1/4 c Worcestershire Sauce
3 lg Garlic minced
Tabasco to taste
2/3 c light brown ?
1 1/2 c Ketchup
3 tb mustard, Dijon
1/4 c Lemon juice
Cayenne to taste

6 lb Oxtails trimmed
1 c Cider vinegar
; chopped
1 lb Dried small red chili beans cold water to cover them by 2 inches overnight or quick-soaked (procedure follows) and drained
3 c Onion finely chopped
6 tb Vegetables oil
scallion greens Chopped
Seasoned flour for dredging
1 tb fresh ? Grated peeled

Steps:

  • Dredge the oxtails in the flour, shaking off the excess. In a heavy kettle heat 4 tablespoon of the oil over moderately high heat until it is hot but not smoking and in it brown the oxtails in batches, transferring them with a slotted spoon as they are browned to a plate. To the kettle add the remaining 2 tablespoon oil, in it cook the onion, the garlic, and the gingerroot over moderately low heat, stirring, until the onion is softened, and stir in the brown sugar, the ketchup, the mustard, the vinegar, the Worcestershire sauce, the lemon juice, the Tabasco, the cayenne, the tomatoes with the reserved juice, and salt and pepper to taste. Simmer the sauce, stirring occasionally, for 5 minutes, add the oxtails, and simmer the mixture, covered, stirring occasionally, for 2 1/2 hours. While the oxtails are cooking, in a large saucepan combine the beans with enough cold water to cover them by 2 inches, bring the liquid to a boil, and simmer the beans, covered, for 1 hour, or until they are tender. Drain the beans well and stir them into the oxtail mixture. Simmer the mixture, uncovered, stirring occasionally, for 30 minutes to 1 hour, or until the meat is very tender, and serve it sprinkle with the scallion greens. To quick-soak dried beans: In a colander rinse the beans under cold water and discard any discolored ones. In a kettle combine the beans with enough cold water to cover them by 2 inches, bring the water to a boil, and boil the beans for 2 minutes. Remove the kettle from the heat and let the beans soak, covered, for 1 hour. Serves 6 to 8. Gourmet March 1991

6 pounds oxtails, trimmed
seasoned flour for dredging the oxtails
6 tablespoons vegetables oil
3 cups finely chopped onion
3 large garlic cloves, minced
1 tablespoon grated peeled fresh gingerroot
2/3 cup firmly packed light brown sugar
1 1/2 cups ketchup
3 tablespoons Dijon-style mustard
1 cup cider vinegar
1/4 cup Worcestershire sauce
1/4 cup lemon juice
Tabasco to taste
cayenne to taste
a 28-ounce can Italian tomatoes, drained, reserving the juice, and chopped
1 pound dried small red chili beans, soaked in enough cold water to cover them by 2 inches overnight or quick-soaked (procedure follows) and drained
chopped scallion greens for garnish

Steps:

WINE-BRAISED OXTAIL

Don't be scared off by oxtail just because you may never have cooked it before. It's as meaty and rich as short ribs, and just as straightforward to prepare. In this hearty braise, the meat is simmered in wine with carrots and celeriac. Feel free to substitute other vegetables for those roots. For example: mushrooms, celery stalks, turnips, rutabaga, winter squash chunks, and sweet potatoes would all be happy additions to the pot. Or leave the vegetables out and serve the whole thing over mashed potatoes, egg noodles or polenta. Like all braises, it can be made at least four days ahead, and gets better as it sits.

2 1/2 teaspoons coarse kosher salt, more as needed
2 teaspoons black pepper
1/2 teaspoon ground allspice
5 pounds beef oxtails, patted dry
2 tablespoons extra-virgin olive oil
4 shallots, peeled, trimmed and sliced lengthwise 1/4-inch-thick
4 large carrots, peeled and cut into 3-inch lengths
2 small or 1 large celeriac, peeled and cut into 2-inch chunks
1 tablespoon tomato paste
6 large garlic cloves, finely chopped
1 bottle (750 milliliters) dry red wine
1 cup chicken stock
5 parsley sprigs, plus 1/4 cup chopped parsley leaves
2 rosemary branches
2 bay leaves
Grated zest of 1 lemon
Torn celery leaves, for garnish (optional)

Steps:

