ONE-PAN BALSAMIC CHICKEN & VEGGIES RECIPE BY TASTY
Here's what you need: italian salad dressing, balsamic vinegar, honey, red pepper flakes, chicken breast, olive oil, salt, pepper, fresh asparagus, carrot, grape tomatoes

Steps:
- In a mixing bowl, mix salad dressing, balsamic vinegar, honey and red pepper flakes, set aside.
- Season chicken with salt and pepper.
- Cook chicken breasts on one side for 10 minutes, then turn. Add half of the dressing mixture, and cook for another 10 minutes. Chicken juices should run clear. Set chicken aside.
- Add asparagus, carrots, and tomatoes to the same skillet, season with salt and pepper, stir frequently until the veggies are tender, about 4 minutes. Plate veggies and chicken.
- Add remaining dressing mixture to skillet and reduce for about a minute, until the sauce is thickened. Dress the chicken and veggies with the sauce.

BALSAMIC CHICKEN {EASY MARINADE}
Robustly flavored Balsamic Chicken! Chicken is soaked in a flavorful garlic and herb + balsamic vinegar marinade then grilled to browned perfection.

Steps:
- Place chicken in a gallon size resealable bag (or you can use a bowl).
- In a mixing bowl whisk together balsamic vinegar, olive oil, garlic, rosemary, thyme, dijon mustard, salt, and pepper.
- Pour marinade over chicken in bag (or bowl). Seal bag while pressing out excess air.
- Rub marinade over chicken (I also like to twist and tie top of bag so marinade fully covers the chicken).
- Let marinade in fridge for 2 to 8 hours for breasts and 2 to 24 hours for thighs.
- Heat over medium-high heat to 400 degrees. Partway through heating don't forget to clean and oil grill grates (with a little vegetable oil or olive oil using tongs and a balled up paper towel).
- Remove chicken from marinade while shaking excess marinade off back into bag. Transfer to grill and cook covered about 5 to 8 minutes per side.
- Cook time varies based on thickness, check internal temperature of chicken in thickest portion to 165 degrees for doneness.
- Garnish with parsley if desired. Serve warm.

TASTY BALSAMIC CHICKEN WITH A TWIST
This is a take on balsamic chicken with a twist thrown in. The addition of crackers (Savoritz original style, or Ritz, or any similar brand is fine) soaks up the sauce and gives it an added texture and flavor punch. I've tried to give this measurements but to be honest I never measure, I just do what 'feels right'. My husband has suggested we increase the sauce amount to serve over rice so that's an option too if you feel experimental. Serve with cilantro lime rice or coleslaw.

Steps:
- With a heated iron skillet (low heat) add your bacon grease (or olive oil).
- Add minced garlic, saute for 20 seconds.
- Add diced chicken and mix it around to coat it in the garlic and oil.
- Add salt and half of the pepper, then let the chicken cook about halfway, stirring attentively. This can take 3-5 minutes.
- Add lemon, white wine and Worcestershire sauce.
- When chicken is about 2/3rds done, add balsamic vinegar and pepper. Increase heat to medium or medium-low and continue stirring around pan.
- After 2-3 minutes, add crushed crackers. Stir to coat all of the chicken pieces thoroughly, and continue to cook for another 30 seconds or a minute until sauce is absorbed by crackers.
- Rest it for 1 minute before serving.

BAKED CHICKEN WITH A TWIST
Another comfort food from my childhood. NOTE: Mom always used bone in chicken legs with skin on, that's all they had back in the 70's! Now I use boneless/skinless chicken breasts and thighs. Since bones add weight, 3 pounds of boneless chicken should be about right.

Steps:
- Arrange chicken pieces in 9x13 pan, skin side up.
- Cut bacon in 2" lengths and lay over chicken.
- Bake uncovered at 350 for 45 minutes.
- Carefully, pour off some grease.
- Blend soups and sour cream; pour over chicken and continue to bake for another 30 minutes.
- Transfer chicken to serving dish.
- Mix cooked pasta with sauce mixture from baking pan and serve.

- Whisk the balsamic sauce ingredients together in a medium bowl. Remove 2 tablespoons and add to a bowl or freezer bag with the chopped chicken; set aside to marinate while you chop the veggies and steam the sweet potatoes (up to 30 minutes at room temp or 4 hours in the fridge). Reserve remaining sauce for later.
- Add chopped sweet potatoes to a microwave safe bowl with a lid. Add water it reaches ¼-inch up the sides. Cover and microwave for 5-7 minutes or until fork tender; drain and set aside.
- Melt butter in olive oil in a large skillet over medium-high heat. Sauté chicken for 1 minute then add shallot and cook just until the outside of the chicken is no longer pink. Add the asparagus, and tomatoes and cook an additional 1-2 minutes or until asparagus are crisp-tender. Add garlic and sauté 30 seconds.
- Add the sweet potatoes back to the skillet along with the remaining balsamic sauce (that didn’t touch the raw chicken). Cook, stirring constantly, until chicken is cooked through and the sauce is thickened, about 1 minute. Taste and add brown sugar for sweeter, balsamic or lemon juice for tangier. Dig in!
