Chicken pot pie meets tater tot casserole!! Delicious homemade pot pie filling made in one pot and loaded with chicken and vegetables then topped with cheddar cheese and tater tots and baked until the gravy is bubbly and the tater tots are crispy and golden brown! Perfect with leftover turkey, too!

Steps:
- Heat 2 tablespoons butter in a large pot over medium-high heat. Add the chicken and cook for 7-10 minutes, stirring occasionally, until no longer pink. Remove chicken from the skillet and set aside.
- Melt remaining 4 tablespoons of butter in the same skillet. Add onions, celery, and carrots and cook until tender, about 7-10 minutes. Add garlic and cook another minute.
- Preheat oven to 400° F.
- Sprinkle flour over vegetables and mix well until combined; cook 1 minute.
- While mixing, slowly pour in the chicken broth then the milk. Simmer over medium heat for about 5-7 minutes, or until thickened to gravy consistency.
- Stir in ground thyme, ground nutmeg, salt and pepper, then mix in the cooked chicken, peas and corn.
- Transfer mixture to a 9 x 13 inch (or 3-4 quart) baking dish. Top with cheddar cheese then tater tots. Bake for 40-45 minutes or until hotdish is bubbling and tater tots are golden and crispy.

- Preheat oven to 400F.
- Break the Ritz crackers apart with your hands and sprinkle them into the bottom of a greased 9 x 13 inch baking dish.
- Dump the shredded chicken, diced onion, mixed veggies, cram of chicken soup, salt, pepper, garlic powder and onion powder into a large mixing bowl.
- Stir until all of the ingredients are fully combined.
- Spoon the chicken mixture on top of the Ritz crackers in the baking dish and spread it out evenly.
- Place the frozen tater tots in a single layer on top of the chicken mixture.
- Place the casserole in the oven and bake until the tater tots are golden brown. 40-45 minutes.
- Serve and enjoy!

- Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In 4-quart saucepan, melt butter over medium heat. Stir in onions, grill seasoning and thyme. Cook 4 to 6 minutes, stirring frequently, until onion softens. - Melt the butter in a large heavy pot over medium-high heat until hot. Add the carrots, celery and onions and season with 1 teaspoon salt and 3/4 teaspoon pepper. - Preheat the oven to 375 degrees F.
- In a large pan on medium-high heat, add the oil. When the oil begins to swirl, add the beef, Worcestershire sauce, paprika, a pinch of salt and a few grinds of pepper. Cook until the meat is browned, 6 to 8 minutes. Stir in the tomato paste and saute for a few minutes to intensify the flavor. Add the stock and bring to a simmer. Season again and remove the mixture to a bowl with a slotted spoon, leaving the fat in the pan.
- In the same pan, add the onions and cook until almost tender. Then add the carrots, zucchini, bell peppers, a pinch of salt and a few grinds of pepper. Cook, tossing, until the vegetables are tender but still a bit crunchy, 6 to 8 minutes. Remove from the heat.

Top with the tater tots in a neat row like little soldiers. Sprinkle the top with paprika and bake until the edges on the tots turn golden brown, 25 minutes.
CHICKEN POT PIE WITH A TATER TOT CRUST

- Preheat the oven to 400 degrees F.
- Melt 2 tablespoons of the butter in a 10-inch cast-iron skillet over medium heat. Add the celery, carrots, leeks and tarragon, and cook, stirring occasionally, until the vegetables are softened, 3 to 5 minutes. Transfer to a bowl and set aside. Wipe out the skillet.
- Add the remaining 4 tablespoons butter to the skillet over medium heat, sprinkle in the flour and whisk until a paste forms and starts to bubble. Whisk in the chicken broth and continue to cook until it begins to thicken, 3 to 5 minutes. Whisk in the cream and cook until it thickens, 1 to 2 minutes. Stir in the salt and pepper.
- Return the vegetables to the skillet; add the peas and chicken and stir to combine. Sprinkle the frozen tater tots all over the filling to cover completely (there will be extra tater tots; reserve for another use). Bake until the tots are golden brown and the filling is bubbling, about 30 minutes. Let cool for 5 minutes before serving.

This has become a family favorite - I found this recipe on a bag of tater tots several years ago. This is very similiar to a Chicken Pot Pie with a Tater Tot topping instead of bread. It makes a great one dish meal with a salad and bread.

- Preheat oven to 375°.
- In large skillet, cook onion and pressed garlic in butter or olive oil over medium high heat until onion is tender.
- Add cooked chicken, frozen veggies, undiluted soup, milk, thyme and pepper.
- Stir ingredients together and cook over medium heat until hot and bubbly. Stirring occasionally.
- Cover and cook an additional 5 minutes; stirring frequently.
- Spoon chicken mixture into ungreased 2-quart casserole dish.
- Arrange frozen tater tots on top.
- Bake 40 minutes or until bubbly and tater tots are slightly browned.
- Note: This recipe easily doubles and you can make two. I freeze the extra one with the tater tots on top and then remove and thaw in fridge. Bake as directed above. Also, I sometimes add an extra can of soup and an extra 1/4 cup of milk for a thinner consistency. This would be a personal preference. Also, I add approximately 1/2 tsp of dried thyme and 1/2 tsp of black pepper for one casserole - adaptable to your taste.

CHICKEN POT TOT HOTDISH
My Tater Tot hotdish has the body of a chicken pot pie, a dish that I loved growing up, long before I knew the existence of Tater Tot hotdish. But a close examination reveals that the only real differences are the subbing of chicken for ground beef and the use of a homemade cream of chicken soup instead of mushroom soup. I don't think this will offend a hotdish purist.

- Preheat the oven to 400ºF.
- In a large skillet, melt the butter over medium-high heat. Add the onion and carrots and a pinch of salt and cook, stirring until soft, about 10 minutes. Stir in the flour so that it gets evenly distributed. Add 1 1/2 cups of the milk, stirring constantly until thickened. Repeat with the remaining 1 1/2 cups milk. Stir in the chicken broth base, peas, chicken, thyme, and a few turns of pepper and simmer, stirring often, until the chicken is cooked through and no longer pink, 10 to 15 minutes. Taste the mixture and adjust seasonings if desired.
- Transfer the mixture to an 11x8-inch baking dish (or other 3-quart ovenproof dish) and cover the bitch with Tater Tots. Arrange them snugly and neatly. Bake until the tots are golden brown. Begin checking for doneness at 30 minutes. Let cool slightly and serve with ketchup, if desired.
