TATER TOT SAUSAGE BREAKFAST CASSEROLE
Very easy and tasty breakfast casserole with sausage, egg, cheese and tater tots. Great breakfast for kids.

Steps:
- Preheat the oven to 350 degrees F (180 degrees C). Lightly grease a 9x13-inch baking pan.
- Remove the casing from the Breakfast Sausage (12 ounce). In a large skillet over medium-high heat, add the sausage and cook halfway through, 8 to 10 minutes. Drain fat if necessary.
- Whisk together Egg (8), Whole Milk (1 cup), Salt (1 teaspoon), Ground Black Pepper (1/4 teaspoon), and Onion Powder (1 teaspoon).
- In a large bowl, toss together Frozen Tater Tots (32 ounce), sausage and Cheddar Cheese (8 ounce). Pour into baking dish. Pour the egg mixture all over. Sprinkle more cheese if you wish.
- Bake uncovered for 45 to 55 minutes, or until eggs are set.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.
- In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).
- Top with frozen tater tots.
- Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 2-quart baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir sausage and onion in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Drain and cool.
- Meanwhile, whisk milk, eggs, onion powder, salt, garlic powder, and pepper together in a bowl.
- Spread sausage mixture over the bottom of the prepared baking dish. Pour egg mixture over the top. Layer with 1/2 of the Cheddar cheese and all of the potato nuggets. Cover with aluminum foil.
- Bake in the preheated oven for 40 minutes. Remove foil and sprinkle with the remaining cheese. Bake until melted, about 20 minutes more. Remove from the oven and let stand for 5 minutes before serving.

- Butter a 3-quart baking dish. Line up the Tater Tots in the dish.
- Heat the olive oil in a large skillet over medium heat. Add the sausage and onion and cook, breaking up the sausage with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle the mixture over the Tater Tots.
- Whisk the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers and half of both cheeses in a large bowl; season with salt and pepper. Pour over the casserole, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
- Preheat the oven to 350˚. Bake the casserole, covered, until just starting to set around the edges, about 25 minutes. Remove the foil and continue to bake until the cheese is browned and bubbly and the casserole is cooked through, another 20 to 35 minutes.
TATER TOT BREAKFAST CASSEROLE
This is an easy one dish casserole that is great for a breakfast, brunch, holiday or for overnight guests as a special breakfast. I make this Christmas morning before I wake everyone up to open presents and the smell of it cooking makes us hurry to open the presents so we can dig in! Very versitile recipe. I have added various ingredients such as sauteed mushrooms, green chilis, olives, sausage and onions to make a rich omelet-like dish. I sometimes serve with a NW favorite to top...Tiger Sauce. This recipe came from my friend Kyle and was an immediate hit with all.

Steps:
- Prepare a glass baking dish (at least 8x10) by spreading butter along the bottom and sides.
- In a bowl, mix eggs, milk, sour cream, chives, seasoned salt, hot sauce and salt and pepper and whisk until well blended.
- Add 2 cups cheddar and 1 cup mozzarella cheese and tots to mixture. Mix well until all tots are coated and all ingredients mixed.
- In small pan, cook sausage until just before done (sausage will finish in the oven), drain well and add to tot mixture.
- Pour the mixture into your pre-greased baking pan and top with the rest of the cheese and the bread crumbs. Spread topping evenly.
- Bake at 350 degrees for 45 minutes or until topping is golden brown.
