LIME BROILED CATFISH

Steps:
- Melt butter in a small saucepan. Stir in the lime juice, salt if desired, pepper and garlic powder. Remove from the heat and set aside. , Place fillets in a shallow baking pan. Brush each fillet generously with lime-butter sauce. Broil for 5-8 minutes or until fish flakes easily with a fork. , Remove to a warm serving dish; spoon pan juices over each fillet. Garnish with lime slices and parsley if desired.

BROILED CATFISH

Steps:
- Mix the oil, parsley, lemon juice, garlic, wine, and pepper in a nonmetallic bowl.
- Put the catfish into the marinade and refrigerate for at least two hours.
- Preheat the broiler and brush the hot rack with the marinade.
- Broil close to the heat for approximately 5 minutes until the fish flakes with a fork.
BAKED CATFISH
Steps:
- Season fish with salt and pepper. Place fish in oval casserole dish. Melt 4 ounces butter in small sauce pan. Add wine and remaining ingredients, except the paprika. Simmer about 2 minutes. Remove from heat and spoon over fish. Now sprinkle paprika over fish. Bake fish in 375 degree oven for 10 to 12 minutes, or until the fish is done.
BARBECUED CATFISH
Steps:
- Preheat the grill.
- Coat each catfish fillet with the dry rub. Dip the fish into the oil and place the fillets on a hot grill to establish grill marks. After establishing grill marks and the fillets release from the grill, place the catfish into a smoker. Smoke for 2 minutes using the hickory wood chips. Add water to the chips and steam the fish for another 2 minutes. Remove the catfish from the smoker and serve immediately with homemade Tartar Sauce.
- Mix all ingredients together in a small bowl. Season with salt, to taste. Chill, covered, in the refrigerator until ready to serve.
PAT'S SMOKED CATFISH

- Combine the buttermilk and hot sauce in a 13 by 9-inch casserole dish. Add catfish fillets and cover with plastic wrap and refrigerate for 1 hour. After 1 hour, remove the catfish from the refrigerator and pat dry with paper towels.
- Set up your grill for indirect heat at a medium-low temperature, about 275 degrees F.
- Mix together the oregano, lemon peel and salt, pepper, in a small bowl. Lightly coat the fish with olive oil and sprinkle the seasoning evenly over the catfish fillets.
- Put the catfish on the grill away from the hot coals. Smoke the catfish until it is fully cooked through and golden brown, about for 45 minutes. Remove the fish from the grill to a serving platter and serve with the Orange Dill Cream Sauce.
- Add all the ingredients to a serving bowl and serve with the smoked catfish.

- Cook pasta according to package directions.
- While it is cooking, combine butter, minced cilantro, lime zest and juice, salt and pepper to taste in a small bowl.
- Heat broiler to high; place catfish in roasting pan; brush half of the butter-cilantro mixture over catfish.
- Broil until fish is browned, flaky and cooked through, about 6 minutes; set aside and keep warm.

BROILED BASA FISH
I was going to make a WW recipe using Dover Sole, but the store didn't have it. They suggested Basa fish. I ended up only using the spices from the recipe and broiling the fish instead of baking it. It turned out really good. I don't know the points value for Basa fish, but I'll assume it's roughly the same as Dover Sole. So for a 5 ounce serving, this would be about 4 PointsPlus. I used Smart Balance Omega blend for my butter.

- Prepare at least several hours before broiling fish (can be made ahead and frozen).
- Make dill butter by combining first four ingredients and rolling up in plastic wrap or foil.
- When ready to cook, preheat broiler and spray broiler pan with vegetable oil, or coat with butter.
- Rinse fish and dry thoroughly.
- Season with salt and pepper.
- Place on broiler pan.
- Sprinkle fish with lemon juice.
- Place several generous pats of dill butter on fish.
- Broil on both sides several minutes until fish is opaque and flakes easily with a fork.
- Don't overcook.
- (Total time about 10 minutes per inch of thickness).
