3 tablespoons low-sodium soy sauce
2 whole garlic cloves (minced)
6 pieces boneless skinless chicken thighs
2 tablespoons Extra Virgin olive oil
1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare charcoal grill. While coals are heating, gather your ingredients so that you have everything on the counter or table.
  • Using a sharp Chef's knife and cutting board, mince the garlic.
  • In a small bowl, whisk together the honey, low-sodium soy sauce, and minced garlic. Set aside.
  • Brush chicken thighs with extra virgin olive oil, then sprinkle with kosher salt and freshly ground black pepper.
  • When grill is ready, cook chicken for 10-15 minutes, covered, until juice runs clear (175-180 degrees), turning twice and brushing with the honey mixture during the last 7-8 minutes of cooking time.
  • Remove from grill and cover with tinfoil to keep warm until ready to serve. Serves 4-6.

If you like your chicken saltier or spicy, add some seasoned salt before starting the grilling process. I find the soy sauce adds enough salt for me. Prep time does not include the time needed for your grill to get hot.

We do have a Chinese restaurant in our small town, but it is a buffet and I am so spoiled by my friend Pan who owns two Chinese restaurants in Tuscaloosa, AL. For the most part we just fix Chinese, Italian, German, Thai whatever here at the house and save dinner out for very special occasions.

12 boneless, skinless chicken thighs
3 Tbsp rice wine vinegar
2 Tbsp canola oil
1 1/2 Tbsp honey
1 Tbsp hoisin sauce
1 Tbsp orange juice, thawed concentrate
1 tsp chili paste
1/2 tsp dry mustard, i prefer coleman's
3 green onions, sliced

Steps:

  • 1. Mix all ingredients, except chicken, in a small dish; whisk to combine. Transfer to a large plastic food bag and add chicken. Seal bag tightly and turn it over several times so the chicken is well coated. Refrigerate at least 4 hours or overnight.
  • 2. Prepare charcoal grill or preheat broiler.
  • 3. Remove chicken from marinade and pat dry. Grill or broil chicken 6 inches from heat source, brushing several times with remaining marinade, until cooked. 20 to 30 minutes. Serve hot or at room temperature.
  • 4. The original recipe was for a grilled or broiled chicken. Not wanting to tend to either one night I decided to bake the chicken instead. I think it is my preferred way and so easy.
  • 5. Bake at 350-degrees for about 1-1 1/2 hours, until crispy brown. Serve with white rice or fried rice.

  • Bake 30 minutes, basting one more time after 10 minutes; an instant-read thermometer inserted into a chicken thigh should read 165 degrees F (75 degrees C). Let stand for 5 or 10 minutes; meanwhile, bring remaining marinade back to a boil for 1 or 2 minutes, and serve chicken with marinade. Sprinkle with green onions.

2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cumin

¼ teaspoon ground cayenne pepper ( (depending on how hot you like it - I usually do 1/2 teaspoon))
8 boneless, skinless chicken breasts
2 teaspoons olive oil
½ cup honey
2 Tablespoons apple cider vinegar

Steps:

  • In a small bowl, mix together all rub ingredients (garlic powder, chili powder, salt, pepper, cumin, paprika, and cayenne).
  • Place chicken on a large platter or pan and drizzle with oil, making sure each piece is evenly coated. Sprinkle rub on top and rub it all over each piece of chicken until chicken is completely coated.
  • In a grill pre-heated to medium-high heat or an oven preheated to lo broil (about 400 degrees), cook chicken for 4-5 minutes per side or until chicken is fully cooked.
  • In a small bowl, mix together honey and cider vinegar (to help make the honey easier to stir, warm it in the microwave for about 10-15 seconds). Set aside 1/2 of the glaze.

4 slices fresh ginger, quarter-size, 1/4 inch thick, minced
1 (14 ounce) can coconut milk
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
2 pieces lemongrass (2-inch pieces )
8 skinless chicken thighs (I use boneless,skinless)
1/2 cup flaked coconut
1 bunch fresh cilantro, chopped
4 scallions, green parts included, chopped
1 jalapeno, seeds included
2 tablespoons packed brown sugar
1/2 teaspoon rice vinegar or 1/2 teaspoon cider vinegar
1/2 teaspoon salt
1 cup honey
1/3 cup dry roasted salted peanut, finely chopped

Steps:

  • Combine the ginger, coconut milk, salt and pepper in a large zip-lock bag. Add lemon grass. Place the chicken thighs in the mixture and refrigerate overnight.
  • Make the Honey-Chili Glaze: In a food processor, chop together the jalapeno and brown sugar. Scrape into a small saucepan. Add the venegar, salt, and honey and bring to a boil. Simmer over very low heat for about 2 minutes. Stir in the peanuts.
  • Prepare a charcoal grill to medium heat or preheat the broiler.
  • Drain the chicken and cook about 8-10 minutes on each side, depending on the size of the thighs and the heat. Grill until chicken is cooked through (careful not to over cook.).
  • After chicken is done cooking, place on a platter and pout the Honey-Chili Glaze over the hot chicken. Coat all pieces well, then sprinkle with coconut, cilatro and the scallions. This can be served hot or cold! Enjoy.
