package frozen blueberries
1/3 cup sugar
1 tablespoon cornstarch

Steps:

  • Mix softened cream cheese with sugar. Whip cream until stiff peaks form. Carefully fold cream into cheese mixture and mix until thoroughly blended. Slice bananas and place in bottom and sides of pie shell. Pour cheese mixture over bananas and chill until firm. Blueberry Glaze: Combine all ingredients and cook over low heat until thick. Be careful not to break up the berries. Cool to room temperature. Spoon Glaze evenly over cheese mixture and chill several hours or overnight.
