This is probably the most famous lentil dish coming out of India-yellow lentils tempered with spices and the usual holy trinity of garlic, ginger and chile. It has always been a favorite of mine and it would grace our family dinner table at least once a week when I was growing up. There are lots of different recipes for flavoring the oil (tadka), so play around with your spice pantry and see what you come up with. If you don't have half of these spices, then don't worry; just add a tablespoon of your favorite spice paste and it will taste just as delicious.

Number Of Ingredients 18

1 1/2 cups dried toor dhal (yellow lentils/yellow split peas), rinsed in several changes of water
1 teaspoon ground turmeric
2 black cardamom pods (optional)
3 tablespoons vegetable oil
2 cinnamon sticks
4 green cardamom pods
6 cloves
2 teaspoons black mustard seeds
1 teaspoon cumin seeds
2 scallions, finely sliced
2-3 chiles, any color, seeded if you don't like it fiery, some chopped and the rest left whole
2 fat cloves garlic, finely chopped
1 tablespoon peeled and finely chopped fresh ginger
6 cherry tomatoes, cut in half
Good pinch of sea salt, or to taste
1 teaspoon sugar, or to taste
Juice of 1/2 lemon, or to taste
Lots of chopped cilantro, to garnish

Steps:

  • Gently boil the lentils in a large saucepan of cold water (around 4 cups will do) and stir in the turmeric and black cardamom pods (if using)-this will add a subtle smoky flavor. Allow to cook for around 45 minutes, or until the lentils have softened and started to break down. Skim off any foam that sits on the top and give the lentils a stir every now and again in case they begin to stick on the bottom. If they boil dry, add more water.
  • Once the lentils have softened, turn down the heat and make the tadka. Gently heat the oil in a skillet and add the cinnamon sticks, green cardamom pods and cloves. When the cardamoms have turned white and the heads of the cloves have swollen, you are ready to stir in the mustard and cumin seeds. When they are sizzling, stir in the scallions, chiles, garlic and ginger.
  • After a minute, stir through the tomatoes and turn off the heat. Pour the tadka into the dhal so that it floats on top. This is the traditional way to serve it, with the scented oil sitting on top, but I prefer to stir it through. Season with salt, sugar and lemon juice. Finally, stir through plenty of chopped cilantro and serve with some rice or fresh bread for the ultimate comfort food.

9 ounces chana dal (dried yellow split peas), rinsed until the water runs clear
1 3/4 pints water
3 tablespoons vegetable oil
1 tablespoon cumin seeds
1 small onion, chopped
3 to 4 whole green chiles, pricked with a knife
1 (3/4-inch) piece fresh ginger, peeled and cut into thin strips
3 cloves garlic, peeled and left whole
3 tomatoes, chopped
3/4 teaspoon ground turmeric
3/4 teaspoon garam masala
1 1/2 teaspoon ground coriander
Kosher salt and freshly ground black pepper
Handful chopped fresh cilantro leaves

Steps:

  • Put the lentils and water into a pan, stir well and bring to the boil. Skim off any froth that forms on the surface of the water with a spoon. Cover the pan with a lid and reduce the heat to a simmer. Simmer, stirring regularly, for 35 to 40 minutes, or until the lentils are just tender, adding more water as necessary.
  • When the lentils have cooked through, remove the pan from the heat, and use a whisk to break down the lentils. Set the mixture aside to thicken and cool.
  • Meanwhile, heat the oil in a pan over a medium heat. Add the cumin seeds, and fry for 20 to 30 seconds, or until fragrant. Add the onion, chiles, and ginger, and fry for 4 to 5 minutes, or until golden brown.
  • Blend the garlic and tomatoes to a puree in a food processor. Add the puree to the pan, and stir well to combine. Add the turmeric, garam masala, coriander, and 3 1/2 ounces of water to the pan, and stir well to combine. Season the mixture with salt, to taste, and simmer over a medium heat for 15 to 20 minutes, or until the oil from the sauce has risen to the surface of the sauce.
  • Add the cooked lentils to the sauce, and stir well, adding more water as necessary, to loosen the mixture. Bring the mixture to a boil, and season, to taste, with salt, and freshly ground black pepper. Stir in the chopped cilantro just before serving.

Dhall is served at almost every meal in India. It is a staple food, there are many versions of this dish. Remember it's not an authentic meal if you serve curry without t he dhall. Here is one of my favourites, very easy to cook.

1 lb lentils
2 pints water
1 teaspoon salt
1 teaspoon turmeric
1 medium onion, sliced
3 garlic cloves, chopped
2 dried red chilies
1/2 teaspoon cumin seed
2 tablespoons oil
1 garlic clove, sliced

Steps:

  • Wash lentils till the water runs clear.
  • Drain the lentils.
  • Place lentils in pan with the water, salt, turmeric, onion, garlic and chillis.
  • Cook till the lentils are soft and sloppy.
  • Heat the oil in a separate pan, fry the cumin seeds till they start to pop, add the garlic and cook 30 seconds.
  • Serve the lentils with the fried garlic and cumin seeds poured over them.

Less than 30 mins to cook this dish. The dhal is spiced with a tarka. Very easy to cook,this has a good flavour and goes well with a beef or lamb curry as a second dish.

8 ounces skinless chicken breasts, and cubed
1 ounce split peas, pre-soaked
2 ounces red lentils
1 tablespoon oil
1 large onion, chopped
1 teaspoon garlic, pulp
1 teaspoon ginger, pulp
1/2 teaspoon turmeric
1 1/2 teaspoons chili powder
1 teaspoon garam masala
1/2 teaspoon ground coriander
1 1/2 teaspoons salt
3 tablespoons fresh coriander leaves, chopped
1 green chili, seeded and chopped
2 tablespoons lemon juice
1/2 pint water
2 tomatoes, peeled and thickly sliced
1 teaspoon oil
1/2 teaspoon cumin seed
2 garlic cloves, chopped
2 dried red chilies, chopped
4 curry leaves

Steps:

  • Mix together the split peas and the lentils, cover with water and cook till soft and mushy.
  • In the meantime heat the oil in a wok and fry the onions till golden. Stir in the garlic, ginger , turmeric, chilli powder, garam masala, ground coriander and salt.
  • Stir well and add the chicken and fry for 6 mins.Add 11/2 tbsp of the fresh coriander leaves, green chilli, lemon juice and the water cook for 5 minutes.
  • Mix in the lentils (dhal),tomatoes and the remaining coriander leaves. Turn off the heat.
  • Heat the oil in a small pan and add the cumin seeds, when they start to pop add the garlic, red chillies, and the curry leaves, cook for 1 minute Pour over the the chicken and lentils and serve.

  • Add lentils to a pot or pressure cooker and rinse them very well with lots of water. Rub the lentils well with your hand while you rinse. Drain completely.
  • Place a tall steel cup in the center of the pot. With a tong hold a wood coal over direct fire like a candle or lighter until a portion of it becomes red and hot. This will take about 2 minutes.
  • Transfer the hot cooked lentils to a serving bowl. Pour 2 tbsps ghee to a small pan & heat it on a medium heat.
