Crispy, homemade chicken nuggets are sure to be a hit with kids and adults alike. Who could resist crunchy, golden nuggets of joy?! No one, that's who!

500 g (1lb) chicken breasts (sliced into bite sized chunks)
2 cups flour
2 tsp paprika
1½ tsp garlic powder
1½ tsp onion powder
1½ tsp salt
½ tsp pepper
3 eggs

Steps:

  • Heat vegetable oil in a large pot.
  • Whisk together the flour and spices in a shallow bowl.
  • In a separate bowl, whisk the eggs together.
  • Coat the chicken first in the flour, then in the eggs and finally in the flour again. For a thicker coating, repeat the breading.
  • Fry the chicken nuggets in the oil until golden brown and crisp. Remove with a slotted spoon then drain on kitchen paper before serving.

vegetable oil
4 cups all-purpose flour
6 tablespoons garlic salt
3 tablespoons ground black pepper
4 eggs, beaten
8 skinless, boneless chicken breast halves - cut into small chunks

Steps:

  • Heat 1 inch oil to 350 degrees F (175 degrees C) in a large skillet or saucepan.
  • Stir together the flour, garlic salt, and pepper in a bowl. Dip the chicken pieces individually into the beaten eggs before pressing into the flour mixture to coat; shake off the excess flour. Place the coated chicken pieces onto a plate until all the chicken has been coated.
  • Cook the chicken in batches in the hot oil until golden brown and no longer pink in the center.

3 tablespoons extra virgin olive oil
1 tablespoon vegetable oil
1 tablespoon each Dijon mustard and white wine vinegar
2 to 3 tablespoons minced parsley
1 small clove garlic, minced
Salt and freshly ground black pepper
1/2 pound skinless boneless, chicken breasts or chicken "tenders"
2 tablespoons unsalted butter
1/2 cup finely ground almonds

Steps:

  • In a shallow dish combine the olive and vegetable oils, mustard, vinegar, parsley and garlic. Season to taste with salt and pepper. Slice the chicken breasts in half, horizontally so you are left with pieces, about 3/8 inch thick. Marinate the chicken in the mustard mixture in the shallow dish, for as long as possible
  • Dip the chicken in almonds and saute in butter for about 5 minutes a side or until just cooked through.

Salt and freshly ground black pepper
1/2 pound skinless boneless, chicken breasts or chicken "tenders",cut into 1/2 inch cubes or very thin strips
2 tablespoons unsalted butter
1/2 cup dried bread crumbs

Steps:

  • Transfer the seasoning or flavoring of choice in a shallow dish and season with salt and pepper. Marinate the chicken in the mixture for as long as possible. Heat the butter in a medium skillet, over medium high heat. Dip the chicken in bread crumbs and saute slowly on all sides until cooked through.

1 cup all-purpose flour
1 tablespoon seasoned salt
Salt and freshly ground black pepper
2 large eggs
2 cup seasoned breadcrumbs
2 chicken breasts, cut into small pieces
Vegetable oil, for frying
Ketchup, for serving

Steps:

  • In a plastic bag, mix the flour, seasoned salt and some salt and pepper. In a bowl, mix the eggs with 2 tablespoons water. In a separate bowl, add the breadcrumbs.
  • Shake the chicken pieces in the bag to coat. In batches, dip them in the egg wash, then in the breadcrumbs.
  • Heat about 2 inches of vegetable oil in a large skillet over medium-high heat until a few breadcrumbs dropped in the oil start to sizzle immediately. Fry the chicken, in batches if needed, until golden brown and cooked through, a couple minutes per side. Drain on a paper towel and serve with ketchup.

1 lb ground chicken
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon cayenne
vegetable oil, for frying
1 cup all purpose flour
¼ cup cornstarch, plus 1 tablespoon
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
¼ teaspoon paprika
¼ teaspoon cayenne
1 large egg
1 ⅓ cups soda water
Dipping sauce of choice, for serving

Steps:

  • Line a baking sheet with parchment paper.
  • In a medium bowl, combine the ground chicken, salt, black pepper, garlic powder, paprika, and cayenne. Mix until well combined.
  • Scoop the chicken mixture into 1-inch balls and flatten into nugget shapes. Place on the prepared baking sheet and freeze for 30 minutes, or until firm.
  • Fill a medium pot a little more than halfway with vegetable oil and heat over medium heat until the temperature reaches 350°F (180°C).
  • Make the batter: In a medium bowl, whisk together the flour, cornstarch, salt, black pepper, garlic powder, paprika, and cayenne. Whisk in the egg, then add the soda water a little at a time so it doesn't overflow. The batter should have a slightly loose consistency, similar to crepe batter.
  • Remove the chicken from the freezer. Working in batches of 4-5 at a time, dip each chicken nugget in the batter twice, then transfer to the hot oil and fry for 3-4 minutes, or until tan in color. Transfer to a paper towel-lined plate to drain.
  • Increase the oil temperature to 375°F (190°C). Return the nuggets to the oil in batches and fry again for 2 minutes more, until golden brown and crispy. Drain on a clean paper towel-lined plate.
  • Serve immediately with your favorite dipping sauces.

1/2 cup fine dry breadcrumb
1/4 cup grated parmesan cheese
1 teaspoon salt
1 teaspoon dried thyme
1 teaspoon dried basil
100 g butter or 100 g margarine, melted
lemon wedge

Steps:

  • Cut the chicken into cubes (4 cm) Mix the breadcrumbs, cheese, salt, thyme and basil.
  • Spread the mixture on a plate.
  • Dip the chicken cubes in the melted butter.