  • In a large bowl, combine salt, pepper and allspice. Add oxtail to bowl and rub the mixture all over the meat. Cover with plastic wrap and refrigerate at least 2 hours or overnight.
  • Heat an 8-quart Dutch oven, or a heavy soup pot with a lid, over medium-high heat. Add oil and warm through. Add as many oxtail pieces as you can fit in a single layer without overcrowding the pot. Sear, turning occasionally, until the meat is uniformly golden brown all over, including the sides. Transfer meat to a plate; repeat until you've browned all the oxtail.
  • Add shallot to the pan drippings and cook over medium heat until lightly caramelized, about 10 minutes. Add carrot and celery root and cook 5 minutes. Stir in tomato paste and two-thirds of the garlic (save the rest for garnish) and cook 1 minute.
  • Heat oven to 325 degrees. Pour wine and stock into pot. Bundle parsley sprigs, rosemary branches and bay leaves with kitchen twine and drop into pot. Bring mixture to a simmer and cook over medium heat until liquid has reduced by half, about 15 minutes.
  • Return oxtail to pot and bring to a simmer. Cover pot and transfer to oven. Cook, turning oxtails every 30 minutes, until meat is fork tender, 3 to 3 1/2 hours.
  • Transfer oxtails to a plate. Spoon off fat from surface of pan juices and discard (there will be a lot of it). Toss oxtails with remaining pan gravy. Taste and adjust seasonings if necessary. In a small bowl, toss together chopped parsley, garlic, lemon zest and a pinch of salt. Scatter mixture over oxtails and garnish with the celery leaves, if using, before serving.

This was the Winning Recipe for 1997 in the San Francisco Chronicle, from Janet Fletcher. Oxtails aren't on everyone's menu, but these are wonderful; braised to fork-tenderness and served atop a bed of succulent white beans. The salsa verde is the crowning touch.

3/4 lb large dried white bean (such as cannellini, Emergo or gigante)
6 cups water
1 onion, peeled and halved
1 bay leaf
salt & freshly ground black pepper
3 tablespoons extra virgin olive oil
2 garlic cloves, minced
3/4 cup chopped canned tomato
1 tablespoon olive oil
3 1/2 lbs oxtails, cut into 1-inch lengths (see Note)
salt & freshly ground black pepper
3/4 cup water
12 sprigs fresh thyme
1/2 cup minced parsley
1/2 cup extra virgin olive oil
6 anchovy fillets, minced
3 tablespoons capers, chopped
3 tablespoons fine breadcrumbs
1 large garlic clove, minced
1 1/2 tablespoons red wine vinegar
salt

Steps:

  • To prepare the beans: Soak the beans overnight in water to cover by 1 inch. Drain and place in a large pot. Add the water, onion and bay leaf. Bring to a simmer, skimming any foam that collects on the surface; partially cover and adjust heat to maintain a slow simmer. Cook until the beans are tender, 1 hour or more (cooking time will depend on the age of the beans). Season with salt and pepper and let cool in the cooking liquid. Drain when cool, reserving the liquid. Discard the bay leaf and onion.
  • Heat the olive oil in a large skillet over moderate heat. Add the garlic and saute for 1 minute to release its fragrance. Add the tomatoes and cook for 3 minutes to soften slightly. Add the beans and enough of the reserved cooking liquid to make them brothy. Cover and simmer gently for about 15 minutes to blend the flavors. Taste and adjust seasoning.
  • To prepare the oxtails: Preheat the oven to 325°. Heat the olive oil in a large skillet over high heat. Add the oxtails (in batches if necessary), season well with salt and pepper, reduce heat to medium and brown well, then turn and brown the second side. Transfer the oxtails to a baking dish just large enough to hold them in a single layer.
  • Pour off any fat in the skillet. Return the skillet to high heat, add the water and deglaze, scraping the bottom of the pan with a wooden spoon to dislodge and dissolve any flavorful bits. Pour over the oxtails, scatter thyme sprigs in the dish, cover and bake until tender, 2 1/4-2 1/2 hours.
  • To prepare the salsa verde: Combine the parsley, oil, anchovies, capers, breadcrumbs, garlic and vinegar. Season with salt.
  • To serve: Divide the oxtails among warmed serving plates, leaving the fat behind in the baking dish. Put a generous spoonful of salsa verde on top of the oxtails. Spoon the beans around the meat.
  • Note: Because many butcher shops don't regularly stock oxtails, call a day or two ahead to guarantee availability.

Don't let the sound of "ox tails" turn you off. This dish will surpise you. Ox tails have a lot of flavor and surprisingly a lot of meat.I came up with this recipe on my own, so my measurement are not exact( I kinda just add a little of this and a little of that). Feel free to alter this to your own taste. THis is one of my families favorites. Its kinda like pot roast except it has more flavor. This is good served on a bed of rice or along side of some mashed potatoes that has the gravy on top of it.

2 lbs oxtails
1 (12 ounce) can beer
1 onion, chopped
1 -2 carrot, chopped
1 -2 stalk celery, chopped
salt and pepper (to taste)
1 -2 garlic clove, minced
1 bouillon cube
3 tablespoons oil
2 tablespoons cornstarch
water

Steps:

  • Season ox tails with salt, pepper and garlic powder.
  • Heat oil in bottom of large pot.
  • Brown tails on all sides.
  • Remove tails and add chopped vegatables to pot and saute until tender.
  • Add the tails back into pot then pour beer over mixture, deglazing all the brown bits off the bottom of pan.
  • Drop a bullion cube inches.
  • Cover and simmer for about 2 hours or until tails are tender.
  • If desired, thicken juices with cornstarch and water mixture.
