This is from the Feb 2007 issue of Vegetarian times. They say "Tatsoi cabbage has small, heart-shaped, green leaves that are beautiful in salads. Mizuna, another Japanese green called for in this main-dish salad, has feathery leaves and a peppery flavor. Both are worth seeking out, but if you don't come across them, simply substitute napa cabbage and watercress."

3 tablespoons roasted sesame oil
2 tablespoons tahini
2 tablespoons seasoned rice wine vinegar
1 tablespoon low sodium soy sauce
1 1/2 cups shelled frozen edamame, thawed
2 cups tatsoi, leaves
2 cups mizuna
1 cucumber, peeled and sliced
1 (8 ounce) package baked teriyaki-seasoned tofu, cubed
1 green onion, sliced
toasted sesame seeds

Steps:

  • To make Sesame Dressing: Whisk together sesame oil, tahini, vinegar and soy sauce in small bowl.
  • To make Salad: Cook edamame according to package directions. Rinse under cold water to cool. Drain well.
  • Divide edamame, tatsoi, mizuna, cucumber, tofu and green onion among 4 plates.
  • Drizzle with Sesame Dressing. Sprinkle with sesame seeds, and serve.

Light and tasty dressing. I like to mix it with coleslaw mix, a can of pineapple chunks, some sesame seeds, green onions and boiled shrimp. It is also good on salad greens with some grilled chicken. The cooking time is the amount of time it should sit once mixed.

A slightly different pasta salad, feel free to double it for potlucks and picnics. I particularly like to use Wacky Mac or tri-color pasta for this!

8 ounces shell pasta, cooked tender (1 dry cup or just a teensy bit less so to not overpower the edamame)
1 1/2 cups shelled edamame (if using fresh or frozen, or 1 15-oz can edamame rinsed and drained )
1/2 cup frozen corn
1 (15 1/2 ounce) can black beans
1 cup olive oil
2 tablespoons sugar
2 tablespoons tahini
1/3 cup apple cider vinegar
3/4 teaspoon sea salt
3/4 teaspoon mustard powder
1 tablespoon toasted sesame seeds

Steps:

  • Cook the pasta according to package directions, preferably tender. When it's done cooking, rinse with cold water and pour in a large serving bowl or container.
  • Rinse and drain the black beans and edamame.
  • Thaw the corn (and edamame).
  • Mix the corn, edamame, and black beans together with the pasta.
  • Make the dressing by putting all the dressing ingredients in a blender (except the sesame seeds) and pulse until fully mixed.
  • Stir in the sesame seeds.
  • Pour the completed dressing over the pasta, and let chill for about 45 minutes-1 hour then serve. Lasts about 4-5 days fresh and great for brown-bagging lunch; and if your workplace lacks a fridge, don't fear due to the lack of dairy products!

1 lb orzo pasta, uncooked
1 tablespoon sesame oil
4 carrots, cut into thin strips
2 cups raisins
1 cup sunflower seeds, toasted
2 tablespoons chopped fresh parsley
2 tablespoons sliced green onions
3/4 cup corn oil
1/2 cup rice vinegar
1/4 cup sesame oil
1 tablespoon salt
1 tablespoon sugar
2 tablespoons grated orange rind
1 teaspoon pepper
1 teaspoon minced fresh ginger
1 teaspoon soy sauce
1/2 teaspoon minced garlic
1/4 teaspoon dry crushed red pepper

Steps:

  • To make dressing: add all dressing ingredients to the container of an electric blender; process until smooth; set aside.
  • Cook the orzo in boiling salted water to cover for about 8 minutes or until tender; drain, rinse, and drain again.
  • In a mixing bowl, toss the orzo and 1 tablespoon sesame oil.
  • Spoon half the orzo mixture into a large glass serving bowl; spread evenly.
  • Top with half the carrot strips, raisins, and sunflower kernels.
  • Repeat layers.
  • Drizzle 1 cup Sesame Dressing over the top.
  • Sprinkle the parsley and green onion evenly over the top.
  • Serve with the remaining Sesame Dressing.

This all-purpose miso-sesame vinaigrette is great on a simple salad with lettuces and fresh vegetables, such as cucumbers, tomatoes, sliced onions, radishes, jicama or grated carrots, or in this Chicken and Cabbage Salad. Try it drizzled on an iceberg wedge, over sliced leftover steak, chicken or tofu, or on grilled seafood, served hot or cold. It's especially good with grilled salmon and spicy greens like watercress, mizuna or arugula.

2 medium garlic cloves, smashed with the side of a knife
1 small shallot, roughly chopped
2 tablespoons shoyu or tamari
2 tablespoons balsamic vinegar
2 tablespoons red or white wine vinegar
1 tablespoon light miso paste
1 tablespoon dark brown sugar
1/2 cup grapeseed, vegetable or canola oil
2 tablespoons toasted sesame oil
2 tablespoons toasted white or black sesame seeds

Steps:

  • Combine garlic, shallot, shoyu, vinegars, miso and sugar in a blender and blend on high speed until homogenous. (Alternatively, mash garlic and shallots in the bowl of a large granite or marble mortar and pestle into a fine paste using the pestle, then stir in the shoyu, vinegars, miso and sugar.)
  • With the blender running on medium speed (the liquid should form a vortex but not jump up and splatter on the walls of the blender), slowly drizzle in the grapeseed oil. (If using a mortar and pestle, slowly drizzle in the oil as you stir vigorously with the pestle.)
  • Transfer to a lidded jar. Stir in the sesame oil and sesame seeds with a spoon. Dressing can be stored in the refrigerator for up to 3 weeks. Shake well before using.

2 tablespoons rice vinegar
2 tablespoons toasted sesame oil
1 (8 7/8 ounce) package udon noodles, preferably brown rice
1 1/2 cups frozen shelled edamame
2 cups grated carrots
1 bunch watercress, coarsely chopped (6 oz.)
1 bunch green onion, chopped (about 1/2 cup)
2 tablespoons toasted sesame seeds

Steps:

  • To make Dressing: Whisk together soy sauce, vinegar, sesame oil and 2 Tbs. water in bowl. Set aside.
  • To make Noodles: Bring large pot of water to boil. Add noodles, and cook 5 minutes less than minimum recommended cooking time on package.
  • Add edamame and carrots, and continue cooking until noodles are tender. (If noodles cook in 5 minutes, add all ingredients at once.) Drain.
  • Return mixture to pot. Stir in watercress, green onions, sesame seeds and Dressing. Serve warm or at room temperature.
