12 ounce Breakfast Sausage
8 Egg
1 cup Whole Milk
1 teaspoon Salt
1 teaspoon Onion Powder
1/4 teaspoon Ground Black Pepper
32 ounce Frozen Tater Tots
8 ounce Cheddar Cheese

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Lightly grease a 9x13-inch baking pan.
  • Remove the casing from the Breakfast Sausage (12 ounce). In a large skillet over medium-high heat, add the sausage and cook halfway through, 8 to 10 minutes. Drain fat if necessary.
  • Whisk together Egg (8), Whole Milk (1 cup), Salt (1 teaspoon), Ground Black Pepper (1/4 teaspoon), and Onion Powder (1 teaspoon).
  • In a large bowl, toss together Frozen Tater Tots (32 ounce), sausage and Cheddar Cheese (8 ounce). Pour into baking dish. Pour the egg mixture all over. Sprinkle more cheese if you wish.
  • Bake uncovered for 45 to 55 minutes, or until eggs are set.

1 lb ground pork breakfast sausage (or cubed ham or bacon, whatever you like best)
2 -4 cups shredded cheddar cheese
2 cups milk
4 eggs
2 lbs frozen tater tots

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.
  • In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).
  • Top with frozen tater tots.
  • Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

Tater tot breakfast casserole with frozen tater tots, breakfast sausage, eggs, and tons of cheddar cheese is a delicious and easy breakfast casserole that can easily be made the night before - making this recipe a great holiday menu item for busy kitchens.

8 eggs
1 pound pork sausage (jimmy dean)
1 1/2 cups whole milk or heavy cream
1 package frozen tater tots (approximately 24 oz)
2 cups cheddar cheese
1 1/2 tsp salt
1 tsp black pepper
1/4 tsp garlic powder

Steps:

  • Preheat oven to 375 and spray 9 x 13 pan with non stick cooking spray.
  • Brown the meat - Medium heat in a skillet, breaking sausage into small pieces. Drain any excess grease and set cooked meat aside.
  • Whisk together 8 eggs, a cup and a half of heavy cream (whole milk if you have to, but heavy cream is better) and all spices together.
  • Add frozen tater tots in the bottom of the dish until a full layer is formed.
  • On top of tater tots, add the precooked sausage, two cups of cheddar cheese, and finally pour on whisked egg mixture.
  • Cover casserole dish with foil. (This helps the edges not cook too quickly and burn.)
  • Bake tater tot casserole for 40 minutes to start, remove foil from dish, and then bake for another 15-20 until center egg is fully cooked if necessary. Note that some ovens cook faster and check at the 40-45 minute mark for cooked egg.
  • Serve hot with sour cream, tomatoes, salsa or crunchy bacon.

One 16-ounce bag frozen Tater Tots®
Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half-and-half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Line up the tater tots in a buttered 9-by-13-inch baking dish.
  • Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  • In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

Steps:
