These fluffy rolls go perfectly with any meal. They have a delicious homemade flavor that's irresistible. I like them because they're not hard to make and they bake up nice and high. -Patricia Staudt, Marble Rock, Iowa

Yield 1-1/2 dozen.

Number Of Ingredients 9

2 cups water
1 cup quick-cooking oats
3 tablespoons butter
1 package (1/4 ounce) active dry yeast
1/3 cup warm water (110° to 115°)
1/3 cup packed brown sugar
1 tablespoon sugar
1-1/2 teaspoons salt
4-3/4 to 5-1/4 cups all-purpose flour

Steps:

  • In a large saucepan, bring water to a boil; add oats and butter. Cook and stir for 1 minute. Remove from the heat; cool to lukewarm. , In a large bowl, dissolve yeast in warm water. Add the oat mixture, sugars, salt and 4 cups flour; beat until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; allow to rest for 10 minutes. Shape into 18 balls. Place in two greased 9-in. round baking pans. Cover and let rise until doubled, about 45 minutes. , Preheat oven to 350°; bake rolls until golden brown, 20-25 minutes. Remove from pans to wire racks.

Number Of Ingredients 7

2-1/3 cups water, divided
1 cup quick-cooking oats
2/3 cup packed brown sugar
3 tablespoons butter
1-1/2 teaspoons salt
2 packages (1/4 ounce each) active dry yeast
5 to 5-3/4 cups all-purpose flour

Steps:

  • In a large saucepan, bring 2 cups water to a boil. Stir in oats; reduce heat. Simmer, uncovered, for 1 minute. Stir in brown sugar, butter, salt and remaining water., Transfer to a large bowl; let stand until mixture reaches 110°-115°. Stir in yeast. Add 3 cups flour; beat well. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; shape into 24 rolls. Place on greased baking sheets. Cover and let rise until doubled, about 30 minutes., Bake at 350° for 20-25 minutes or until golden brown. Remove from pan and cool on wire racks.

Number Of Ingredients 9

2 cups quick-cooking oats
2/3 cup packed brown sugar
1/4 cup butter, cubed
1 tablespoon salt
2-1/2 cups boiling water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
5-1/2 to 6 cups all-purpose flour
Additional butter, melted

Steps:

  • In a large bowl, combine the oats, brown sugar, butter and salt; stir in boiling water. Cool to 110°-115°. In a large bowl, dissolve yeast in warm water; let stand for 5 minutes. Add oat mixture and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide into 20 pieces. Place in a greased 13x9-in. baking pan. Cover and let rise until doubled, about 45 minutes. , Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to a wire rack; brush with melted butter.

These are great and simple Rolls from Southern Living Magazine. I do not claim to be a baker at all, but if I can make these anyone can and I always get rave reviews. The dough can also be used for yummy cinnamon rolls as well.Update: At one point I changed the recipe to canola oil instead of butter and added half whole wheat. Then a friend of mine made it and she substituted applesauce for the butter and she said it turned out great. I made it tonight with the applesauce and she was spot on!

2 cups water
1 cup quick-cooking oats
3 tablespoons margarine, canola oil or 3 tablespoons applesauce
4 1/2 teaspoons yeast
1/2 cup water
1 tablespoon sugar
4 cups all-purpose flour
1 1/2 teaspoons salt
1/3 cup packed brown sugar

Steps:

  • Bring 2 cups water to a boil in a medium saucepan; stir in oats and butter.
  • Boil, stirring constantly, 1 minute.
  • Remove from heat; let cool to 110 degrees.
  • Stir together yeast, ½ cup warm water, and 1 T.
  • sugar in a 2-cup measuring cup; let stand 5 minutes.
  • Beat oat mixture, yeast mixture, flour, salt, and brown sugar at medium speed with an electric mixer until smooth.
  • Turn dough out onto a floured surface; knead till smooth and elastic (about 5 minutes) or knead in bread mixer with dough hook 2 to 3 minutes.
  • Place in a well-greased bowl, turning to grease top.
  • Cover and let rise in warm place (85 degrees) free from drafts, 1 hour or until double in bulk.
  • Punch down dough and divide in half; shape each portion into 8 balls. (Each pan will hold 8 rolls and you use 2 lightly greased round cake pans).
  • Place evenly into 2 lightly greased round cake pans.
  • Cover and let rise in warm place free from drafts, 30 minutes or until doubled in bulk.
  • Bake at 375 for 15 minutes or until golden brown.
  • Makes 16 rolls.

Even though I'm in my 80s, I still love to bake for our children, grandchildren and great-grandchildren. These hearty rolls are one of our favorites.

Number Of Ingredients 11

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°), divided
1/2 cup warm strong brewed coffee (110° to 115°)
1/2 cup old-fashioned oats
1/4 cup sugar
1/4 cup maple syrup
1 egg
3 tablespoons shortening
1 teaspoon salt
3 to 3-1/2 cups bread flour
1 tablespoon butter, melted

Steps:

  • In a large bowl, dissolve yeast in 1/4 cup warm water. Add the coffee, oats, sugar, syrup, egg, shortening, salt, remaining water and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a floured surface; divide into four portions. Divide each portion into six pieces; shape each into a ball. Place in a greased 13x9-in. baking pan. Cover and let rise until doubled, about 30 minutes. , Bake at 350° for 25-30 minutes or until golden brown. Brush rolls with butter. Remove from pan to a wire rack. Serve warm.

This recipe came from a community cookbook. I put all the dough ingredients in my bread machine and let the machine do the work but the recipe calls for doing it by hand. Either way, it's easy and the rolls are great. This is an often-requested recipe! Prep time does not include time in the bread machine or making dough by hand.

1 tablespoon yeast
1 cup warm water
1/4 cup sugar
1 1/2 teaspoons salt

3 tablespoons oil
3 cups bread flour

Steps:

  • Dissolve yeast in warm water.
  • Add sugar, salt, rolled oats, egg, oil and 2 1/4 cups flour.
  • Turn onto floured surface and knead in remaining flour.
  • Knead for a few more minutes.
  • Let rise in warm place for 1 to 1-1/2 hours.
  • Shape dough into balls and place in greased pan.
